Amaya Modern Mexican at The Cosmopolitan of Las Vegas will light up the Strip with an unforgettable celebration for Mexican Independence Day, including vibrant cocktails, live entertainment and bold flavors on Tuesday, September 16.

The fiesta will kick off with dinner service at 4 p.m., and live entertainment will captivate diners starting at 6 p.m. Guests will be immersed in the energy of the night with mesmerizing fire performers, spirited dancers and a live DJ, setting the stage for an evening full of fun, immersive experiences. Specialty cocktails, crafted exclusively for the occasion, will include the Prickly Pear Royale, featuring Don Julio 1942, prickly pear, cucumber, black pepper honey and lemon, priced at $24; and bottomless Don Julio Blanco margaritas, priced at $36 per person, with a two-hour limit per guest.

Guests can savor Amaya’s signature dishes that showcase bold, modern Mexican flavors. Highlights include bluefin tuna tiradito with ponzu, mango, pickled shallot, chipotle aioli and cilantro, priced at $24; shrimp enchiladas with guajillo cream sauce and avocado, priced at $39; carne asada featuring prime grilled skirt steak with chili butter, grilled cebollita, sweet peppers and chimichurri, priced at $48; and Amaya’s Surf and Turf featuring an eight-ounce Wagyu filet, 20-ounce dry-aged New York steak and chili lime lobster tail, paired with a trio of salsas and warm tortillas, priced at $225.
