Pancho’s Mexican Restaurant, located in Downtown Summerlin, will celebrate Mother’s Day with a champagne brunch and live music beginning at 10 a.m. on Sunday, May 12.
All mothers and guests who purchase an entrée will be treated to complimentary champagne during brunch hours from 10 a.m. to 3 p.m. Continuing the celebration, smooth jazz artist Grant Peacock will serenade guests inside Pancho’s festive cantina from 2 until 5 p.m.
Guests may enjoy signature brunch items including the Ultimate Breakfast Burrito, eggs scrambled with diced ham, roasted potatoes, onions, chiles and tomatoes, all stuffed in a flour tortilla and topped with Pancho’s special Spanish sauce, garnished with sour cream and sliced avocado; and Huevos Divorciados, two eggs cooked over medium separated by a beef enchilada, topped with a chunky poblano sauce, Cotija cheese, sliced avocado and sour cream, served with Mexican-style rice and beans.
