 SUSHI ROKU ROLLS OUT A NEW 2.0 MENU IN LAS VEGAS
Redesigned Menu Features Signature-Style Sushi and More
 
Las Vegas diners who are looking for a fresh, inventive Japanese dining experience should look no further than Sushi Roku Las Vegas inside The Forum Shops at Caesars. Showcasing novel and innovative signature dishes, guests will find new additions to the lunch, dinner, and happy hour menus, including Salmon Sashimi Carpaccio with Black Truffle (shaved tableside); Kobe Meatballs in Lettuce Cups with mustard soy truffle sauce; Albacore Tacos “Roku Style”; and the Ume (six-piece) and Matsu (eight-piece) Roku Signature-Style Sushi Creations.
 
Two of the most celebrated new dishes on the re-styled menu are the Ume and Matsu Signature-Style Sushi plates, featuring six or eight individual pieces of nigiri-style sushi, crafted with accoutrements that complement each fish’s flavor profile. The Ume Signature Style Sushi features Japanese Sea Bream, Scottish Salmon, Japanese Yellowtail, Seared Albacore, Bluefin Tuna, and King Crab. The Matsu Plate includes the Ume selections and the addition of Seared Bluefin Tuna and Santa Barbara Sea Urchin.
 
Sushi Roku’s new menu continues to highlight innovative, globally-inspired Japanese cuisine, while expanding its offerings to include a new selection of dishes made with the finest fish from around the world and other exceptional ingredients. Executive Sushi Chef Hiroshi Shima has spent four decades perfecting his craft, and oversees the teams of experienced sushi chefs. His formal training reinforces traditional technique, but he frequently applies flavors from a variety of influences, incorporating nontraditional ingredients such as Jalapeños from Latin America, French Black Truffles, and Italian cheeses into his offerings.

Salary Man Cocktail Recipe
 
1 oz. Dewar’s 12
1 oz. Saki
3/4 oz. Lemon juice
3/4 oz. simple syrup
5 raspberries
3 cilantro sprigs
 
In a mixing glass add all spirits and mixers. Shake vigorously for 6 seconds. Strain into a double old fashioned glass over fresh ice. Then, into a mixing glass add raspberries, cilantro & 1/4 oz. simple       syrup. With a muddler quickly grind down berries then with a bar spoon pour them over the cocktail.

P.J. Clarke’s 
After 125 years, New York’s most spirited bar and eatery, P.J. Clarke’s opens its first West Coast location at The Forum Shops at Caesars.  A landmark watering hole in the Big Apple, the eatery and saloon has been known for decades for its ambience and the high quality of the food served simply. Featuring timeless American fare, classic burgers, and bourbon, expect a raw bar with shrimp, lobster, oysters and Long Island clams on the half shell, chicken pot pie, fish and chips, baked macaroni and cheese with peas and bacon and Mile High Shrimp sandwiches.  And of course, Meyer beef from Montana’s Blackfoot River Valley, P.J. Clarke’s only supplier for its steaks and famous hamburgers.
