Celebrate Easter at South Point Hotel, Casino & Spa on Sunday, March 31 with delicious pre-fixe menus served all day Baja Miguel’s, Coronado Café, Don Vito’s, Garden Buffet, Primarily Prime Rib and Silverado Steakhouse. Baja Miguel’s: available from 11 a.m. – 9 p.m., $27.95 per person.

  • First course: Baja Salad Bowl, baby greens with teardrop tomatoes, black olives, diced jicama and salsa cream dressing or Chicken Tortilla Soup, Shrimp and Mango Salad, Baja shrimp folded with mangos in a lime and honey cream served in a crisp tortilla cup
  • Second course: Sablefish Margarita, Baja seasoned and pan seared fillet of sablefish coated in tequila and lime cream with pomegranate seeds or Pollo Relleno California, sauteed with Jalapeño bacon wrapped chicken breast with poblano peppers and Monterey jack cheese over tomatillo sauced with sliced avocado and sour cream or Chipotle and Honey Glazed Ham, fire roasted with sweet and spicy glaze served with Elote, green beans and a corn muffin
  • Third course: Pastel de Zanahoria, traditional carrot cake with sweet cream or Baja’s Banana Foster, served with vanilla bean ice cream and toasted almonds or tea or coffee

Coronado Café: available from 11 a.m. to 10 p.m. for $17.95 per person.

  • First course: Cream of Chicken Soup or Garden Fresh Salad Bowl, seasonal lettuce, teardrop tomatoes, diced cucumber, shredded carrots, red wine vinaigrette and toasted croutons
  • Second course: Roast Leg of Spring Lamb with lamb jus and apple mint jelly or Poached Stuffed Salmon Fillet, filled with bay shrimp and crabmeat topped with cream sauce. Choice of roast or Yukon Gold mashed potatoes and green beans
  • Third course: Lemon Meringue Pie with fresh raspberries, Homestyle Carrot Cake or tea or coffee

Don Vito’s: available from 4 p.m. —10 p.m. for $45 per person.

  • First Course: Oven baked Seafood Shells, filled with shrimp, scallop ragout and alfredo cream glaze or Chicken Cacciatore Soup with toasted crostini or Spring Time Caprese Salad, mini mozzarella and cherry tomatoes tossed in a mix of spring lettuce with basil vinaigrette and a crisp crostini
  • Second course: Branzino a la Niçoise, pan seared fillets served over Mediterranean pomodoro sauce with diced zucchini, green olives and capers, served with a side of farfalle pasta and broccolini or Grilled Tuscany Chicken, free range chicken breast marinated with rosemary and garlic, grilled and served with mushroom caps, artichoke hearts with sundried tomato pesto with broccolini and garlic whipped potatoes or Pappardelle with Braised Lamb Ragu and Wild Mushrooms, flavorful chianti braised lamb folded with green peas and tomatoes in pappardelle pasta
