Newest UnCommons Concept Celebrates the Flavors of Mexico with Authentic Cuisine, Scratch-Made Cocktails, and Tequila Partnerships


Siempre, J.B., a modern Mexican dining destination, is now open at UnCommons. The restaurant concept, created by AYYA Hospitality Group, explores the best flavors and culinary traditions across various regions of Mexico including Puebla, Mexico City, Oaxaca, Jalisco, and coastal regions.


Curated by Chef de Cuisine Román Andrés, Siempre encourages guests to explore the breadth of Mexican cuisine from classic street food, such as flavorful street tacos and smoky elote, to a showcase of creative opulence such as the scallop & uni tostada and wagyu hot stone with homemade chimichurri.


Open daily for lunch and dinner, Siempre’s 100-seat dining room and 18-seat bar create a sophisticated, desert sanctuary nestled within the Southwest Las Vegas Valley. During the day, large windows allow natural light to flood the space while at night, atmospheric mood lighting and a house DJ set the scene for a trendy, nightlife experience.


Siempre also offers an exclusive private dining room “La Guarida” featuring a rustic, earthy space for up to 12 guests. Utilizing one-way glass, the unique dining room mirrors the energy and atmosphere of the main dining room while offering enough privacy to make guests feel as if they are dining with their own cast of banditos planning their next great heist.

A Look into Siempre’s Menu:



Guests are invited to begin the meal with various small plates designed to share. Highlights include:

  • Salsa Sampler ($15): Five distinct salsas served with warm, house-made chips and chicharrones. Salsas range from light and refreshing with the Salsa de Tomato or Tomatillo Avocado to fiery and intense with Chili de Arbol and Mango Habanero.
  • Grilled Street Corn ($12): Elevating the beloved Mexican elote, each cob is grilled to perfection and topped with chipotle mayo, cotija cheese, chili powder, and fresh lime.
  • Taquitos ($13): A twist on traditional taquitos, Siempre’s organic chicken taquitos are wrapped in baby gem lettuce, topped with salsa verde, and drizzled with crema.
  • Quesadillas ($9): Showcasing Siempre’s tortillas, made in-house daily, quesadillas are generously filled with a blend of authentic Mexican cheeses and topped with cilantro and heirloom tomatoes. Guests can also add chicken (+$4) or carnitas (+$3).


Siempre offers a variety of quintessential Mexican dishes beloved for their vibrant flavors, fresh ingredients, and versatility. Highlights include:

  • Mole Chicken ($25): Chef de Cuisine Román Andrés’ family mole recipe with authentic mole poblano, Mexican rice, and pickle.
  • Tostadas: Built on crispy, fried corn tortillas, Siempre features four tostada options: chicken ($5), shrimp ($7), carne asada ($8), and scallop & uni ($21).
  • Tacos: Wrapped in Siempre’s homemade tortillas, guests can create their own taco platter from six options: avocado ($5), carnitas ($5), chicken ($6), crispy fish ($6), shrimp ($8), and carne asada ($9).

From the Sea

Representing cuisine from the coastal regions of Mexico, Siempre boasts a variety of seafood appetizers and entrees. Highlights include:

  • Bluefin Tuna Crudo ($21): Refreshing appetizer featuring fatty bluefin tuna complemented with roasted peppers, crunchy garlic, mango, and habanero.
  • Hokkaido Scallop Ceviche ($18): Robust appetizer with scallops sourced from Hokkaido served with cucumber, honey, serrano pepper, and aji amarillo pepper.
  • Shrimp Diablo ($29): Main course presenting tender shrimp with chili de arbol, bell pepper, onion, and cayenne chili.

From the Grill

Capturing the blend of vibrant flavors associated with traditional Mexican steak dishes, Siempre showcases five options, each expertly seasoned and cooked to perfection. Highlights include:

  • Wagyu Hot Stone ($45): 6-oz flat iron steak presented on a hot stone and served with seasonal vegetables and house-made chimichurri sauce for dipping.
  • Carne Asada ($52): 8-oz skirt steak presented on a flaming hot stone and served with seasonal vegetables and house-made chimichurri sauce for dipping.
  • Dry Aged Bone-In Striploin ($98): 40-day dry-aged, 14-oz striploin served with seasonal vegetables.

From the Bar

Siempre’s beverage program features scratch-made drinks celebrating the rich heritage and bold flavors of Mexico. Highlights include:

  • Dos Caras x Siempre ”Special Reserve Blend”: In partnership with Dos Caras Spirits, a woman-owned tequila company in Jalisco, Siempre will be the exclusive purveyor of Dos Caras x Siempre ”Special Reserve Blend”. Siempre will be the only place in the world to experience the blended reposado tequila, aged for 6+ months by the Dos Caras team in the “Golden Triangle of Tequila” area in Mexico, available for sipping and in margaritas.
  • Buena Suerte “Good Luck” Shot: In collaboration with Patrón, guests who purchase a Buena Suerte shot will receive a commemorative gold coin to flip for the chance to win a second Buena Suerte shot featuring Patrón on the house. Additionally, guests who return to Siempre with their coin can flip for up to one free Buena Suerte shot per visit.
  • In-House Aguas Frescas: Inspired by the thirst-quenching beverages with centuries-old roots in Mexico City, Siempre’s Aguas Frescas will be expertly crafted in-house and utilize fresh fruits and premium ingredients. Flavors include melon, cucumber, hibiscus, and horchata.
  • Signature Margaritas: Featuring six unique margaritas available on the rocks or blended, Siempre’s margarita program spotlights Dos Caras tequilas, syrups made in-house, and Siempre’s Aguas Frescas.
