This weekend The Venetian and The Palazzo Las Vegas, along with  celebrated chefs Thomas Keller, Daniel Boulud and an all-star team of culinary personalities,  hosted Ultimo-A Weekend of Excellence.  Now in its third year, Ultimo took luxury to new heights with four uniquely themed experiences and exceptional feasts celebrating Earth, Water, Air and Fire.

The extravagant celebration kicked off Thursday, Dec. 17 with the distinguished Bocuse d’Or Team USA competition, held in partnership with ment’or BKB Foundation, a nonprofit organization founded by Chefs Thomas Keller, Daniel Boulud, and Jérôme Bocuse. Bocuse d’Or is the world’s most prestigious culinary competition for young talented chefs. Four teams went head-to-head Thursday in The Venetian Ballroom. After 4 hours and 35 minutes, Chef Mathew Peters and commis Harrison Turone from New York restaurant, Per Se, New York, NY were announced the winners and will go on to represent the United States at the 2017 Bocuse d’Or biennial competition in Lyon, France.

 

The esteemed Team USA event was followed by an impressive dinner prepared by Chefs Daniel Boulud, Jérôme Bocuse, Josiah Citrin and Diane Yang, where the theme Earth was showcased through wild game, Urbani truffles and French tradition. Guests savored black truffle soup, Wolfe Ranch quail (foie gras, perigord truffles), and Millbrook venison (endives, chestnut, molasses-date, rose hips), paired with lovely champagne and wines.

 

On Friday, Dec. 18, the evening welcomed the return of the spectacular Grand Banquet in the iconic Grand Colonnade. Guests dined in the spirit of Air on one spectacular single table made of glass with big beautiful white accent pieces and chandeliers underneath dangling over a pristine white carpet. Using custom effects, artificial “clouds” were blown into the space throughout the night making the evening more magical. Chefs Thomas Keller, Philip Tessier, Shaun Hergatt and Ming Tsai prepared a decadent European-inspired dinner that was complemented with opulent champagnes and wines from Krug Champagne, DAOU Vineyards & Winery and Memento Mori Wines.

 

“The Ultimo dinner is a menu I have been thinking about doing for years,” said Chef Keller, during the event. “It’s a very special dinner and tonight with all of these wonderful lovely people we are going to eat some wonderful food and drink some wonderful wine.”

 

Songstress Christina Grimmie (finalist of NBC’s The Voice) sat at the piano and entertained guests throughout the evening, while the celebrity chefs mixed and mingled. Miss Universe 2014 Paulina Vega Dieppa also made a special appearance.

 

On Saturday afternoon, Ultimo introduced the magnificent Floating Lunch in Grand Canal Shoppes, to celebrate Water.  A table was specially created and built over the water of the famous Grand Canal. Gondoliers sang and served Prosecco from their boats while guests dined on dishes from Chef Richard Rosendale including charred tuna (edible vegetable “garden,” rye soil, avocado silk), king crab salad (caviar, green apple gelee, nasturtium), and roasted halibut (saffron mousse, herb persillade, black garlic emulsion, white asparagus veloute). This intimate experience made guests feel like they were transported straight to the Mediterranean.

 

Ultimo continued Saturday night and heated up with the theme of Fire. A cocktail reception outdoors on Doge’s Palace plaza kicked the night off. Guests sipped on Champagne as they watched big pieces of steak, whole fish, and a traditional full-size pig roast on an open flame. The party moved inside to the private Paiza Club for a dinner masterfully prepared by Olivier Dubreuil, executive chef of The Venetian and The Palazzo, and Dario Cecchini the famed Chianti “Butcher of Panzano.” Sizzling dishes included wood-grilled wild salmon (fire-roasted poblano pepper sauce, crispy onion straws), spit-roasted capon (wild rice cake, fire-roasted red onion, cranberry, lemongrass gel), whole roasted hog “En Choucroute”, wood-grilled giant porterhouse (egg yolk ravioli, shaved white truffles) and wood-grilled USDA prime ribeye (aged cheddar, hash browns, perigord sauce), paired with wines selected by Southern Wine & Spirits.

 

The exceptional weekend wrapped on Sunday with a Truffle Farewell at Emeril Lagasse’s award-winning Delmonico Steakhouse. The menu featured Urbani truffles, organic farm-fresh eggs, premium beef, house-cured salmon and Krug Champagne, marking a decadent end to an extraordinary weekend of Ultimo experiences.

For the third year in a row, Ultimo will celebrate the romance of Italy with lavish feasts and exceptional experiences from an A-team of award-winning chefs as it unfolds around The Venetian and The Palazzo Las Vegas.   Renowned culinary luminaries participating in the weekend will include Chefs Jérôme Bocuse, Daniel Boulud, Josiah Citrin, Shaun Hergatt, Gavin Kaysen, Thomas Keller, James Kent, Roland Passot, Philip Tessier, Ming Tsai, Richard Rosendale, and Dario Cecchini, the famed Chianti “Butcher of Panzano.”

This exceptional winter weekend will feature the return of The Venetian’s Grand Banquet, a landmark collaboration between several of the world’s best culinarians including Chefs Keller, Tessier, Hergatt and Tsai.

The Grand Banquet, originally introduced in 2013, has become a signature Las Vegas culinary event, with its sumptuous setting on a spectacular table that spans the iconic Grand Colonnade of The Venetian. In its first year, Chef Mario Batali called it “the grandest meal ever served in Las Vegas.”

This year, Ultimo will kick off with a noteworthy Bocuse d’Or Team USA competition event, held in partnership with ment’or BKB Foundation, a nonprofit organization, founded by Chefs Daniel Boulud, Thomas Keller and Jérôme Bocuse, that aims to inspire excellence in young culinary professionals and preserve the traditions and quality of classic cuisine in America.  Bocuse d’Or is the world’s most prestigious culinary competition for young talented chefs.  At the event, one team will be chosen to represent the United States at the 2017 Bocuse d’Or biennial competition in Lyon, France.  This opportunity is especially noteworthy following the 2015 Silver medal showing of Team USA at the event.

A Krug Champagne, Urbani Truffles, and caviar reception will lead into a dreamy meal that will indeed be the most heavenly affair. This 50-person special event will transport guests straight to the Mediterranean onto a slightly submerged clear acrylic platform “floating” on the canal.

The Venetian® Las Vegas will host the city’s culinary event of the year, UltimoA Weekend of Excellence, Dec. 5-7.  Featuring lavish feasts of the finest food and extraordinary experiences from an A-team of luxury brands, Ultimo will celebrate the romance of Italy and the magic of its cuisine, as it unfolds around The Venetian and The Palazzo® Las Vegas.
This special winter weekend of luxury experiences will include the return of the Venetian’s Grand Banquet, a landmark collaboration between several of the world’s best culinary celebrities, including Chefs Daniel Boulud, Emeril Lagasse, and Buddy “Cake Boss” Valastro.

 

Introduced in 2013, the Grand Banquet spans the iconic Grand Colonnade of The Venetian on a spectacular single table that seats nearly 200 people.  This sumptuous setting – with its meal fit for royalty – was called “the grandest meal ever served in Las Vegas” by last year’s host Chef Mario Batali.

 

The event is presented in conjunction with Robb Report magazine and Southern Wine and Spirits of Nevada, and will benefit the Cleveland Clinic Lou Ruvo Center for Brain Health.

The Arrival
On Friday, guests who fly into McCarran International Airport (or any of the private options in Las Vegas) will be driven to The Venetian in a Bentley or Rolls-Royce, or one of the resort’s limousines. Check-in will be provided at the exclusive VIP lounge, and each guest will be escorted to a luxurious suite, including a choice of premium suites that are normally reserved for “high-roller” casino guests.

One would have to travel to Europe to find a meal with a similar romantic setting as the weekend’s main event: The Grand Banquet. In fact, the banquet will be served within the stunning and iconic Grand Colonnade, amid authentic frescoes hand painted by Italian artists, 25-foot columns of Botticino marble, and floors inspired by the Church of Santa Maria del Rosario. Spanning the Grand Colonnade, a spectacular single table will seat nearly 200 people, a breathtaking setting that follows a European trend to host grand community meals in the most impressive public spaces.

To ensure that the meal matches the superb setting, the weekend’s hosts—Chefs Boulud, Lagasse, and Valastro—will reign over the food presentations, leaving time to mingle with guests throughout the dining experience. The Venetian is planning a super-exclusive fashion extravaganza just for Ultimo’s most fashion-minded guests, put together by one of our favorite brands. This intimate event will be a once-in-a-lifetime peek into the evolving role of Las Vegas in high fashion, including insider access to a current collection and how pieces are chosen for the experience. The Las Vegas Strip, with its unique global clientele, continues to grow as a top shopping destination in part by offering many one-of-a-kind pieces not sold anywhere else—this fascinating event is a must for anyone with a love of fashion.

NEED FOR SPEED
Ultimo’s luxury-car partners are putting together a race car experience of a lifetime. Together with Exotics Racing, guests can learn to drive those cars the way they’re made to be driven— as fast as possible, around a racetrack. The experience includes an opportunity to hit the Las Vegas Motor Speedway in one of these special cars, with a pro driver in the passenger seat. The 1.2-mile racetrack was designed by a stunt driver who worked with Matt Damon in The Bourne Identity, and it features seven thrilling turns and a 1,800-foot straightaway.

BAKING WITH THE BOSS
This unforgettable culinary weekend wouldn’t be complete without at least some guests hitting the kitchen. Buddy “Cake Boss” Valastro, a fourth-generation baker who inherited the nickname from his father, knows his way around a sweet tooth. Guests will learn from the best during this private baking class, where you’ll participate in baking to-die-for cakes worthy of bakeries of the highest level.

 

The Weekend Continues
A memorable Dine-Around in the Palazzo Waterfall Atrium & Gardens will give guests a taste of The Venetian and The Palazzo’s hot spots Carnevino (by Mario Batali), Buddy V’s Ristorante (by Buddy Valastro), CUT Steakhouse (by Wolfgang Puck), Bouchon (by Thomas Keller), Delmonico Steakhouse (by Emeril Lagasse), and db Brasserie (by Daniel Boulud).
