Las Vegas’ premier fall beer festival adds new ingredients to the mix

                                                                      

 

Motley Brews’ third annual Downtown Brew Festival (DBF) returns to Clark County Amphitheater on Saturday, Sept. 20 from 6 to 10 p.m. with an all-new food focus featuring beer-inspired culinary creations from prominent Las Vegas chefs, paired with local entertainment in a backyard setting.

 

As the sun sets on Las Vegas’ iconic backdrop, the Downtown Brew Festival will become a friendly backyard celebration beneath the stars and a nonstop evening of live entertainment with performances by A Crowd of Small Adventures, Josh Royse and Daniel Park. This year, Las Vegas’ premier fall festival is expanding on the craft beer and backyard motif as local celebrity chefs add a new ingredient to the festival’s overall atmosphere with elevated culinary menus.

 

“Las Vegas’ craft beer industry has really expanded and we are thrilled to be able to provide an opportunity for the community to immerse itself into the lifestyle,” said Brian Chapin, founder of Motley Brews. “There is more to this whole movement than an abundance of craft brews and this year we are going to showcase how the different beers can redefine the culinary experience.”

 

Chefs from a number of culinary hotspots, including Comme Ça, DW Bistro and Forte will heighten the craft beer experience with dishes created specifically to emphasize the flavors and aromas of the featured brews. Chefs will be serving one-of-kind dishes ranging from Crispy Pig Skins with Chile Lime Sea Salt to Smoked Kumamoto Oysters.

 

Adding to the innovative culinary menu, VIP Pavilion guests will be treated to several courses created by Chef Sonia El-Nawal. The former Food Network “Chopped” finalist serves as executive chef for The Perch, which will open at Downtown Container Park in late September, and The Market, an urban grocery scheduled to open at 611 Fremont Street in October. El-Nawal is a veteran chef with experience in such restaurants as Jean-Georges, JoJo, Nobu in New York City and the Hotel Condesa DF in Mexico City, and brings a wealth of beer knowledge from her time spent living in Brussels.

 

“We’re celebrating Downtown and the strides the city is making, and we couldn’t be more excited to have someone like Chef Sonia, who draws from years of international experience to create an incredible culinary scene at this year’s festival,” remarked Chapin.

 

The grassy surroundings of the amphitheater will be lined with more than 50 stations representing more than 150 unique beers, from local, regional, and international breweries. Both Victory Brewing Company, Southern Pennsylvania’s premiere and nationally-celebrated craft brewery, which will soon be making its Las Vegas debut, and  Stone Brewing Co. will make their first appearance at the festival.

 

Tickets are currently on sale and available for General Admission for $35; Early Entry for $45; and VIP for $75 until Tuesday, Sept. 16. The fundraising event will begin at The Smith Center with a matinee performance of  Tony Award winning musical, Wicked. The matinee will be followed by dinner and live rooftop entertainment at the Downtown Grand Hotel.  Las Vegas’ top chefs, hospitality executives and community leaders will gather above the streets of downtown to support the leaders of tomorrow by building awareness for the scholarship program.  Paired with gourmet dishes prepared by more than 15 local restaurants, the event offers the essence of Vegas’ vibrant entertainment with live performances by Japanese drummers, a live DJ and the band Phoenix.

  • Appetizers: Roasted Duck and Chickory Salad with pickled cranberry and pistachio vinaigrette, or Cinderella Pumpkin Soup served with green curry banana bread and cardamom butter. There is also a supplemental option of Seared Foie Gras with roasted apples and a chestnut waffle paired with a glass of the French brandy, Calvados, available for an extra $25.

The New York-based LUCKYRICE Festival returned to The Cosmopolitan of Las Vegas this past weekend (Oct. 4-6) with a lively and extensive culinary celebration. The three-day festival allowed attendees to revel in the invigorating flavors of various Asian countries. Celebrity guest chefs from across the globe introduced their specialty dishes and interacted with guests at different events throughout the weekend.

The LUCKYRICE Vegas Night Market (Saturday, Oct. 5) transformed Boulevard Pool into an outdoor feast for the second year in a row, inspired by the festive night markets of Asia. Featuring traditional Asian street food and modern variations alike, the event allowed festival-goers to enjoy delicious bites from more than 20 guest chefs including Kristen Kish (Menton, Boston), Brooke Williamson (Hudson House and The Tripel, California), Jet Tila (Kuma Snow Cream, Las Vegas) and Pichet Ong (New York City). Chefs from The Cosmopolitan’s own famed eateries, such as China Poblano, STK, Wicked Spoon, Comme Ça and Holsteins, contributed dishes to the event as well. Resort mixologists Christopher Hopkins and Mariena Mercer were also on hand, creating specialty Bombay Sapphire EAST cocktails with an Asian flare.

Additionally, an Opening Ceremony kicked off the weekend on Friday, Oct. 4 at Boulevard Pool.  Guests enjoyed authentic Chinese entertainment and released floating lotus flowers into the water at the sound of a drum, a wish signifying prosperity. The festival concluded with a Dim Sum, Bloody Mary & Mahjong Brunch (Sunday, Oct.6) at Bamboo Pool hosted by celebrity chef Susur Lee (Top Chef Masters/Lee, Toronto).

This fall, take a trip through the world’s richest flavors as Comme Ça by David Myers at The Cosmopolitan of Las Vegas adds a fresh style to the art of brasserie dining with the launch of its newest seasonal menu on Thursday, Oct. 3.

Myers and his Executive Chef Brian Howard have created a menu that fuses together inspirations from Chef Myers’ recent travels, with global inspirations of Paris’ gastro-bistro movement, creating an exciting new culinary experience for Las Vegas diners. The market-driven menu emphasizes sharing among guests, with standout dishes such as the Mediterranean Octopus complete with chickpea, toasted hazelnut and harissa, a Tunisian hot chili sauce. Additional dishes from the restaurant’s new appetizer menu include:

  • The Pickle Jar with a mix of the restaurant’s freshest in-house pickles
  • Blue Crab and Avocado Toast accompanied with a kick of acidity from ruby red grapefruit
  • Farm Egg in a Jar with creamy bacon grits and a poached egg cooked together in a mason jar and served with a side of grilled bread

A selection of seasonal items have been added to Comme Ça’s revamped dinner menu, including the Fried Jidori Chicken, a free-range chicken common in Japan and known for its hearty flavor. The fried chicken is garnished with celery and green apple from the restaurant’s garden at Primetime Farms in Pahrump, Nev. Additional new entrée offerings include:

  • Cavatelli Pasta with lamb Bolognese, chickpea and fresh parmesan cheese
  • Bacon Wrapped Pork Chop adorned with grilled romaine, smoked tomato and a black garlic ranch
  • Pan Roast of Dayboat Scallops with brown butter bean, thyme and crispy pancetta
  • Green Curry Steamed Mussels served in a bed of tomato confit and saucisson sec with a variety of dry cured sausage
  • Bouillabaisse featuring a variety of fresh seafood such as roasted monkfish, venus clams, gulf shrimp and mussels

Guests can also enjoy a new selection of a la carte options including Deep Fried Brussels Sprouts with lemon, caper, chili and freshly grated parmesan; Creamless Creamed Corn; Roasted Heirloom Carrots topped with honey, lavender and sea salt; Anson Mills Cheddar Grits and the always delicious Pommes Aligot.

In addition to the new dinner cuisine, Comme Ça’s skilled pastry chefs have created four new desserts to add a charming end to a delicious meal. Guests can indulge in Warm Strawberry Hand Pies; Butterscotch Pot de Crème with chocolate dipped bacon; Devil’s Food Cake topped with praline and milk chocolate ice cream, and hand-made Profiteroles accompanied with vanilla bean, salted caramel and pistachio ice cream.

The Cosmopolitan of Las Vegas is bringing a taste of The Strip’s dynamic luxury resort for the third year in a row to  Los Angeles Food & Wine Festival.  With a wearable art station by Artist David Shirgley; a mixology lunch with Property Mixologist Chris Hopkins, Chef Charles Phan (The Slanted Door) and Chef David Myers (Comme Ça) at Myers’ newest restaurant, Hinoki & the Bird and The Slice—a two-story mobile haven that emulates the essence of the resorts’ luxury rooms, The Cosmopolitan brings yet another year of unexpected experiences to one of Los Angeles’ largest culinary extravaganzas.

This year The Cosmopolitan introduces a new concept in the form of a wearable art station on Grand Avenue.  Event attendees can get inked with temporary tattoos translated from the work of English artist David Shrigley, whose art is featured on PAUSE, a digital art program in which the property’s 65-foot marquee is turned into a large-scale canvas showcasing work from leaders in the contemporary art world. PAUSE transports viewers to a thought-provoking place of contemplation and reflection.

Visitors to the station will have a chance to enter to win a two-night stay at the resort by posting a photo of their tattoo using the hashtag #LetsInkUp to Instagram and Twitter. Official sweepstakes rules are online. Throughout the weekend, The Slice—located at the brand new location on Grand Avenue between First and Second Street in Downtown Los Angeles—will act as a constant retreat for attendees, offering cocktails from renowned Property Mixologist Chris Hopkins, and prime views of the live entertainment.

Throughout May, Comme Ça by David Myers at The Cosmopolitan of Las Vegas takes a daring approach to an American classic with weekly burger specials in honor of National Burger Month.

For the remainder of the month, guests can discover a new, weekly gourmet burger special from the always bold chefs inside the Comme Ça kitchen.

New burger creations include: the Bouillabaisse Burger made with a lobster and crab patty, tempting saffron fennel slaw and a grilled squid ink bun, and the Provençal Burger made with piperade, harissa aioli, fromage blanc and an espellette pepper bun, both available during restaurant hours from Monday, May 6 through Sunday, May 12. The Merguez Burger made with spiced lamb sausage, cucumber rhaita, vadouvan mayo and a caraway brioche bun is available during restaurant hours from Monday, May 13 through Sunday, May 19; and the Pork-a-nator made with a crispy pork cutlet, braised pork belly, head cheese, pig-brain mayo and a toasted bacon bun, is available during restaurant hours from Monday, May 20 through Friday, May 31.

Las Vegas gourmands can embrace the spring season with the latest offering of sensational seasonal cuisine from the creative masterminds inside the kitchen at Comme Ça by David Myers at The Cosmopolitan of Las Vegas.

Myers and Executive Chef Brian Howard take their avant-garde approach for menu creation to the next level  and are once again lighting up the Las Vegas dining scene with an incredible array of new dishes, starting with an overhaul of the weekend lunch offerings. The tempting new lunch menu offers an escape from the ordinary with dishes such as the Red Velvet Bacon Waffle with cream cheese butter and Noble Handcrafted maple syrup. Other new creations incorporating the freshest seasonal ingredients include:

  • House Smoked Salmon Croissant with deviled egg, capers, red onion, watercress and tomato.
  • Chicken Salad Baguette with sun dried spices, dried cranberry, brie and a Comme Ça salad.
  • Local Farm Eggs En Cocotte, featuring soft baked egg, piquillo pepper, spinach and mornay sauce accompanied with toasted brioche.

  • Comme Ça Toast and Jam complete with grilled country bread and house-made preserves.

Named after the 18th Amendment, Comme Ça’s 18A menu constantly evolves as the restaurant’s talented mixologists regularly create new libations inspired by Prohibition Era cocktails. These five latest additions take their place among popular favorites such as the Penicillin, Thyme For Bourbon and Prohibition Punch cocktails.
Guests can enjoy a refreshing version of the classic Tom Collins with the Mr. “Q” Rickey. This tantalizing modern cocktail substitutes lemon juice for Yuzu juice, a popular Asian fruit. The floral quality of Hendricks Gin, a touch of simple syrup and plenty of Mr. Q cucumber soda bring this delicious concoction to life.
Inspired by Brazil’s national cocktail the Caipirinha, the tequila-based Don Guillermo is a refreshing, well-rounded journey of citrus and sweet flavors complemented by various textures. The smooth Peligroso tequila concoction is accentuated by raw brown sugar cubes muddled with green chartreuse V.E.P., fresh lime and dash of crème de cassis.
Drawing inspiration from a popular Prohibition Era cocktail, the Rose Eight uses citrus floral flavors to engulf the palate while whisky serves as the cocktail’s sturdy base. The Rose Eight is complete with fresh-squeezed lemon and orange juices, house-cooked pomegranate syrup, organic clover honey and Knob Creek 100-proof bourbon.
The life of a legend is honored in true style with the Howard Hughes, which is derived from the classic Aviation cocktail. This creation anchored by cognac sour, adds crème de violette to the bottom of the glass for a flowery-sweet edge with a striking presentation.
In a clever homage to the great J.D. Salinger, the Catch Her in the Rye cocktail offers the dark, brooding flavors of a high-proof rye whiskey balanced with the smoky nuttiness of maple syrup and layered with the high tones of whiskey barrel-aged bitters. Supported by the zingy acidity of fresh lemon juice, a gentle mist of tawny port adds a final layer of sweet, nutty, dried figs and caramel to this delicious drink.

Ring in 2013 with the indulgent tastes of Las Vegas’ premier French brasserie Comme Ça by Chef David Myers at The Cosmopolitan of Las Vegas as they welcome the New Year with two tempting prix-fixe menus featuring exciting flavor profiles created by Chef Myers and Executive Chef Brian Howard, perfectly paired with decadent wines from resident Sommelier Bruno Bonnet.

The first seating and second seating tasting menus will showcase Comme Ça’s signature dishes with seasonal twists.  Guests attending the first seating will enjoy an array of outstanding dishes from the four-course menu available for $95 per person – with a wine pairing option for an additional $45 per person – from 5 to 7 p.m.

The second seating will give guests the opportunity to enjoy the full spectrum of Comme Ça’s culinary finesse with the added luxury of a complimentary champagne toast at midnight. The menu will feature six indulgent courses for $195 per person – with an optional wine pairing for $75 per person – from 8 to 10:30 p.m.

Guests may choose to elevate their dining experience at either seating with a celebratory champagne and caviar course. Osetra Caviar will be served with non-traditional accoutrements for a supplemental $180, paired with Taittinger “Comtes de Champagne” Blanc de Blanc for an additional $50.

Comme Ça’s first seating menu will include:

  • First Course: Langoustine Cru with grilled hearts of palm, citrus and sea bean paired with Moulin de Gassac Picpoul de Pinet or Smoked, Cured and Brined Tasmanian Trout with a mélange of beets and wild flowers paired with Simmonet-Febvre Brut Rosé Crémant de Bourgogne.
  • Second Course: Veal Glazed Sweetbread with white truffle, chestnut and smoked potato accompanied by Laguna Ranch Chardonnay or Braised Wagyu Beef with winter vegetables, bone marrow agnolotti and white truffle paired with Domaine Parent Pinot Noir.
  • Third Course: Poached Lobster with black trumpet mushrooms, garnet yam and pomegranate paired with Kenwood Vineyards Pinot Noir or Stuffed, Wrapped, and Roasted Rabbit with bacon, red wine braised salsify and bergamot quince jam accentuated by Acre Winery Merlot or Roasted Filet of Beef with puntarella, foie gras and vadouvan-scented onion with Château Lacombe Noaillac Cabernet Sauvignon/ Merlot.
  • Dessert: Vacheron Cheese with whole grain mustard and California fig or Coffee Milk with caramel and dark chocolate. The wine pairing for either selection is Domaine de la Tour Veille Banyuls.

Available exclusively in the restaurant’s bar and lounge, guests may enjoy 50% off specialty dishes and cocktails from the new happy hour menu.

Whether relaxing after a day in the office or starting the weekend, Comme Ça’s 18A cocktail menu provides the perfect source for selecting some of Las Vegas’ best handcrafted cocktails. Favorites including the White Mint with vodka, sugar, fresh mint, lemon and champagne and the Penicillin with scotch, lemon, ginger, honey and Islay float have cemented Comme Ça as a cocktail powerhouse. Comme Ça at The Cosmopolitan of Las Vegas will launch Riviera Nights, an unparalleled dining and lounge party experience on Thursday, April 26. Set on the restaurant’s stunning patio, the weekly soiree will introduce a selection of French small plates and a signature sangaree.

Available from 8 to 11 p.m. every Thursday night, patrons will enjoy the striking views of the iconic Las Vegas Strip showcased from Comme Ça’s breathtaking patio. A French house DJ will be on-hand to spin the hottest tunes under a canopy of neon red lights glimmering from the ceiling.

 

Guests may indulge their appetites with an array of seasonal French dishes created by acclaimed Chef David Myers and Executive Chef Brian Howard. Items to include Roasted Tomato Tart with basil, nicoise olive and arugula; Roasted Baby Beets with smoked salmon, horseradish, mustard and rye; and Dungeness Crab Salad with crispy garlic and burnt orange.

Acclaimed Chef David Myers will treat mothers to an exquisite dining experience at his esteemed restaurant Comme Ça at The Cosmopolitan of Las Vegas for Mother’s Day on Sunday, May 13.

Chef Myers and Executive Chef Brian Howard have created a specialty prix-fixe menu priced at $55, which will be available all day. Guests may enjoy the French brasserie’s sweeping views of the Las Vegas Strip while indulging in a decadent, three-course dinner that includes a glass of rosé wine. A bouquet of flowers will be presented to mothers upon being seated, adding a special touch to the holiday festivities.

For the first course, diners will have their choice of Dungeness Crab Salad tossed with preserved lemon and garlic; English Pea Agnolotti made with country ham and parmesan froth; or creamy Maine Lobster “Black” Bisque.

Next, Myers and Howard will entertain patrons with three options for the main course: Petit Filet Mignon au Poivre, Lobster Thermidor or Gnocchi au Parisien complemented with grilled peach and Fromage blanc.

For dessert, guests will be treated to White Chocolate Beignets accompanied by Meyer lemon rhubarb jam and strawberry sorbet.

Neil Patrick Harris Dines at Comme Ca at The Cosmopolitan of Las Vegas

“How I Met Your Mother” star, Neil Patrick Harris, dined at Comme Ca at The Cosmopolitan of Las Vegas Friday evening with a large group of friends. Looking dapper in a white button-up shirt, black tie and vest, Harris and his fiancé, David Burtka, were in great spirits as they celebrated a friend’s birthday.

The group noshed on a Grand Plateau, the brasserie’s two-tiered presentation of chilled seafood delicacies. For dinner, the actor indulged in the eatery’s tender cut of Filet Mignon.

Before leaving dinner, Harris tweeted, “At Comme Ca, a fantastic restaurant in Las Vegas. Why do I always tweet about food?”

ON VALENTINE’S DAY

Comme Ça, brought to The Cosmopolitan of Las Vegas by celebrity chef David Myers, will feature an exquisite Valentine’s Day prix fixe dinner in celebration of the most romantic night of the year on Tuesday, February 14.

The acclaimed brasserie will be the ideal destination for couples to celebrate their love as they share an intimate meal while enjoying the breathtaking views from Comme Ça, with the Eiffel Tower and the lights of the Las Vegas Strip as its backdrop.

The elegant dinner, created by Chef Myers and Executive Chef Brian Howard, will be priced at $99 per person, with the option of a wine pairing for an additional $50 per person.

Guests will begin their dining experience with a choice of the ‘Beeting’ Hearts hors d’oeuvre, which features hearts of roasted beats, blood orange, crushed hazelnuts and horseradish; or Seared Dayboat Scallops with champagne butter, Osetra caviar and candied rose petal. Diners will also have the option of adding Fruits de Mer from the signature raw bar, which features Maine lobster, king crab, oysters and clams for an additional $40 per person.

For the main course, patrons can indulge in Lobster Thermidor, comprised of creamy baked lobster, cognac and pommes puree; or the eatery’s popular Beef Wellington prepared with wild mushroom duxelle, foie gras, herbed crepe and sauce diane.

Myers and Howard will delight guests with a tasting of truffles for the dessert course. Valentines will enjoy an irresistible selection of white chocolate with rose champagne truffles, smoked dark chocolate with chili truffles and milk chocolate truffles made with condensed milk.

Comme Ça, the bustling French brasserie brought to The Cosmopolitan of Las Vegas by renowned Chef David Myers, will give guests something to be thankful for this Thanksgiving. The popular eatery will offer a delectable, family-style, prix fixe dinner in celebration of the Thanksgiving holiday on Thursday, November 24.

Families and loved ones can come together to celebrate the joyous holiday with a French-inspired, specialty dinner created by Executive Chef Brian Howard priced at $49 per person.

The bountiful meal will start with a creamy Gilcrease Orchards Pumpkin Soup complemented by a Garnet Sweet Potato Mille-Feuille. Next, guests can enjoy the Waldorf Salad which combines petite little gem lettuce, toasted walnuts, granny smith apples, champagne grape gelee and lemon thyme emulsion.

For the main course, patrons will feast on succulent Roasted Tom Turkey, accompanied by Howard’s signature Foie Gras Apple Stuffing, Green Bean Cassoulet, Comme Ça Cranberry Sauce and Giblet Gravy.

No Thanksgiving dinner is truly complete without a decadent dessert to top off the traditional feast. For dessert, patrons will fall in love with the restaurant’s Deep Fried Bourbon Pumpkin Pie served with huckleberry ice cream created by Comme Ça Pastry Chef Ramon Perez.
