Mario Batali’s Signature Restaurant to also Celebrate National Pasta Day

 Pizza and pasta fanatics are invited to celebrate Italian classics this October at Las Vegas’ top-rated OTTO Enoteca e Pizzeria at The Venetian. In observance of National Pizza Month, for the first time, OTTO will offer The Pizza Flight for $25, a combination their three most popular pizzas into one single pie.

The flight will feature:

The Basil Pesto with house-made Lamb Sausage and pesto.
The Carbonara with pancetta and topped with an egg.
The classic Margherita made with tomato, bufala mozzarella and fresh basil.
Ice cold Italian Peronis can be paired with the flight for $5.

For those craving classic Italian pasta, the Four Course Pasta Tasting will be available in celebration of National Pasta Day on Oct. 17. The pasta tasting will include four handmade pasta dishes each highlighting a different preparation: dried, fresh, baked and fried. The first dish will be linguini with mushrooms in a light sauce. The second course will feature squid ink spaghetti with calamari and Sicilian pesto. Next, a classic baked lasagna with red meat sauce and the final dish will end with deep-fried ravioli stuffed with house-made sweet ricotta and nutmeg tossed in cinnamon sugar, glazed with brown butter, poached pear syrup and finished with shaved toasted pistachio and aceto cavedoni. The tasting will be available beginning Oct. 16 through Oct. 20 for $44.

At B&B Ristorante the whole grilled branzino ($42) makes a light, delicate meal, served with an herb and fennel salad and grilled lemon. For an appetizer, the calamari and seppie fritti ($19) is served with capers, pickled chili and butter.

CARNEVINO ITALIAN STEAKHOUSE AT PALAZZO LAS VEGAS
Carnevino Italian Steakhouse‘s noteworthy seafood dishes include the Tuscan seafood stew ($36) and red snapper ($42). The clams al forno appetizer ($24) is a delicate mix of breadcrumbs, oregano and pancetta, best served with a light spritz of fresh lemon juice.

 Beloved Celebrity Chef Mario Batali will personally be on hand to celebrate the upcoming 10th anniversaries of his signatures restaurants B&B Ristorante and OTTO Enoteca e Pizzeria with a special reception and dinner. In addition, the restaurants will launch month-long special menus showcasing classic dishes.

“These dishes are the distillation of our philosophy on Italian food: cook using local (and sometimes unpredictable) ingredients with the spirit of the Italian peninsula,” says Batali. “This is all in service of creating an exciting but familiar and delicious bite each and every time.”

10TH ANNIVERSARY DINNER ON APRIL 14
Beginning at 6 p.m. on Friday, April 14, festivities will start with assaggi, prosecco and spirits served on OTTO’s lively patio located in the heart of St. Mark’s Square inside the Grand Canal Shoppes. Guests can expect passed appetizers and signature pizzas including:

  • A festive cheese and meat display featuring classic Italian cheeses and OTTO’s signature housemade charcuterie
  • Carrozza: fresh mozzarella deep fried, served with fresh Italian herbs
  • Fried Ricotta: house-made ricotta, Castelvetrano olives and cherry pepper fritters
  • Mixed Marinated Olives: a medley of Italian olives including Picholine, Castelvetrano, Gaeta and Cerignola olives, marinated with citrus zest, bay leaf thyme and fennel
  • Calzone: with ricotta and Prosciutto di Parma
  • Margherita Pizza: ripe tomato, bufala mozzarella and fresh basil

At 7:30 p.m., festivities will move to B&B Ristorante where guests will savor a 4-course meal showcasing a blend of dishes from when the restaurant opened and brand-new Spring additions. The courses will include:

    • Grilled octopus with “fagioli marinati” and spicy limoncello vinaigrette
    • Three types of bruschetta: ceci, fava and Tuscan kale
    • Warm lamb’s tongue with chanterelle mushrooms and a three-minute egg
  • Primi (served family-style):
    • “Mint Love Letters” with merguez sausage
    • Beef cheek ravioli with black truffles and crushed duck liver
  • Secondi (choice of one):
    • Grilled quail with beet “farrotto”
    • Short rib “al Barolo” with Anson Mills polenta and horseradish
    • Crispy striped bass with spring vegetable “vignole”
  • Dessert (served as a duo):

SUSHISAMBA UNVEILS LARGEST JAPANESE WHISKY LIST IN LAS VEGAS
SUSHISAMBA, known for their unique blend of fiery Brazilian, zesty Peruvian and fresh Japanese cuisine inside the Grand Canal Shoppes, now features the largest Japanese whisky list in Las Vegas, and one of the largest in America.
 
Japanese Whiskies have been gaining global accolades and popularity in recent years. Carnevino Italian Steakhouse‘s  three-course prix-fixe menu features a choice of appetizer such as insalata Caprese or calamari fritti, main course options including filet mignon or crispy skin snapper and a light panna cotta or gelati for dessert. The prix-fixe menu is $135 per person plus tax and gratuity.

For a decadent dessert, seasonal white alba truffles can be added to a dish for $19 per gram with a five-gram minimum. Dinner is served Dec. 31 from 5:30 p.m. Reservations are recommended.

This tasting menu will be offered for dinner and is $195 per person.

OTTO Enoteca e Pizzeria is launching kid-friendly menu items, showcasing the restaurant’s classic dishes in smaller portions and most importantly, kid-friendly! OTTO is now one of the few restaurants at The Venetian to include a children’s menu in addition to their original menu.

The menu is now available for children ages 12 years and under. Selections include penne ($12), spaghetti ($12), bow-tie fresh pasta ($12) or bread gnocchi ($12). These pastas can be topped with butter and cheese, Pomodoro sauce or a capricciosa sauce. Kids can also choose between a fresh mozzarella or salami cotto pizza ($12). Culinary Director Nicole Brisson is the driving force of the culinary team at B&B Hospitality Group’s four Las Vegas restaurants. Chef Brisson oversees ever-changing menus, sources new ingredients and makes sure the quality of cuisine served is always top-notch.

Prior to her appointment as culinary director, she was the executive chef at Carnevino at The Palazzo. In that position, she oversaw a staff of nearly 120 employees at what many food critics consider one of the best steakhouses in the country. She also served as chef di cucina at B&B Hospitality Group’s OTTO Enoteca e Pizzeria for three years.

Chef Brisson’s culinary vision for B&B Hospitality Group Las Vegas is clear: to continue to showcase Italian culture and food to the Las Vegas audience. Chef Brisson leads the Las Vegas team together with Director of Operations Zach Allen, who first hired Brisson 10 years ago.

His culinary philosophy for B&B Ristorante is to present the food and showcase the products as simply and beautifully as possible. He enjoys working with the seasons and the farmers and producers he has cultivated relationships with over the years.

Chef Uniss’ favorite pasta at B&B Ristorante is the beef cheek ravioli. Chef Uniss explains one bite of this dish brings back memories of enjoying ravioli with truffle duck liver sauce for the first time at Babbo New York (another B&B Hospitality Group restaurant) which inspired him to work at B&B Hospitality Group.

Danny Herrera is the chef de cuisine at OTTO Enoteca e Pizzeria at The Venetian. He has been with B&B Hospitality Group since the restaurant opened in 2007. In his current position, he is charged with overseeing the kitchen’s day-to-day operations and the execution of the menu.

Chef Herrera’s favorite pizza at OTTO Enoteca e Pizzeria is the summer corn pizza, a dish he created to highlight the sweet corn at its prime. The pizza starts with corn spuma, fresh mozzarella, charred corn kernels and Fresno chiles for a hint of spice. Upon request, 24-month aged prosciutto can be added for a rich depth of flavor.

Restaurant Celebrates Ninth Birthday with $9, $99 Offers

OTTO Enoteca e Pizzeria at The Venetian celebrates its ninth birthday this April 25. To commemorate the occasion, all month OTTO is offering a collection of three samplings from its Antipasti – Verdure (vegetable) menu for $9during lunch. For dinner, guests may experience the best of OTTO’s lively, authentic Italian menu with a Tasting for Two for $99. In addition, all day through end of April, the restaurant will feature the refreshing Venetian Spritz cocktail—made with prosecco, Aperol and soda—for $9 a glass.

OTTO’s popular Verdure include Mixed Marinated Olives, Eggplant Caponata, Farro with Spring Vegetables, Sugar Snap Peas with Pecorino, OTTO Pickles, Roasted Beets with Saba, Asparagus with Romesco. Normally, Verdure prices range from $8 to $11.

Monthly News Release to Feature New and Newsworthy Tips from the Award-Winning Restaurant Collection

 

 B&B Hospitality Group (B&BHG) highlights dishes and techniques that take time, including its curing and dry aging programs.

According to the National Cattlemen’s Beef Association, dry aging is a process whereby portions or sides of beef are stored without protective packaging and refrigerated for an allotted amount of time. This process allows a natural enzymatic and biochemical reaction, which results in improved tenderness and the development of the unique flavor that can only be described ‘dry-aged beef.'” Today, only a small number of meat purveyors and restaurants engage in this process because of the extra time, labor and costs involved.

At a fine-dining steakhouse, the industry standard is typically dry aging for 30 to 40 days. B&BHG’s restaurants consistently push the limits of what can be done with this process and set the standard for steakhouses around the country. When dining at a B&BHG restaurant in Las Vegas, you won’t find a dry aged steak on the menu that has been aged less than 90 days, nearly triple the standard amount of time. Together with Chef Mario Batali, the team at B&BHG in Las Vegas, which includes Culinary Director Jason Neve and Executive Chef of Carnevino, Nicole Brisson, taste-tested the beef until they hit the 90-day “sweet spot,” which delivers uncompromising flavor while still keeping the tender texture of the beef.

CARNEVINO ITALIAN STEAKHOUSE
Carnevino Italian Steakhouse is one of the very few restaurants in the world committed to the dry age process. So much so, their team consistently pushes the limits to create flavors and textures that can only be found in their Las Vegas restaurant. For example, the industry standard for dry aging is 30 to 40 days, but at Carnevino the standard dry-aging time is 90 to 120 days. The result? An incredible robust flavor with a unique texture.

Carnevino has an off-site dry aging facility in Las Vegas that houses up to $250,000 worth of meat at any given time. This enables the team to control to process from start to finish for the 3,000 to 4,000 pounds of beef that are delivered every week.

At OTTO Enoteca e Pizzeria, swap the large steak dinner for a charcuterie platter for lunch, filled with in-house cured meats. One of the only certified restaurants in Las Vegas to dry cure and serve meats, OTTO Enoteca e Pizzeria cures all of their meats, such as salumi and coppa ham, in the restaurant (with the exception of Prosciutto di Parma, sourced straight from Italy.) While curing, the meats are stored in a small curing room in the restaurant’s kitchen.

The dry-aged ribeye for two at B&B Ristorante is not to be missed. The ribeye is a flavorful cut of beef that goes well with a selection from the 5,500-bottle Italian wine collection at the intimate restaurant. In addition to the ribeye, B&B Ristorante also has a charcuterie plate as an appetizer, filled with house-cured salumi.

Mario Batali and Joe Bastianich’s B&B Burger and Beer at The Venetian has launched its spring burger, the lamb burger. Served on a potato bun, this all-new burger features lamb topped with spicy goat cheese, apricot mustard jam, and grilled frisée, priced at $17.
 
GRIMALDI’S PIZZERIA
In honor of spring, Grimaldi’s Pizzeria at The Palazzo will bring back its fan favorite, the barbecue chicken pizza. Featuring the perfect spin on all cherished BBQ must haves, this pizza presents a blend of Sweet Baby Ray’s barbecue sauce, chicken, smoky bacon, red onion, and is garnished with fresh cilantro. MARIO BATALI  FOUNDATION TO OPEN LAS VEGAS LIBRARY FOR AT-RISK CHILDREN
On Tuesday, March 29 at 9 a.m., Mario Batali will open the new Books for Kids Library at the Acelero Spring Valley Learning Center. This new library marks the third Southern Nevada library that has been funded by the Mario Batali Foundation and the 11th library nationwide.
 
The 161 square-foot library will hold nearly 1,000 books, many bilingual, offering a range of excellent reading material for children from 2 to 12 years old.
 
The opening dedication ceremony will take place at the Acelero Spring Valley Learning Center located at 2845 Mohawk Street, Las Vegas, Nevada 89146. The ceremony will include a ribbon cutting for the library, a book reading by Batali of Dr. Seuss’ Green Eggs and Ham, as well as remarks from the Mario Batali Foundation; Books for Kids; Variety Early Learning Center and a special thank you from the children.

OTTO to Combine Pizza and Mardi Gras for a Special One-Day-Only Tasso Ham Pizza 

 

Tomorrow, celebrate National Pizza Day at Las Vegas’ top-rated OTTO Enoteca e Pizzeria at The Venetian. OTTO is Mario Batali’s signature pizza restaurant and known for its ever-evolving menu of thin crust Roman-style pizzas, antipasti meats and cheeses, salads, pastas and main dishes.

OTTO will be celebrating National Pizza Day as only they can: by adding some festive Mardi Gras touches to their festive Tasso Ham Pizza ($21) that will only be available on Feb. 9. The pizza will feature house-cured and smoked Tasso ham, which is actually a cured and smoked pork shoulder (not ham) rubbed with a Cajun-style spice mixture containing cayenne, garlic and other spices. Pickled peppers and Buffalo mozzarella complete the pizza.

 

PIZZA FUN FACTS

Since opening in 2007, OTTO has sold close to 500,000 pizzas, averaging just more than a 1,000 a week.

 

One of their top sellers remains the Margherita with tomato, buffalo mozzarella and basil. This pizza is so popular, it sells out its two closest rivals, sausage-and-peppers and pepperoni, almost two to one. Although it is not one of the best-selling pizzas, one of the most unique dishes served at OTTO is the pancetta and goat cheese pizza, topped with caramelized onions and Cypress Grove cheese.

OTTO is also known for its seasonal pizzas. Utilizing only the freshest ingredients of the season, the current pizza for winter is its Brussels sprouts pizza. Along with mozzarella and prosciutto, the pizza is topped with preserved lemon rinds that provide an extra citrus kick to this scrumptious dish. The pizza will be available through the end of February.
Finally, OTTO stacks the pizza dough to proof for 24 hours, resting in boxes that are 3.5 inches tall. If all the dough for all 500,000 pizzas OTTO has sold since it opened was placed one dozen to the box to proof and then stacked, all of the boxes would be as tall as 10 ½ Stratosphere Towers or 12,152 feet high (200 feet taller than the top of Mt. Charleston from sea level).

Garnished with a lemon twist

OTTO Enoteca e Pizzeria‘s menu is diverse and decadent, showcasing pizzas that highlight the flavors of the season. This winter, OTTO’s seasonal offering is the Brussels Sprouts Pizza. Along with mozzarella and prosciutto cured in-house, the pizza is topped with preserved lemon rinds that provide an extra citrus kick to this scrumptious dish. The pizza will be available through the end of February.

B&B BURGER & BEER
Approximately every one to two months, Mario Batali’s signature burger joint, B&B Burger & Beer, will offer a regional burger that showcases flavors from Italian regions. The Tuscano Burger is served on a potato bun with wild boar, Pecorino mascarpone, red onion, fennel and arugula. To round out the experience, add a Moose Drool brown ale for a delicious pairing. Moose Drool’s nutty flavor with bitter and sweet overtones balance the spicy taste of the burger’s fennel. The Tuscano Burger is available through the end of February.
