New dishes created by the Chef of the Century now available

L’Atelier de Joël Robuchon at MGM Grand Hotel & Casino introduces new spring menu items created by Chef of the Century, Joël Robuchon. Each selection, which span from appetizers to desserts, captures the essence of the season known for bountiful, crisp produce and juicy ripe fruit. The finest ingredients, combined with Robuchon’s unparalleled talent for enhancing natural elements and combining flavors into exquisitely well-balanced dishes, make every bite memorable. New spring menu selections are now available and include:

A La Carte Menu Selections

•Appetizer options: Le Saumon, a light and vibrant cold appetizer, made with Alaskan salmon carpaccio topped with fennel-mango essence, citrus-lime vinaigrette and a sprinkling of Espelette pepper, a rare variety of chili pepper imported from France and the warm and fragrant La Lettue, made with spring vegetable bouillon that packs a delightfully surprising crunch with al dente cauliflower and crispy bacon bites.
•Entrée options: La Daurade, a fresh red snapper cooked on the skin and served atop a grilled onion with a side of sushi rice in a mild curry-coriander sauce and Le Canard, seared duck glazed with spices on a bed of sweet and sour daikons and young leeks served with a side of Pommes Puree, Robuchon’s famous melt-in-your-mouth mashed potatoes.
•Dessert: Le Multivitamine, a refreshingly robust treat made from red berry coulis, light caramel mousse and lychee sorbet.
Seasonal Discovery Menu Selections
•The rare spring delicacy, white asparagus, is prominently featured in L’Asperge Blanche and simply prepared in a creamy butter sauce, topped with a delicate slice of all-natural, Parma ham imported from Italy.
Le Foie Gras is a succulent course featuring decadent foie gras and veal-filled ravioli served with a variety of baby root vegetables cooked to perfection.
•The sweet and spicy zest of ginger-pepper coulis enhances the natural flavors of sea bass and clams in the remarkable Le Bar, a light and tasty dish.
La Fraise is a mouthwatering dessert featuring creamy panna cotta topped with a generous helping of juicy red strawberries and served with house-made condensed milk ice cream.
