Silverton Casino Hotel welcomes new Twin Creeks Steakhouse Room Chef Paul Vigil to the family. Vigil has worked his way up the culinary ladder through his different positions across the country. He was most recently the Executive Chef and Partner at The Capital Grill in Las Vegas until February of this year.
Long before making it to such a lofty position, Vigil got into the world of food when he was the Meat Market Manager for Albertson’s from 1985 to 1995. The managerial skills and knowledge of the food industry that he gained in this position undoubtedly assisted him in the positions that lied ahead of him.
After Albertson’s he spent some time at the South Seas Plantation Resort and Thistle Lodge at Casa Ybel Resort in Florida. From there he became the First Cook at The Grille Room at Ritz-Carlton in West Palm Beach. He continued working in Florida through July 2000 where he worked as Executive Sous Chef, Chef de Cuisine and Lead Linesman. Throughout these years he worked under the tutelage of some of the best, such as four-star Chef Mark Militello and Chef Allen Susser. During this time he received his AOS degree from the Culinary Institute of America in New York in 1997.
In July 2000, Vigil gave up the Florida beaches for the bright lights of Las Vegas when he took on the position as Executive Chef for Anasazi of Santa Fe during its opening at the former Aladdin’s Desert Passage. He had a more behind the scenes role with this position in which he composed training manuals for staff orientation along with creating specials and doing the hiring of staff. After a year he took on more responsibility as the Corporate Executive Chef for RoadRunner Group where he worked again in employment training, but now he was responsible for six different restaurants. He also designed the kitchens for two new restaurant openings during this time.
After this he put his focus into the French-American restaurant Rosemary’s at the Rio as the Chef de Cuisine. There he managed and trained a staff of 32 people and ran the kitchen for famed Chef Michael Jordan. Vigil would later come back to the restaurant as Chef de Cuisine in 2007.
Vigil decided to take his many experiences and knowledge to Creative Cooking School in 2005 as Chef Instructor to help budding, young chefs learn the skills needed to make it. He then traveled to the Wynn to give two different restaurants there a taste of what he could do. He worked as the Assistant Chef of Corsa Cucina from 2005-2006 and then Daniel Boulud Brasserie from 2006-2007.
He has also shown to be quite the humanitarian as he has participated in both national and local charity culinary events, such as Las Vegas Restaurant Week, the Jean-Louis Palladin Foundation Dinner and the Share Our Strength/Taste of the Nation Las Vegas just to name a few. He is also a regular participant of the local Harvest Food Bank programs that help feed the hungry.
