Boulder Station set to Welcome Leticia’s Cocina & Cantina this Summer 

 Boulder Station will soon welcome an authentic taste of Mexico with the addition of Leticia’s Cocina & Cantina, set to open summer 2025.  

Led by well-known restaurateur and executive chef Leticia Mitchell, she has made her mark throughout the valley. By taking traditional dishes and old-world recipes inspired by her mother, and infusing her signature flair to create the ultimate mouth-watering selection for guests to indulge in, Leticia has developed a concept that has become a Vegas staple.

Chef Leticia, along with her business partner and niece Sue Kiple, continue to make strides in the community and will expand their relationship with Station Casinos with a second restaurant in the company’s growing portfolio of local favorite restaurants.  

“My goal is to always create a lasting impression of hospitality and impart a real taste of Mexico with each and every visitor,” said Executive Chef Leticia Mitchell. “We’re excited to satisfy cravings by introducing an expansive menu of authentic Mexican cuisine made daily with fresh produce, never canned or frozen, and traditional products for our Boulder Station guests.”

From signature dishes like fresh shrimp ceviche and El Molcajete, to homemade pure corn tortillas, Leticia’s offers a wide variety of Mexican classics and newfound favorites sure to whet any appetite. Standouts include the award-winning Quesa Tacos and Leticia’s iconic Queso Fundido appetizer, as well as the Birria Quesa Tacos, named by Chef Leticia, Chilangos, made with tender beef birria and served with the birria consommé.  

Leticia’s Cocina is set to replace Guadalajara Mexican restaurant, which is closed effective immediately to begin preparations for the arrival of Leticia’s.
