R Steak & Seafood at the Riviera Hotel & Casino Review was honored to partake in the new dinner menu put together by Riviera Casino & Hotels new chef, Matthew Bosek. R Steak & Seafood, has added some mouthwatering items to its daily dinner menu. The newest entrée selections include a 16oz Dry-aged New York Steak, 20oz Dry-aged Ribeye, Smoked Duck Breast, Alaskan King Crab Legs, larger Filet Mignon options, a Cedar Plank Salmon, and most notably, a 45oz Tomahawk Steak for two. The appetizer menu now includes a New York Steak & Fig Flatbread, served with Stilton cheese, as well as a homemade Seafood Chowder and Pear & Endive Salad.

We found our long time waiter friend Bobby and chartered the culinary flight to deliciousness.

The Pear and Endive Salad was a new spin on the original “R” salad and it was great. I really liked the original salad but the new one is even better. It’s unlike any other salad offered here in town.

We like a “cowboy” steak so you know we had to try the 45 ounce Tomahawk Steak for two and it was fabulous. We ordered it early because it takes a while to cook 1/5th of a cow, even to medium done-ness. It was certainly worth the wait as it was cooked to perfection, seasoned exquisitely, melt in your mouth tender and almost (yes almost) got the best of me. The new challenge – Take your friend, take you appetite and conquer “The Tomahawk” at R Steak and Seafood.

Also on our order selection was the new 20oz Dry-aged Ribeye. We wanted to be sure to try the new dry rub and were glad we did. Chef Matthew took an already excellent cut to the next level with awesome blend of seasonings and preparation. One of the best ribeyes ever.

We finished with the traditional “the swan” dessert and a strawberry waffle shortcake and espressos. Overall a great evening with excellent food and atmosphere. We got a chance to chat briefly with busy Chef Matthew. Matthew has got to be one of the younger chefs we’ve met and that’s fine with us. He is as happy as we are with the new menu changes and said more changes are due in the near future. I know we can’t wait to see what happens. Stay tuned.

Chef Matthew developed the menu to offer a larger steak selection. Bosek most recently served as Culinary Leader for Google in Kirkland, Wash., where he worked side-by-side with James Beard Award winner, Chef Jason Wilson.
