Chef Roy Ellamar’s newest venture off-Strip is all about celebrating the finer things in life

 

Fine Company, a new American neighborhood restaurant by Chef Roy Ellamar, debuted quietly for breakfast and lunch service in Downtown Summerlin® on September 13, 2023.

 

“I set out on a mission to transport diners to a place where they can connect to their most comforting and delicious memories, as well as time spent with the people they care about.” Chef Ellamar explains, “… and I can’t think of anything finer than that.”

 

Born and raised in Hilo, Hawaii surrounded by a family of farmers, foragers, and fishermen, Chef Roy learned the lessons and importance of sourcing food responsibly and cooking with integrity from the very start.

 

After honing his craft in top-rated Chicago and Los Angeles kitchens, Chef Ellamar landed in Las Vegas at the prestigious L’Atelier de Joël Robuchon at MGM Grand Hotel & Casino. Two years later, he accepted an offer from Bellagio Resort to join Chef Martin Heierling and his team at Sensi as Chef de Cuisine. He was later promoted to Executive Chef and the space was reconceptualized as Harvest by Roy Ellamar. Harvest allowed Chef Roy’s true talents to shine through the menu packed with options for herbivores and carnivores alike while staying true to his commitment to always utilizing the freshest and finest ingredients.

 

Motivated by a desire to shift focus towards the local community, Chef left his post at Harvest in 2021 to travel and gather inspiration for his next venture, with the goal of bringing people together to share great food and fine company in the ‘burbs.

 

“The local restaurant and food scene has continued to evolve since I arrived in Las Vegas,” states Ellamar. “Talented chefs are moving away from the Strip and putting down roots in the community, and I couldn’t be prouder to be a part of this revolutionary time for our industry alongside my family and friends who’ve all worked so hard laying the groundwork.”

 

Fine Company serves an all-day menu for brunch and lunch, as well as a soon-to-be-launched dinner menu that pays homage to Chef Ellamar’s upbringing, his culinary travels, and his ultimate respect for the land, sea, and people from where his ingredients are sourced.

Brunch Plates are rooted in classics but updated with quality ingredients and technical execution. Items include chef’s signature Mom’s Banana Bread, which takes one of his literal childhood memories and adds a personal touch with cultured butter, local desert sage honey, and Jacobson’s sea salt; Brown Butter Pancakes with bourbon maple butter; and The Fine Acai Bowl with overnight chia oats, pitaya yogurt, toasted coconut, and fresh berries.

The Eggs & Friends section features traditional dishes with impeccably fresh ingredients and a heavy dose of love including the Breakfast Burger with chef’s custom beef grind, cheese, bacon, French toast bun, hash browns, maple syrup, and sunny egg; Sausage & Eggs with house made pork sausage and a sweet shoyu glaze; Steak & Eggs with barrel-cut ribeye and chimichurri; Smoked Salmon Avocado Toast with dill-cured Glory Bay salmon, crushed avocado, sourdough toast, and oven-dried cherry tomatoes; and Green Eggs, No Ham featuring an egg white scramble, spinach, broccoli, kale, mushroom, onion, and baby green salad.

Soups & Salads offer light, bright options with micro-seasonal changes and feature organic opulence from the Intuitive Forager Kerry Clasby’s California Family Farms. Guests can enjoy the Chopped Salad with gem lettuce, crunchy vegetables, avocado, Point Reyes blue cheese, and “not ranch” dressing; Tomato Gazpacho with Persian cucumber, creme fraiche, cilantro, and sourdough croutons; and The Fine Salad with boutique lettuces, market vegetables, tomato, lemon vinaigrette, sunflower seeds, and feta.

The Share Plates section boasts soon-to-be signature dishes such as Chef Roy’s Merguez Stuffed Dates with house-made lamb sausage, goat cheese, piquillo peppers, and parsley pesto; Salt & Pepper Shrimp with white gulf shrimp, fennel salad, and Szechuan, Calabrian and jalapeno chilies tempered with aromatics and paired with shaved fennel and tangerines; Whipped Feta & Olives with Valbreso feta, kataifi, olive-raisin caponata, and grilled sourdough; and a gorgeous Salmon Crudo featuring Glory Bay salmon, avocado, radish salad, chili oil, and purple ponzu.

Entrees round out the lunch offerings with a Porchetta Sandwich on potato focaccia with pumpkin seed pesto, giardiniera, pickled red onion, and arugula; Fileto Fish with shatter-battered halibut, cherry pepper remoulade, brioche bun, and crinkle fries; the Le Roy Burger is a custom grind of brisket, chuck and short rib with new school American cheese and top secret special sauce; Crispy Skin Salmon with charred broccolini, fingerling potatoes, and curry-scented buttermilk; and Steak Frites served with harissa chimichurri and Kennebec fries.

Chef Ellamar’s love for cooking is truly all in the family, as his son Tayden is following in his footsteps as an accomplished chef in some of Las Vegas’s finest restaurants on and off the Strip. That’s reflected in the grown-up and kid-approved Little Bird Kid’s Menu, boasting organic Jidori Chicken Tendies, fresh Alaskan Halibut Fishy Sticks, and a new school American Grilled Cheesy on brioche bread, all served with crudite and crinkle fries.

The current lineup of desserts features a Mango Panna Cotta with coconut, lime, and cardamom; a Chocolate Hazelnut Torte with chocolate ganache, cinnamon caramel, and hazelnut praline; and a nostalgic Pineapple Soft Serve Sundae with Greek yogurt soft serve and pineapple upside down cake flavors.

Fine Company’s beverage program is led by acclaimed Las Vegas bartender Camille Razo and is rooted in the same philosophy found throughout the chef-driven fare. Signature cocktails, Bloody Marys, spritzes, and mocktails – with a non-alcoholic section dubbed “Fine AF” – round out the seasonal selections. The wine list is concise and thoughtfully curated by General Manager, Jamie Greco, to be approachable, yet interesting, along with local brews and a selection of “patio pounders” – hard seltzers and kombucha to enjoy al fresco when the weather’s fine.

 

“Fine Time” is a reimagined happy hour that is available from 2-5 p.m. Wednesdays through Sundays. The ever-changing Fine Time menu features seasonal specials to highlight specific growers, producers, and other food and beverage industry friends. It can be enjoyed within the dining room or outdoors on Fine Company’s tree-lined patio.

 

Since October is Filipino American History Month, Fine Time will showcase Filipino-inspired cocktails curated by Lead Bartender, Camille Razo, and special small plates by Chef Roy Ellamar, drawing inspiration from their shared Filipino heritage and celebrating Pinoy pride:

Fine Company’s warm, wood-clad space is full of natural light and punctuated with colors and textures inspired by the desert landscape. The “California chic”-casual feel of the room reflects the menu and is an example of simplistic opulence and style.

 

“Choosing the birds of paradise plants added cheeriness and a more whimsical shape to create a beautiful focal feature,” describes Hayley Hunter, who collaborated with Chef Roy on the restaurant’s interior design. “Pulling in all-natural elements was important. The wood, concrete, natural leathered quartzite, and lush greenery make the space feel organically inviting both inside and out, so we avoided any elements that seemed forced or contrived.”

 

The sconces that adorn the interior dining room walls emulate a tree branch, adding instant warmth with the brushed brass finish. The collection of cookbooks, cutting boards, ceramics, and artwork found within the space is from Chef Roy’s own personal bird’s nest of meaningful objects, further enhancing the comfort guests feel when entering the dining room as if it were a friend or family member’s home.

 

The 50-seat patio at the intersection of Rosemary Park Drive and Festival Plaza Drive in Downtown Summerlin remains a work in progress from a design perspective, yet already proved itself to be the perfect spot for afternoon people-watching and unwinding during Fine Time – or any time – with great food and Fine Company.
