There’s much to be thankful for this month at The Forum Shops at Caesars. Always open on Thanksgiving, a number of the premier retail center’s restaurants are offering up special meals and deals for Thanksgiving. From traditional Thanksgiving dinner to festive holiday sweets and treats, there’s much to celebrate during this season of reflection and gratitude.

Carmine’s NYC Italian Family Restaurant
Let Carmine’s do the cooking this year. Celebrate the holiday with family and friends with Carmine’s traditional Thanksgiving Feast. Designed to feed a family of eight, Carmine’s family-style Thanksgiving Feast includes; an 18-pound roasted turkey with sausage and sage stuffing served with homemade cranberry sauce, brussel sprouts with caramelized onions and applewood smoked bacon, sautéed string beans, baby carrots with fresh dill, sweet potatoes topped with marshmallows and maple syrup, mashed potatoes with giblet gravy and your choice of either pumpkin, apple or pecan pie. Joe’s Seafood, Prime Steak & Stone Crab
While Thanksgiving is a holiday many dedicate to the kitchen, this year, relax and leave the details to Joe’s. Begin your Thanksgiving feast with a choice of Crab Bisque or Roasted Beet Salad followed by traditional favorites and fixings, including Oven-Roasted Turkey with Herb Stuffing and Gravy, Martha’s Citrus Cranberry Relish, Baked Butternut Squash topped with Marshmallows, Jennie’s Potatoes, and Green Beans Amandine. Spago
Enjoy the great American Thanksgiving Day feast at Spago inside The Forum Shops on Thursday, November 28. Executive Chef Eric Klein has created a sensational three-course menu. Choice of Autumn Salad or Spiced Butternut Squash Soup, followed by Roasted Organic Free-Range Turkey Breast with pretzel bread stuffing knödel, green bean casserole, brown sugar sweet potato, Yukon gold potato purée, cranberry-apple chutney, herb gravy, and natural jus. Renowned pastry chef Kamel Guechida ends the meal with a “Pumpkin Pie” Bar for desert. The Palm Las Vegas
Enjoy a three-course, prix fixe Thanksgiving meal at The Palm Las Vegas. During Thanksgiving week, Trevi Pastry Chef Hank Sbraccia will offer his specialty cranberry gelato for $4.50 per scoop. The holiday treat combines dried cranberries, vanilla gelato, a cranberry juice reduction and simple syrup. On Black Friday, Nov. 29, Trevi will offer a $3 Bellini all day long. Executive Chef Peter Scaturro also has a number of month-long specials in November including a rigatoni bolognese topped with hearty meat sauce, priced at $10. Sushi Roku
combines the finest, freshest fish from pristine waters around the globe with the kind of artistry that can only be provided by a mature sushi chef ensuring superlative traditional sushi, together with a splash of California innovation. Incorporating diverse, non-traditional ingredients from Latin America (e.g. jalapeños) and Europe (e.g. olive oil) into its edible works of art, Sushi Roku is offering an impressive, six course Omakase (chef’s choice) menu for $90 per person.
The culinary journey begins with a light amuse of premium tofu caviar with lemon oil followed by a Santen Mori appetizer. The trio of appetizers includes Toro nikiri, Kobe beef tataki and Uni pie with creamy miso sauce. The second course features Clear seafood soup. Next, enjoy Toro, Madai and Kanpachi. Scallop and Foie Gras Togarashi highlight the fourth mouth-watering course. The fifth course showcases premium sushi including; Negi toro, Blue Fin tuna, Shima aji, Ikejime hirame and Masu. This unique dining experience is topped off with the dessert course of an apple tart with vanilla ice cream.
In addition to the unique Omakase menu, Sushi Roku also offers Happy Hour specials Monday through Friday from 5 p.m. – 7 p.m. and all day long on Sunday.

 The stage is set for a two-day celebration of style during the first-ever Festival of Fashion at The Forum Shops at Caesars in Las Vegas on Sept. 6-7, 2013. Food lovers rejoice! Famed New York Italian restaurant Carmine’s is now open in Las Vegas inside The Forum Shops at Caesars.  The first West Coast location of the family-style Italian eatery, Carmine’s serves up “wow sized” portions of Southern Italian cuisine. Even better, Carmine’s offers a unique food check system in which they will hold your inevitable leftovers in their custom refrigerators while you enjoy shopping at the premier retail destination.

 

The Forum Shops incarnation of Carmine’s boasts a whopping 750 seats, six private dining rooms and is perfect for everything from wedding receptions and rehearsal dinners to business conventions and small meetings to viewing parties for major sporting events and more. The massive restaurant can easily accommodate large, walk-in groups, making it ideal for big parties.

 

Carmine’s believes food is meant to be shared with loved ones, so the Southern Italian fare is served family-style, with portions that feed four to six people and offer true value.  Signature selections include the nine-inch high Eggplant Parmigiana, mouth-watering Chicken Contadina, awe-inspiring Porterhouse and indulgent pastas such as Linguine with Clam Sauce and Rigatoni Country Style. The menu would not be complete without Meatballs; the traditional dish includes six oversized beef or veal meatballs placed on top of the guest’s choice of pasta. Decadent favorites such as Chocolate Bread Pudding, Tiramisu and the Titanic Ice Cream Sundae are served up for dessert.

 

The colossal restaurant, designed by Bill Johnson of Johnson Studios, features the trademark touches that grace all Carmine’s locations – high ceilings, antique chandeliers and warm, homey colors. Walls are lined with black and white photographs depicting the Southern Italian families whose culinary traditions inspired the restaurant’s timeless menu.

TREVI inside The Forum Shops at Caesars will offer tasty new $10 summer entrée specials and a gelato happy hour throughout July and August.
 
Throughout July, patrons will enjoy a spaghetti and meatballs special prepared by Executive Chef Peter Scaturro, priced at $10. The delectable dish features two jumbo handmade meatballs over spaghetti pasta and is topped with a zesty marinara sauce.
 
During the month of August, diners will enjoy TREVI’s classic lasagna with layered homemade pasta combined with fresh meat-sauce, ricotta and mozzarella cheeses, priced at $10.
 
Patrons will cool off all summer long with a gelato summer happy hour with $2 scoops of gelato throughout the week on Monday through Friday from 2 to 6 p.m.

From the exclusive Las Vegas location of Max Brenner – Chocolate By The Bald Man to the first and only Joe’s Seafood, Prime Steak & Stone Crab and the first West Coast location of P.J. Clarke’s, The Forum Shops is home to a diverse collection of restaurants and unique eating options. With an array of distinct dining experiences to choose from, there’s something for every foodie at The Forum Shops. This July, the spotlight is on TREVI Italian Restaurant with new offerings that blend classic and contemporary Italian specialties.

TREVI INTRODUCES NEW MENU AND HAPPY HOUR SPECIALS THIS SUMMER:
TREVI Italian Restaurant at The Forum Shops at Caesars has introduced a new menu and happy hour specials just in time for summer. The first menu change since its grand opening in 2009, the new selections include an array of classic and contemporary Italian selections crafted by Executive Chef Peter Scaturro. An array of delectable new desserts have also been developed by Sous and Pastry Chef Hank Sbraccia, accompanying his celebrated fresh gelato made daily at the popular dining spot.

Scaturro, a talented chef who learned to prepare Italian dishes through his upbringing and training in New York City, showcases an array of new house specialties on the new menu. Scaturro will continue to update the menu every spring and fall to highlight the freshest ingredients and to offer lighter or heartier dishes in keeping with seasons. In addition to serving up classic Italian cuisine, Scaturro also believes in the quality of service and guests’ experiences at the restaurant.

TREVI’s specialties include lasagna pizza, a deep-dish pizza topped with layers of Italian sausage, ricotta and mozzarella cheeses and tangy pomarola sauce; shrimp amatriciana, a grilled shrimp dish with spaghetti, pancetta, concasse tomato and onions tossed with homemade marinara; and pollo la griglia, grilled chicken medallions topped with oven-roasted tomatoes, artichoke hearts and provolone cheese in a tomato caper bianco sauce accompanied by risotto cakes and asparagus.

TREVI has also introduced a new happy hour, titled ‘TREVI TIME.’ Available from 2 to 6 p.m. Sunday through Friday in the bar, only, drink offerings include $3 bellinis, $4 bottled beers, $6 wines by the glass and martinis. An array of $6 small plate selections are also featured during ‘TREVI TIME,” and include tomato bruschetta, fresh stuffed mushrooms, fried calamari, Romano chicken sliders, homemade meatballs and mini cheese stuffed burgers.

As if the mouthwatering appetizers and entrées weren’t enough, Sbraccia arrives every morning at 2 a.m. to make the homemade gelato. The gelato bar, situated at the opposite side of the patio from the main entrance, features an array of ten flavors every day including popular selections like tiramisu, strawberry sorbeto and chocolate chunk along with two featured flavors of the day by Sbraccia. As if that’s not enough, TREVI sweetens up July even more to celebrate National Ice Cream Month by giving away
scoops of homemade gelato or sorbetto every day.

A stunning 12-foot tall custom glass chandelier is the focal point and centerpiece of the restaurant as it beautifully hangs from the mezzanine level to the bottom floor.

TREVI has phenomenal group sales offerings with a private or semi-private upper level or the full restaurant available for buyouts. The upper level, overlooking the Fountain of the Gods and framing the lower level, accommodates parties from 20 to 165 guests for a mixer, or up to 140 for a seated dinner. The dining room accommodates 70 guests for a seated dinner, and the entire restaurant, including the patio, seats 400.

Joe’s is known for Bone-in steaks, but if you’re not in the mood for steak, you can’t go wrong with the Pork Chop with Spaghetti Squash, Bacon and Peppadew Peppers ($27.95).  The 14- ounce, double bone chop is immersed in bourbon and apple juice brine and broiled, brushed with an apple cider maple glaze and served with spaghetti squash sautéed with apple wood smoked bacon and peppers. Joe’s Stone Crab Ham and Peas Mac and Cheese
 
INGREDIENTS FOR MAC & CHEESE BECHAMEL:
1 ½ tsp                                      Clarified Butter
1 Tbl                                           Leeks, sliced
½ Tbl                                           Shallots, sliced
2 ½ Tbl                                       Butter, cut into pieces
2 Tbl                                           Flour
2 cups                                       Milk
1 each                                       Bay Leaf
Pinch                                         White Pepper
 
INGREDIENTS FOR HAM AND PEAS MAC & CHEESE:
2 cups                                       Medium Shell Pasta (cooked, reheated)
¼ cup                                         Country Ham, small dice (3/8”)
2 cups                                       Mac & Cheese Bechamel
½ cup                                         Aged White Cheddar Cheese, grated
2 Tbl                                           Peas
Pinch                                         Cornbread Crumbs
Pinch                                         Chopped Chives
 
INSTRUCTIONS FOR MAC & CHEESE BECHAMEL
Make the Roux: In a rondo, sweat the leeks and shallots over medium heat until soft. Do not brown. Add butter and melt. Add flour and stir with a spatula until smooth. Continue to cook the roux over low heat until a light blonde color, for approximately 5 minutes, scraping sides and bottom of pan with rubber spatula to prevent scorching.
 
In a separate pan, while the roux is cooking, heat milk over medium-high heat until just scalded (until it just begins to boil). Next, to make the Bechamel, slowly pour the scalded milk into the roux while mixing with a wire whip. Continue to mix until smooth and free of lumps. Then, bring to a simmer, using a rubber spatula to scrape the sides and bottom to prevent scorching. Reduce heat to low and simmer for 20 minutes, scraping sides and bottom frequently. Next, stir in the white pepper. Lastly, strain through fine chinois.
 
INSTRUCTIONS FOR HAM AND PEAS MAC & CHEESE
Brown the ham in a sauté pan until light brown on one side. Add Bechamel and bring to a simmer. Remove from heat, and add hot pasta and cheese. Toss to mix. Transfer to gratin dish and sprinkle with cornbread crumbs. Bake in 450°F convection oven for 6 minutes, or until golden brown.
 
TO SERVE
Add a pinch of chopped chives.

 SUSHI ROKU ROLLS OUT A NEW 2.0 MENU IN LAS VEGAS
Redesigned Menu Features Signature-Style Sushi and More
 
Las Vegas diners who are looking for a fresh, inventive Japanese dining experience should look no further than Sushi Roku Las Vegas inside The Forum Shops at Caesars. Showcasing novel and innovative signature dishes, guests will find new additions to the lunch, dinner, and happy hour menus, including Salmon Sashimi Carpaccio with Black Truffle (shaved tableside); Kobe Meatballs in Lettuce Cups with mustard soy truffle sauce; Albacore Tacos “Roku Style”; and the Ume (six-piece) and Matsu (eight-piece) Roku Signature-Style Sushi Creations.
 
Two of the most celebrated new dishes on the re-styled menu are the Ume and Matsu Signature-Style Sushi plates, featuring six or eight individual pieces of nigiri-style sushi, crafted with accoutrements that complement each fish’s flavor profile. The Forum Shops at Caesars has long been noted for its eclectic collection of restaurants and unique eating options in addition to its plentiful roster of renowned retailers from around the world. With 16 distinct experiences to choose from, there’s something for every taste this month at The Forum Shops.

SPAGO CELEBRATES THE RETURN OF CELINE DION: In honor of Celine Dion’s triumphant return to The Colosseum at Caesars Palace, Spago at The Forum Shops debuts a new pre-theater menu perfectly designed to create an evening of world-class food and entertainment. Offered on show nights only, guests can begin their evening with a three-course menu designed by acclaimed Executive Chef Eric Klein. Priced at $60 per person excluding tax and gratuity, Chef Klein has created an inspired menu featuring some Spago signature favorites as well as new culinary creations. Dishes available include jumbo lump crab salad “Louie” with quail eggs and lemon vinaigrette or the “French B.L.T.” salad; grilled prime skirt steak “Au Poivre;” or steamed Scottish salmon “Hong Kong Style.” For dessert, the meal is topped off with chocolate-filled crepes served with market berries and crème fraîche. The menu is only available between 5:30 p.m. – 6:30 p.m. on Celine Dion show nights.
