Pancho’s Mexican Restaurant, located in Downtown Summerlin, will celebrate Easter with a festive champagne brunch from 10 a.m. to 3 p.m. on Easter Sunday, April 21.

 

Brunch selections include the Huevos Divorciados, two eggs cooked over-medium, served with a beef enchilada covered with a chunky Poblano sauce and sprinkled with Cotija cheese, priced at $17.95; Huevos Rancheros, a soft corn tortilla topped with two fried eggs, a creamy sauce made with Monterey Jack and cheddar cheese, and garnished with melted cheeses, sour cream and sliced avocado, served with Mexican rice and beans, priced at $18.95; and Omleta Cancun, an omelet filled with sautéed shrimp, topped with relleno sauce, melted cheeses, guacamole and sour cream, and served with Pancho’s special green rice and black beans, priced at $20.95.
