Las Vegas culinary institution reopening October 28

Bellagio announces Chef Dameon Evers will spearhead the revival of its legendary lakeside destination Le Cirque reopening October 28.

“Le Cirque is an icon known around the world and I’m honored to be entrusted with its future,” said Evers. “First and foremost, nothing can be sacrificed for perfection as I plan to create a flawless dining experience with contemporary inspirations that celebrate the restaurant’s legacy.”

Evers brings a wealth of experience to Le Cirque having helped open some of California’s most acclaimed restaurants, including Thomas Keller’s Bouchon Beverly Hills, Gordon Ramsay’s eponymous establishment in West Hollywood, and Michael Mina’s Bourbon Steak. Recently, he earned a Michelin star as executive chef at Angler Restaurant and was celebrated by Los Angeles Times Restaurant Critic Bill Addison who noted, “Under the daily direction of executive chef Dameon Evers, the kitchen yields success after success.”

For more than 20 years, Le Cirque’s unparalleled French fine dining experience overlooking the Fountains of Bellagio resulted in accolades such as a perennial AAA Five Diamond Award rating, two Michelin stars, and Forbes Travel Guide Five-Star rating.

About Chef Dameon Evers
A native of Los Angeles, Evers obtained a culinary arts degree from Los Angeles Trade-Technical College, determined to one day work for his chef heroes. Evers received his first break in the industry as Chef De Partie for the opening of Gordon Ramsay’s restaurant in West Hollywood that would go on to earn a Michelin Star. Evers continued to be part of landmark openings across Southern California including Michael Mina 14, Maude Restaurant and Bourbon Steak LA.

His ultimate dream came true when presented the opportunity to work under legendary chef Thomas Keller as a senior sous chef at Bouchon Beverly Hills where he spent eight years honing the craft behind kitchen operations.

In 2018, Saison Dining Group hired Evers as executive chef to lead the opening of Angler Restaurant in Los Angeles and San Francisco. Under his stewardship, the luxury sea life eatery earned a Michelin Star and was a James Beard Award nominee for ‘Best New Restaurant.’

Carrying the lessons and experience instilled in him from some of the world’s greatest chefs, Evers envisions a new generation for Le Cirque that blends the restaurant’s time-honored history with his experience and passion for cultivating a modern Michelin-starred dining experience.
