Sage at ARIA Resort & Casino will unite with A. Hardy U.S.A. for a memorable dinner Thursday, Oct. 9 at 6 p.m. The event will enlighten taste buds with a five-course menu created by Executive Chef Richard Camarota. Each course will begin with a cognac tasting, followed by a champagne pairing from the prestigious Hardy house. The evening’s hosts, ARIA Mixologist Craig Schoettler and A. Hardy U.S.A. CEO Ms. Benedicte Hardy, will guide guests through the dinner, explaining the history of each cognac and the creative thinking behind each champagne pairing.

Pre-dinner cognac selections will include Rosebud Family Reserve, a blend of small lots of cognac collected after World War I by company founder Armand Hardy; Noces D’Or, an award-winning blend of 40 different Grande Champagne cognacs and aged a minimum of 50 years; and Noces De Perle, a blend of 10 different Grande Champagne cognacs and aged a minimum of 30 years in limousin oak, a process that allows for the transfer of certain aromas to the spirit.

The dinner menu will take guests on an epicurean journey and feature the following culinary selections and champagne pairings:

  • Pork Terrine with poached fig, lemon cucumber pickles and frisee; paired with Drappier “Nature” Brut NV
  • Fois Gras Custard “Brulee” with pear jam, toasted cocoa nibs and salted brioche; paired with Drappier “Quattuor” Brut NV
  • Chestnut Soup ‘Masison Rouge’ with sweet potato, truffle and burnt marshmallow; paired with Drappier “Nature” Brut Rose NV
  • Kobe Skirt Steak ‘Diane’ with potato boulangere, spinach and wild mushroom; paired with Drappier “Grande Sendree” Brut 2005
  • Dark Chocolate Panna Cotta with apples, candied walnuts and plum ice cream; paired with Drappier Rose NV

    After the meal, guests will be offered two final cognacs: Noces de Diamant, a cognac with apricot, almond, prune and leather notes and Perfection, an extremely rare, 150-year-old cognac with hints of chocolate and coffee.
