 Perched more than 800 feet above the Las Vegas Strip inside the highest observation tower in the United States, Top of the World Steakhouse at The STRAT Hotel, Casino & Tower has introduced new seasonal dishes that pair bold, vibrant flavors with breathtaking views..

New starters and salads include heirloom tomatoes and buffalo mozzarella salad with fresh basil, Italian olive oil and freeze-dried balsamic, priced $21; ahi tuna crudo with chili crunch-marinated cucumber and yuzu and soy sauces, priced at $24; and an impressive shellfish display featuring Maine lobster, king crab, seasonal oysters, poached shrimp and tuna poke accompanied by assorted house-made sauces, suitable for two to four diners, priced at $150.

Elevated entrées include Duroc pork chop with mojo marinade, peach and apricot chutney and baby cress, topped with mint and lemon vinaigrette, priced at $64; seared Mary’s chicken with orzo pasta, lemon, peas, leeks and champagne broth, priced at $50; seared Scottish salmon with roasted tomato, artichoke caponata and micro herb salad, priced at $52; lamb loin featuring garlic marinade, accompanied by roasted root vegetables and harissa yogurt, priced at $68; seared diver scallops with soft polenta, wild mushrooms, asparagus and peas, priced at $60; among other tempting selections.

New desserts offer creative twists on seasonal classics. Highlights include brûléed Basque cheesecake served with vanilla bean ice cream, berry compote, raspberry coulis and cinnamon streusel; very berry cobbler made with strawberries, rhubarb, streusel and vanilla bean ice cream; peaches and cream featuring vanilla bean panna cotta, caramelized peaches, almond joconde, honey almond granola, amaretto anglaise and peach caviar; Spring Daisy with coconut crèmeux, pineapple mango compote, mango coulis and coconut whipped cream in a vanilla tart shell; and a sorbet trio featuring honeydew, mango Crown Royal and coconut Malibu rum, topped with lime caviar, all priced at $17.

Complementing the new dishes is an enticing lineup of handcrafted cocktails to elevate the experience. Highlights include the Seasonal Old Fashioned made with Woodford Reserve Kentucky Straight Bourbon Whiskey infused with lemon and Amarena cherry, Sugar Cane Dane Maui Falernum and Angostura aromatic bitters, priced at $23; Glitz & Glamour with Tito’s Handmade Vodka, Licor 43 Original, Chinola Passion Fruit Liqueur, lemon, granadilla and a Champagne sidecar, priced at $23; Ube Colada crafted with Havana Club Añejo Clásico Rum, Planteray Stiggins’ Fancy Pineapple Aged Rum, lime, crème de coconut and ube, priced at $21; Clover Club with Bombay Dry Gin, dry vermouth, raspberry and lemon, priced at $20; and The Don in Black crafted with Don Julio Reposado Tequila, Mr Black Cold Brew Coffee Liqueur, espresso and agave nectar, priced at $21.
