Wynn Las Vegas is proud to announce that Executive Chef Joshua Smith and Resort Mixologist Mariena Mercer Boarini will be at the helm at Delilah at Wynn Las Vegas, where they are getting ready to unveil a captivating food & beverage program.


Delilah at Wynn Las Vegas is a modern-day supper club offering a beautiful and lively social dining atmosphere, opening July 14, 2021 in partnership with acclaimed global hospitality firm The h.wood Group, owned by John Terzian and Brian Toll. Located in the exclusive Tower Suites enclave, Delilah at Wynn Las Vegas creates an alluring hotspot that merges exquisite service and exceptional food in an immersive environment.

Together, Smith and Mercer Boarini have pushed boundaries to craft a highly visual, irresistible menu designed to tickle the senses, with a mixture of modern and classic American cuisine, accented by a collection of whimsical cocktails.


“To elevate the experience, we have created all-new signature recipes that will be offered exclusively at Delilah at Wynn Las Vegas, including a fine selection of steaks and seafood, breathtaking tableside presentations and signature dishes from the flagship supper club in Los Angeles.”

In addition to a wide selection of premium steaks and seafood, the new menu includes highlights such as the Wagyu Beef Wellington featuring 12 oz. filet mignon, herbed crepe and porcini mushroom duxelles madeira wine jus; Chef Joshua’s inventive take on a Chicken TV Dinner featuring Bobo Farms chicken, peas n’ carrots, pomme puree and vin jaune gravy; Smoked Salmon & Caviar Latke featuring chive mascarpone, acme salmon, Russian Osetra caviar and garnitures; Delilah ‘Fish & Chips’ featuring potato-crusted dover sole, pommes soufflé, malt vinegar beurre blanc and classic tartar sauce; Surf & Turf featuring glazed short rib, day boat scallops, wild mushrooms, sunchoke fondant and shallot jus; and Strawberry Shortcake Baked Alaska, a beautifully flambéed dessert that reigns supreme on the new menu.
