Lago at Bellagio to Collaborate With Chad Colby on Menu Refresh
Renowned Los Angeles chef to consult on lakeside restaurant’s culinary program
James Beard-nominated chef Chad Colby will unite with the award-winning Bellagio team to curate a new, elevated menu for the resort’s beloved restaurant, Lago. As a chef consultant, Colby will help develop an ingredient-driven menu that delivers simple yet craveable cuisine to Bellagio’s valued guests. His extensive culinary expertise will shine through in every dish, as he artfully infuses his personal touch into the restaurant’s new approach to contemporary Italian cuisine. The menu will evolve over the summer months and is expected to debut in September.
“Bellagio has an incredible food and beverage program, and I am honored to support the team in reimagining Lago’s Italian dishes, cooking styles and techniques to offer guests a new dining experience,” said Colby. “I already have so many ideas and am excited to jump in and see what magic we can create together.”
Heralded as a “culinary Quentin Tarantino,” Los Angeles native Chad Colby received his formal training working in some of Los Angeles’s landmark restaurants, including Campanile and Mozza, and through several working trips in Italy. As Executive Chef of chi SPACCA, which he opened with legendary chef Nancy Silverton, he was nominated as Best Chef West by the James Beard Foundation. Chad now owns and operates the highly acclaimed Italian restaurant, Antico Nuovo, where time-honored cooking techniques are featured with inspiration from Italy’s traditional farmhouse cuisine. Antico Nuovo was selected by The New York Times as one of the “25 Best Restaurants in Los Angeles Right Now” and is ranked by the Los Angeles Times and Infatuation as the “Best Italian” restaurant in Los Angeles.
