 Doberman Drawing Room is now open at 1025 S. 1st St. #100 in the Las Vegas Arts District, marking the newest addition to Corner Bar Management’s portfolio of design-forward hospitality concepts. A decade and a half after their first collaboration reshaped the city’s cocktail scene, award-winning mixologist Juyoung Kang and nightlife visionary Ryan Doherty have reunited to create their most ambitious project yet. Doberman is both a destination and a dialogue of taste, texture and storytelling.

To me, the best bars aren’t just places to drink, they’re worlds you step into,” said Doherty. “With Doberman, I wanted to create something transportive, something textured and timeless. Reuniting with Juyoung allowed us to build a space where design and cocktail craft speak the same language, where every detail, every sip, tells part of the story.”

Tucked inside a richly layered, 3,400-square-foot space in Downtown Las Vegas, Doberman is a modern-day salon where design and drinks converge. The moody cocktail bar is already turning heads with Kang’s globally inspired cocktail program and Doherty’s intricate, artifact-filled interiors evoking the private estate of an eccentric explorer.

Kang, who was at the helm of Collins at Fontainebleau when it was awarded one of the industry’s most coveted accolades as one of Esquire’s “Best Bars in America,” is a partner and architect of Doberman’s bar program. With over 20 years of leading the cocktail scene in Las Vegas and beyond, Kang’s return to Doherty’s fold is a full-circle moment, first gaining acclaim as the opening mixologist at Doherty’s original cocktail bar, The Laundry Room.

Doberman is the culmination of everything I’ve learned and loved about cocktail craft,” said Kang. “It’s about balance, story and intention. Ryan and I have always shared a love for creating immersive experiences, and this space lets us push that further, blending design, flavor and emotion in every detail.”

The menu at Doberman offers a passport of flavor, with standout signatures such as:

  • Tom Kha Fizz: Inspired by the classic Thai soup, this cream-charged Ramos Fizz incorporates gin, lime, tom yum spices, bird’s eye chili, cream, coconut and egg whites for a rich yet balanced sip.

  • Peter Pepper: A bold twist on a classic martini, this cocktail pairs lemongrass shochu with a choice of gin or vodka, accompanied by extra dry vermouth and drops of balsamic vinegar, and garnished with pepperoncini peppers, onion and olive. Inspired by the pepperoncini martini, Peter Pepper adds a tangy, slightly spicy edge to the extra-dry profile, making it the dirty martini’s more interesting, herbaceous cousin.

  • Coffee Cheesecake: A decadent take on the espresso martini, this mocktail layers malt and coffee with honey, rich espresso, parmesan, and a dusting of nutmeg for an unexpected yet indulgent finish. A nod to the ancient Greek origins of cheesecake, where cheese, wheat, and honey first came together, Coffee Cheesecake is both bold and creamy – dessert in a glass with a caffeinated kick.

  • Nine Countries, which honors the nine ancient provinces Japan was once divided and are now prefectures, combines smoky mezcal with honeydew cordial, yuzu juice and green yuzu-koshō, creating a sip that is fresh with melon flavors balanced with a touch of spice.

To complement the bar program, a refined selection of culinary offerings enhances the experience. Guests can begin with elevated cocktail snacks, such as warm tangerine and rosemary olives, Berber-spiced chicharrón, maple-candied pecans and ancient sea salt kettle chips, served with sour cream and caramelized onion dip. The option to elevate further is available by adding Royal Osetra caviar. Tinned fish pairings are served with warm sourdough, French butter and crushed purple chili, while a charcuterie library for two features curated meats, cheeses, house-made preserves and fresh fruits. For those seeking a sweeter option, brown butter and Swiss chocolate chip, as well as limoncello sugar cookies, round out the indulgence.

Beyond the drinks, guests are transported through Doherty’s moody, maximalist interiors, which include a curated maze of rooms, such as the Blue Room, Library Room, Great Hall, and Attic. Artifacts gathered from 15 years of his global travels mingle with surrealist works by British artist Ben Ashton, creating a surreal contrast to the bar’s Old World bones.
