Renowned winery to present an educational and interactive dining experience in partnership with celebrity chef Michael Mina at Bardot Brasserie
ARIA Resort & Casino will bring one of the world’s finest wine producers to the resort for one-night only as Château de Beaucastel hosts a wine pairing dinner in collaboration with celebrity chef Michael Mina at his revered French restaurant Bardot Brasserie on Wednesday, April 5 at 7 p.m. The event will be guided by Alan Gary and Charles Butler of wine importer Vineyard Brands, who will walk guests through the tasting notes of each wine as Chef Mina complements the interactive experience with an exquisite seasonal menu.

Chef Mina said, “Uniting the aromas and quality of Château de Beaucastel wines with an exclusive Bardot Brasserie menu that highlights the very best meats, seafood and fruits of the season will deliver a fun culinary journey that showcases world-class offerings in one setting, all prepared with care and creativity for ARIA’s esteemed guests.”
The dinner menu will include:
- Amuse: Crab and Caviar Vichyssoise
- Wine Pairing: Champagne Fleur de Miraval ER2
- First Course: Poached Halibut with Saffron Beurre Blanc and Peas Fricassee
- Wine Pairing: Château Miraval Côtes de Provence Rosé 2021
- Second Course: Honey Glazed Duck Breast with Truffle Carrot, Morels and Braised Cabbage
- Wine Pairings: Château de Beaucastel 2004 and Château de Beaucastel 2006
- Third Course: Lavender Lamb Chop with Charred Eggplant, White Asparagus and Mint “Chutney”
- Wine Pairings: Château de Beaucastel 2007 and Château de Beaucastel 2009
- Dessert: Rhubarb Tart with Early Strawberry and Pistachio Streusel
- Wine Pairing: Château Climens 1er Cru Barsac 2010
