SUSHISAMBA UNVEILS LARGEST JAPANESE WHISKY LIST IN LAS VEGAS
SUSHISAMBA, known for their unique blend of fiery Brazilian, zesty Peruvian and fresh Japanese cuisine inside the Grand Canal Shoppes, now features the largest Japanese whisky list in Las Vegas, and one of the largest in America.
 
Japanese Whiskies have been gaining global accolades and popularity in recent years. After conquering sake for the past 15 years, SUSHISAMBA is expanding their brand featuring 26 whiskies aged up to 28 years, in all varieties. The impressive collection also includes some rare award-winning selections such as Akashi 5YR Sherry Cask, the Mars 3 & 25, Nikka Taketsuru 17yr Pure Malt – a line dedicated to the founder of Nikka.
 
In celebration, the restaurant will offer a special menu featuring Japanese Whisky, curated by Executive Chef Joel Versola. The menu will showcase the versatility of the whiskies presented with a variety of SUSHISAMBA dishes from crispy tempura minter sweet oysters with butter lettuce to whisky-soy marinated robata pork ribs. Buddy “Cake Boss” Valastro’s restaurant, Buddy V’s Ristorante, located in the Grand Canal Shoppes, is serving up a signature steak pizzaioli. This dish features a juicy New York strip served with peppers, tomatoes, mushrooms and onions for $36.
 
HONG KONG CAFÉ – Pepper Crusted Kobe Beef
Hong Kong Café, located on the casino floor at The Palazzo, will be offering pepper-crusted Kobe Beef with golden garlic flakes. The dish includes 8 oz. of Australian Kobe Steak, wok seared to a perfect medium with black pepper and garlic flakes for $58, available Feb. 20 – March 20.
 
PUBLIC HOUSE – Wagyu Flat Iron Oscar
Public House is a beer lover’s paradise with more than 200 selections, more than 40 aged whiskeys, scotches, bourbons and wines. The gastropub, located in The Venetian’s Restaurant Row, will offer a decadent Wagyu flat iron Oscar. This special dish will be served with asparagus, lump crab, creamy béarnaise and bordelaise sauces, and truffle mashed potatoes.

Zeffirino Italian Ristorante, located in the Grand Canal Shoppes, will offer several special entrees to enjoy including:

SUNDAY YOGA AND MIMOSAS AT AZURE POOL
Start your Sunday feeling peaceful by practicing yoga and sipping on mimosas at Azure Pool at The Palazzo. Join the Canyon Ranch SpaClub team as they bring their mats to the pool deck for 50 minutes of breathing, stress relief and fun through alignment in basic postures including standing, kneeling and seated positions.

CARNEVINO SPRING MENU ADDITIONS
This spring, Carnevino Italian Steakhouse at The Palazzo is taking the finest and freshest ingredients of the season to create an ever-changing menu for food lovers. The dishes will be available through the end of June.
New dishes for spring include:
 
Lamb sausage with sorrel, pickled garlic and pea tendrils
House made lamb sausage, mixed with a medley of spices, the sausage is topped with a vibrant salad consisting of sorrel, sorrel flowers and pea shoots and tossed in a zesty charred chive vinaigrette.
Mussels with peas and prosciutto
Tender mussels sautéed with savory prosciutto, peas and tomatoes in a flavorful brodo of white wine and tarragon and served with crispy fett’unta bread.
Duck egg with asparagus, radish and sorrel
This dish features a robust duck egg served over a spring salad with asparagus and sorrel. The salad is dressed in a seasonal citrus vinaigrette with an egg placed delicately over crispy fett’unta then topped with fresh-shaved horseradish and cracked black pepper.
Stracciatella with lonza, peas and mint
With creamy stracciatella cheese encircled with robust peas and savory lonza, the beans are also dressed in rustic rosso lambrusco red wine vinaigrette. The dish is finished with olive oil and black pepper.

Tender butter lettuce tossed with julienned carrots, radish, red onion and asparagus and served with freshly shaved ricotta salata and brilliant citrus vinaigrette.
Artichoke agnolotti with ricotta salata and lemon
This dish includes artichokes cooked in butter, onion and cream to achieve exquisite flavor and tenderness. After puréeing, the filling is handcrafted into agnolotti pasta then finished with lemon butter sauce. The last touch is a sprinkle of ricotta salata, lemon zest and crispy artichoke slices.
 
Dungeness crab crespelle with ricotta, lemon and basil
Start with creamy house made ricotta that is folded with hand-picked Dungeness crab, fresh herbs and asparagus that is then used as the filling inside the house made crespelle. Finally, the dish is garnished with fresh crab, baby cress, butter and more asparagus.
Pappardelle Verde with duck ragu
Wide ribbons of house made pappardelle noodles infused with stinging nettle, resulting in an unforgettable flavor and distinct color. The noodles are tossed with a ragu of braised duck, white wine, tomato and sage and topped with parmigiano reggiano.
Gnocchi with green garlic pesto and peas
Begin with petite house made potato dumplings. The gnocchi is tossed with a radiant green garlic pesto with peas and pea shoots then topped with dazzling borage flowers, which are edible and possess a taste reminiscent of cucumber.
Wild Gulf Shrimp with riso nero, smoked pork and peas
Ample pan seared shrimp, served over black Italian rice known as riso nero. These beautiful shrimp are sautéed in an assortment of peas, garlic, white wine and smoked pork belly. The final touch includes green onion slivers.
English Peas with spring onion and spicy pork
Blanched colorful English peas and served with spring onions, fresh lemon zest, butter and a touch of olive oil.
Fiddlehead Ferns with gremolata
Fiddleheads are blanched for tenderness, then topped with an aromatic gremolata of lemon zest, herbs and mouthwatering garlic.
Charred Ramps
A seasonal delight. The dish is kept elegantly simple by charring the ramps alla piastra, then adding olive oil, salt, pepper and a hint of lemon.

The Venetian and The Palazzo Las Vegas are honoring the luck of the Irish in Sin City on Tuesday, March 17 with fantastic specials for guests to enjoy, whether or not they find the pot of gold at the end of the rainbow. St. Patrick’s Day partygoers can revel in Irish-inspired fare, deals on festive drinks and additional emerald goodies.

All six of these signature Venetian and Palazzo hot spots will offer St. Patrick’s Day drink specials to celebrate the holiday in style. Special beverage offerings include a Jameson Irish Whiskey and Bud Light combination pour ($15); Jameson Irish Whiskey and ginger ($10); and Jameson Irish Whiskey shot ($9). In addition, Jameson Irish Whiskey models will be hanging out at each location, adding to the fun with complimentary goodies including t-shirts, hats and beads.

 

PUBLIC HOUSE
Have a lively St. Patrick’s Day experience at one of Las Vegas’ best beer paradises, Public House. In celebration of the beer-centered holiday, Public House has curated a special Irish beer flight for $15 that offers delicious tastes of Ireland. The flight includes Murphy’s Irish Stout, Brooklyn Dry Irish Stout, Innis and Gunn Irish Cask and Harp.  Guests are also invited to treat themselves to a classic Irish dish, with a special house made corned beef and cabbage ($22) available for the holiday. YARDBIRD SOUTHERN TABLE & BAR
The Venetian’s recently opened Southern eatery will offer a Southern spin on traditional Irish food along with festive drinks. In honor of St. Patrick’s Day, Yardbird will serve a savory spicy crawfish bake paired with cornbread, red bliss potatoes, Andouille sausage and corn on the cob. At $26 per lb. it’s the perfect dish to share over drinks with friends and family. The dish is followed with a sweetly delicious Baileys Irish Cream milkshake, perfectly blended with chocolate ice cream, chocolate sauce, Baileys Irish Cream and whipped cream ($12). In addition, guests can indulge in a signature 3 Point shot, a blending of Baileys Irish Cream, Jameson Irish Whiskey and Gunshot Stout ($13). 50 Eggs, Inc. announced today that it is bringing Yardbird Southern Table & Bar to The Venetian® Las Vegas, for an early 2015 launch.
 
Created by restaurateur John Kunkel and featuring a talented culinary team, 50 Eggs, Inc. has been helping redefine dining in South Florida for the last 10 years, from fast casual to approachable fine dining. Since its inception, it has been the force behind a varied and successful family of restaurants, ranging from Taste Bakery Café and Lime Fresh Mexican Grill to the critically acclaimed trio Swine Southern Table & Bar, Khong River House and Yardbird Southern Table & Bar.  
 
“Las Vegas is a one-of-a-kind American city with an unbeatable spirit, amazing history, energy and food scene,” says Kunkel, who has been seeking the perfect location for Yardbird’s expansion for more than a year.  “We’re thrilled to be opening in this iconic city and couldn’t ask for a better partner than the team at Las Vegas Sands [which owns and operates The Venetian and The Palazzo].  We think it’s a sure bet Vegas locals and visitors alike will embrace the food, fun and traditions that are the building blocks of the Yardbird concept.” 
 
Housed at the The Venetian Las Vegas, “one of the best places to stay in the world” according to Condé Nast Traveler, Yardbird Las Vegas will be in great company, rubbing shoulders with fellow Venetian dining destinations B&B Ristorante by Mario Batali and Joe Bastianich, Thomas Keller’s Bouchon and db Brasserie by Chef Daniel Boulud, to name a few. And though Yardbird Miami’s sister restaurant will share many of the restaurant’s design and menu staples, it will certainly embrace the “bigger is better” aesthetic that is inarguably part of the Las Vegas DNA.  
 
The 8,000+ square-foot-space – designed by 50 Eggs’ internal design team in cooperation with Parts and Labor Design – will be located in the resort’s Restaurant Row and will seat 180 guests throughout the main dining room and two private rooms.  With the extensive footprint will come an expansive bar, giving the 50 Eggs team added space to expand their beverage program, delivering not only a unique cocktail menu but an exclusive ice program, complete with a special on-site ice room where mixologists will harvest hand-cut blocks for an array of libations.  
 
“The larger space is definitely giving us extra room to play,” adds Kunkel.  “The menu and bar programs will feature many of our hallmarks, including our outstanding brunch and signature Guest Chef Series, as well as a number of singular elements.  Our goal is for Yardbird to stand out from its neighbors, both in- and outside of the Venetian itself.”
