Throwback Menu Specials Offered May 3-12

 Delmonico Steakhouse will commemorate the 20th anniversary of its opening at The Venetian with menu specials from May 3-12 and other surprises throughout the year.

The anniversary specials will highlight some of the restaurant’s most beloved dishes throughout the years, including house cured tasso and smoked mushroom cream over angel hair pasta with fresh chives; crab mirliton stuffed Gulf oysters with bearnaise sauce; BBQ salmon with andouille potato hash homemade Worcestershire sauce and fried onion crust; bananas foster ice cream pie; and lemon icebox pie with strawberry coulis.

Delmonico Steakhouse has also designed a special commemorative logo which will appear on menus throughout the rest of the year, as well as on the lapels of all service staff.

“I opened Delmonico Steakhouse 20 years ago with the hopes of sharing the flavors of New Orleans with Las Vegas and to celebrate the art of dining,” said Chef Emeril Lagasse. “I’m grateful for the ongoing support of our customers, the Las Vegas community and The Venetian, who share and support these intentions. Delmonico Steakhouse is Chef Emeril Lagasse’s take on the classic American steakhouse with Creole influences. The restaurant brings back a time when cocktail hour was not to be missed and dinner with friends was a celebration. THE VENETIAN AND THE PALAZZO EXTEND LAS VEGAS RESTAURANT WEEK TO HELP FIGHT HUNGER

 

Three Square Food Bank presents Las Vegas Restaurant Week, a two-week celebration of dining out to help end hunger in Southern Nevada. For the second year in a row, The Venetian and The Palazzo will add a third week to the schedule with pre fixe menus some of the resort’s best restaurants. The extra week is a great way for guests to visit the award-winning restaurants they have always wanted to try at affordable prices with a portion of proceeds going to Three Square Food Bank. One meal purchased could provide up to 18 meals to those in need.
 
In addition The Venetian and The Palazzo have added two cocktail hotspots to the mix. For the first time, both Rosina and The Dorsey will donate a portion of proceeds from a special cocktail list to help feed the community.

The renowned chef acquired DJ skills from his friend, San Francisco-based DJ “Frenchy le Freak,” who received cooking lessons from Keller in return. Emeril’s Las Vegas Restaurants Announce A Tribute To New Orleans’ Historic Delmonico Restaurant At Delmonico Steakhouse

 

Chef Emeril Lagasse’s Las Vegas chefs are joining forces for a third collaborative dinner in their “Tour de Emeril” series, this time a decidedly lavish affair at Delmonico Steakhouse in the Venetian Hotel & Casino. Dubbed “A Return To Delmonico,” this truly exceptional event on Tuesday, Sept. 8 will see Chef Emeril’s four Las Vegas restaurants and their respective chefs de cuisine revisit and update some of the classic dishes that defined fine dining in New Orleans during the gilded age.

Chefs Ronnie Rainwater (Delmonico Steakhouse), Jean Paul Labadie (Emeril’s New Orleans Fish House), Scott Pajak (Lagasse’s Stadium), and James Richards (Table 10), along with Culinary Director Sean Roe have selected some of the most intriguing dishes from the history of New Orleans’ Delmonico Restaurant, dating to 1895.

“As much as we love the modern dining experience at Delmonico Steakhouse,” said Rainwater, “we thought it would be great to celebrate our legendary namesake and hearken back to an era when dining out was truly an event,” said Rainwater. “We invite all guests to dress for the occasion. Delmonico Steakhouse has released its Summer Trio menu, featuring Delmonico favorites and seasonal suggestions by Chef de Cuisine Ronnie Rainwater. Offering guests the opportunity to enjoy the Wine Spectator Grand Award-winning restaurant at a value-oriented prix fixe, this year’s menu includes five appetizer options, four entrees, and three in-house made desserts. Chef Emeril Lagasse’s Las Vegas chefs are joining forces and creating a unique collaborative dinner series called “Tour de Emeril.” Kicking off March 31 at Emeril’s New Orleans Fish House, this series celebrates the strengths and talents of Chef Emeril’s four Las Vegas restaurants and their respective chefs de cuisine.
At each of the one-time-only dinners, Chefs Ronnie Rainwater (Delmonico Steakhouse), Jean Paul Labadie (Emeril’s New Orleans Fish House), Scott Pajak (Lagasse’s Stadium) and James Richards (Table 10) will collaborate on a menu that celebrates their visions and inspirations, as well as those of Chef Emeril.

B&B RISTORANTE
On Friday, Nov. 18, Mario Batali’s Las Vegas chefs will select 10 recipes from Batali’s newest cookbook “Big American Cookbook” for a one-night-only dining event at B&B Ristorante at The Venetian. The “Big American Cookbook” extravaganza will feature a multi-course dinner for just 40 guests. The dinner will begin at 7 p.m. with Batali’s chefs explaining the inspiration behind each of the dishes along with special tips and techniques. Guests will also receive a signed copy of the cookbook and a special take-home surprise. This dinner is the only such dinner being held to showcase Batali’s newest collection of recipes.
The dinner will feature the following dishes with descriptions including anecdotes from the book:
Passed canapés
  • Oyster BBQ: In the book, Batali notes “oysters will tell you when they’re ready” to be taken off of the grill to pop open. For this hors d’oeuvre, the oysters will be served with lemon, butter and chipotle Tabasco.
  • Deviled Eggs: This “official” food of picnics and potlucks is one that Batali likes on the spicy side with a squirt of Sriracha on half of these “just because.”
  • Clam Rolls: These rolls are served on hot dog buns that are toasted on the griddle with butter and streaks of tartar sauce with fried whole-belly steamer clams piled high.
Table bread
  • Corn Muffins: These muffins celebrate the sweetness of the corn, enhanced by sugar and honey, for a bread that is delectable as an accompaniment to nearly any dish.
First course (plated)
  • Pierogies: The noble pierogi with its cheesy mashed potatoes stuffed in pasta dough is a favorite in Cleveland and Pittsburgh. 

Second course (plated)

  • Fisherman’s Wharf Cioppino: This San Francisco-style fish stew features clams, Dungeness crab, fish fillets and shrimp and is served in wide, shallow bowls to ensure each bowl has some of each kind of seafood.
Third course (family-style)
  • Bison Rib Eyes: Coffee is vital to this dish, bringing out a smoky, rich bitterness to the crust and transforming the meat into “something almost brooding in its complexity.”
  • Scalloped Potatoes: This dish features russet potatoes dotted with butter, drizzled with half-and-half then dusted with nutmeg, salt and pepper and baked until the inside is tender and the outside is golden brown.
  • Texas Caviar: In the ’50s, Helen Corbitt moved from New York to Dallas to take a job as a chef at Neiman Marcus. She was asked to put together an all-Texas menu. With that, she created this black-eyed pea dish as a way to cover up the flavor of actual caviar.
  • Nopales Salad: The nopal is a Mexican cactus known for its pads and is a popular ingredient in Southwestern cooking. The nopales leaves feature a unique flavor that simultaneously evokes green beans, bell pepper and okra. The salad also includes onions, tomatoes and finely chopped jalapeños.
Dessert
  • Boston Cream Pie: This Massachusetts classic’s name originated in the 1800s when it was served at the Parker House Hotel. Known for not being a pie but a cake, this dessert would gain so much popularity that it would become the state’s official dessert.
  • Grape-Nuts Ice Cream: In the New England seaboard (especially Maine) and parts of the Caribbean, Grape-Nuts is a popular mix-in to desserts. With its crunch, it makes this ice cream taste as though the cone is built right in.

Football Viewing Parties
LAVO Casino & Sports Lounge is open every Saturday for college football and every Sunday for NFL with doors opening at 9:30 a.m. Guests can watch the games on one of LAVO’s 17-big screen TVs and listen to any of the matches using the hearTV app, which allows users to stream live audio with their smartphones. Party Brunch
Now in its sixth season, Party Brunch will take over LAVO every Saturday from 2 p.m. – 6 p.m. throughout the fall and winter months. The signature event blends an indulgent food menu and an expansive selection of Champagne, with a variety of large format bottles, and music to keep the party going by a roster of resident DJs. LAS VEGAS (Aug. 25, 2016) – Emeril’s New Orleans Fish House announces Jean Paul Labadie as the new chef de cuisine. Chef Labadie brings more than 20 years of culinary experience to this position and rejoins the Emeril’s New Orleans Fish House team after initially working at the restaurant in 1996.

As chef de cuisine, Labadie will be directly involved with managing the kitchen, hiring new culinary staff and introducing new entree items to the menu.

“I am honored to be back working for Chef Emeril Lagasse in one of the greatest restaurants on the Las Vegas Strip,” said Labadie. “I look forward to bringing Emeril’s New Orleans hospitality and the best cuisine to our guests.”

Labadie studied hotel and restaurant management at Iowa State University, eventually transferring to and graduating from Western Culinary Institute in Portland, Ore. In 1996, Labadie began working under acclaimed chef and Food Network personality, Emeril Lagasse, as a cook for his self-titled restaurant in New Orleans, La. From there he moved to Las Vegas where he was named sous chef at Emeril’s New Orleans Fish House in the MGM Grand. Soon after being promoted to chef de cuisine, he was tapped to open Lagasse’s newest venture Table 10 in The Palazzo Resort & Casino. Most recently he was the chef de cuisine at Searsucker at Caesars Palace.

Labadie was also featured on and won “Extreme Chef” on Food Network and served as a judge on “Throwdown with Bobby Flay.”

“We are thrilled to welcome Chef Jean Paul back to Emeril’s Fish House,” said Mike Olsen, director of operations for Emeril Lagasse’s Las Vegas restaurants. “His experience and history with Emeril’s restaurants makes him a great addition to our culinary team.”

On Thursday evening, May 26, the picturesque Palazzo pool deck was the site of the city’s most renowned chefs for The Las Vegas Epicurean Affair. The delicious soiree, presented by the Nevada Restaurant Association (NvRA), featured nearly 80 restaurants, nightclubs and beverage purveyors.


Recognized as one of the premier tasting events in Las Vegas, more than 2,300 guests mingled under the stars and enjoyed tastings of dishes and specialty cocktails from the illustrious restaurants of The Venetian and The Palazzo, including AquaKnox, B&B Ristorante, B&B Burger & Beer, Carlo’s Bakery, Carnevino Italian Steakhouse, db Brasserie, Delmonico Steakhouse, Hong Kong Café, Lagasse’s Stadium, Lavo Italian Restaurant, Morels French Steakhouse & Bistro, OTTO Enoteca Pizzeria, Public House, SUSHISAMBA, Table 10, and Tao Asian Bistro; as well as other local celebrated restaurants both on and off the Strip,  including The Capital Grille, Carmine’s, Ferraro’s Italian Restaurant, Hash House a Go Go, Il Mulino, Katsuya, Origin India, Shake Shack, Texas de Brazil and Triple George.

CARNEVINO SPRING MENU ADDITIONS
This spring, Carnevino Italian Steakhouse at The Palazzo is taking the finest and freshest ingredients of the season to create an ever-changing menu for food lovers. The dishes will be available through the end of June.
New dishes for spring include:
 
Lamb sausage with sorrel, pickled garlic and pea tendrils
House made lamb sausage, mixed with a medley of spices, the sausage is topped with a vibrant salad consisting of sorrel, sorrel flowers and pea shoots and tossed in a zesty charred chive vinaigrette.
Mussels with peas and prosciutto
Tender mussels sautéed with savory prosciutto, peas and tomatoes in a flavorful brodo of white wine and tarragon and served with crispy fett’unta bread.
Duck egg with asparagus, radish and sorrel
This dish features a robust duck egg served over a spring salad with asparagus and sorrel. The salad is dressed in a seasonal citrus vinaigrette with an egg placed delicately over crispy fett’unta then topped with fresh-shaved horseradish and cracked black pepper.
Stracciatella with lonza, peas and mint
With creamy stracciatella cheese encircled with robust peas and savory lonza, the beans are also dressed in rustic rosso lambrusco red wine vinaigrette. The dish is finished with olive oil and black pepper.
Butter lettuce with spring vegetables and herb vinaigrette
Tender butter lettuce tossed with julienned carrots, radish, red onion and asparagus and served with freshly shaved ricotta salata and brilliant citrus vinaigrette.
Artichoke agnolotti with ricotta salata and lemon
This dish includes artichokes cooked in butter, onion and cream to achieve exquisite flavor and tenderness. After puréeing, the filling is handcrafted into agnolotti pasta then finished with lemon butter sauce. The last touch is a sprinkle of ricotta salata, lemon zest and crispy artichoke slices.
 
Dungeness crab crespelle with ricotta, lemon and basil
Start with creamy house made ricotta that is folded with hand-picked Dungeness crab, fresh herbs and asparagus that is then used as the filling inside the house made crespelle. Finally, the dish is garnished with fresh crab, baby cress, butter and more asparagus.
Pappardelle Verde with duck ragu
Wide ribbons of house made pappardelle noodles infused with stinging nettle, resulting in an unforgettable flavor and distinct color. The noodles are tossed with a ragu of braised duck, white wine, tomato and sage and topped with parmigiano reggiano.
Gnocchi with green garlic pesto and peas
Begin with petite house made potato dumplings. The gnocchi is tossed with a radiant green garlic pesto with peas and pea shoots then topped with dazzling borage flowers, which are edible and possess a taste reminiscent of cucumber.
Wild Gulf Shrimp with riso nero, smoked pork and peas
Ample pan seared shrimp, served over black Italian rice known as riso nero. These beautiful shrimp are sautéed in an assortment of peas, garlic, white wine and smoked pork belly. The final touch includes green onion slivers.
English Peas with spring onion and spicy pork
Blanched colorful English peas and served with spring onions, fresh lemon zest, butter and a touch of olive oil.
Fiddlehead Ferns with gremolata
Fiddleheads are blanched for tenderness, then topped with an aromatic gremolata of lemon zest, herbs and mouthwatering garlic.
Charred Ramps
A seasonal delight. The dish is kept elegantly simple by charring the ramps alla piastra, then adding olive oil, salt, pepper and a hint of lemon.
B&B BURGER & BEER NEW TUESDAY PATIO MENU
B&B Burger & Beer, with its 2,000-square-foot outdoor patio on the Grand Canal at The Venetian facing Las Vegas Boulevard, offers the ultimate al fresco dining experience. Now, it launches a new special Tuesday-only patio menu, exclusively for its outdoor guests.
The new menu comprises a collection of dishes and cocktails showcasing what B&B Burger & Beer does best: Mario Batali and his team’s playful interpretation of classic American fare with the dishes, the featured draft and can beers, each priced at $5. Dishes include:

The Venetian and The Palazzo Las Vegasare once again joining restaurants, bars, and food trucks across the globe for Negroni Week, June 6 – 12, in an effort to raise money for charity.
 
Proceeds from Negroni cocktail sales at Bellini Bar at The Venetian, Fusion Mixology Bar at The Palazzo and Laguna Champagne Bar at The Palazzo will benefit Safe Nest, Nevada’s largest and most comprehensive charity devoted solely to domestic violence issues.
Participating restaurants at The Venetian and The Palazzo include Delmonico, Table 10, Canaletto Ristorante and AquaKnox.  
 
Last year more than 3,500 venues around the world mixed their favorite Negronis and raised more than $320,000 for charitable causes.

Twelve restaurants at The Venetian and The Palazzo are participating in this year’s Las Vegas Restaurant Week, a celebration of dining out for a cause, June 6-17. The annual event helps raise money for Three Square Food Bank in its fight to end hunger in Southern Nevada.
 
Each restaurant will feature a special prix-fixe menu, with a portion of the proceeds helping to feed hungry people in the community – with each single donation supplying meals for as many as 18 people.

The Las Vegas Epicurean Affair returns to The Palazzo® on Thursday, May 26, 2016. The soiree, sponsored by the Nevada Restaurant Association (NvRA), features nearly 80 of the finest restaurants and nightclubs from around the city, along with a premier selection of libations.


Guests at the Las Vegas Epicurean Affair will spend the evening poolside at The Palazzo indulging in the best cuisine and cocktails offered from establishments both on and off The Strip.

“The Las Vegas Epicurean Affair is a must-attend event for anyone who wants the opportunity to taste food from the finest chefs, all for a great cause,” said Sebastien Silvestri, vice president of food and beverage for The Venetian and The Palazzo.

DELMONICO STEAKHOUSE AND THE GLENLIVET DISTILLERY PRESENT FOUR-COURSE WHISKY DINNER

 

Delmonico Steakhouse at The Venetian, home to one of the most exclusive and largest collections of brown spirits in the country, will partner with world-renowned Scottish whisky distillery The Glenlivet to create a four-course dinner paired with selections from Glenlivet’s single malt Scotch whisky collection, set to begin at 7 p.m. on Thursday, March 12.

Each course will be created by Delmonico’s Chef de Cuisine Ronnie Rainwater and paired with one of Glenlivet’s fine whiskies, meticulously selected by award-winning spirits expert Max Solano. The global brand ambassador for The Glenlivet distillery, Ian Logan, will serve as host of the evening, alongside Solano and Rainwater, and provide insight into The Glenlivet brand, history and the overall whisky industry.

 ‘Tis the Season for Holiday Revelry on the Vegas Strip

 

 

 Guests looking for yuletide revelry will find plenty of activity at The Venetian and The Palazzo Las Vegas this holiday season.

 

DECKING THE HALLS

The festive 65-foot-tall Venetian-inspired Christmas Tree is the centerpiece of Doge’s Palace plaza during the holidays.  The tree is lit with 50,000 programmable LED lights, which bring an ever-changing rainbow of color to the popular gathering spot.  The tree is adorned with more than 5,000 ornaments and weighs more than 12,000 lbs. It takes approximately 12 people nearly three days to install.

Inside, the Waterfall Atrium & Gardens at The Palazzo will be transformed into an elaborate show-stopping winter display, a creation of The Palazzo’s award-winning horticulture team.   The winter gardens will feature white poinsettias accented with champagne, gold and green.  Ice branches and 20-foot frosted birch, pine and glittering trees will complement the picturesque scene, including the waterfall and crystal “ice” ponds.  Majestic hand-crafted white and pearl peacock statues will overlook guests.

 

ON STAGE: ‘CHRISTMAS MOTOWN AND MORE’

Vocal sensations and Vegas headliners Human Nature will perform a brand new show Christmas, Motown and More” for twelve dates at The Venetian Las Vegas this holiday season, Dec. 12-24.

With an 11-piece band and special guest performances from Robin Meade, country music artist and host of HLN Network’s “Morning Express”, the acclaimed group will perform holiday hits from their new chart-topping Christmas album.

NEW YEAR’S EVE AT TAO

For New Year’s Eve, TAO will feature the 1920s speakeasy-themed Snoopadelic Cabaret, featuring entertainment icon Snoop Dogg.

The night includes a two-hour premium open bar from 9-11 pm, three hours of heavily passed hor d’oeuvres from 9-midnight and a champagne toast at midnight.  The downstairs restaurant will be transformed into the Boss Lady Lounge and will include an appearance by Snoop in addition to his DJ set and performance in the club space.  The ticket is also good for free entry into LAVO after midnight.

Event to Feature Incomparable Luxury Experiences; Landmark Collaboration Between Several of the World’s Best Culinary Celebrities

The Venetian® Las Vegas will host the city’s culinary event of the year, UltimoA Weekend of Excellence, Dec. 5-7.  Featuring lavish feasts of the finest food and extraordinary experiences from an A-team of luxury brands, Ultimo will celebrate the romance of Italy and the magic of its cuisine, as it unfolds around The Venetian and The Palazzo® Las Vegas.
This special winter weekend of luxury experiences will include the return of the Venetian’s Grand Banquet, a landmark collaboration between several of the world’s best culinary celebrities, including Chefs Daniel Boulud, Emeril Lagasse, and Buddy “Cake Boss” Valastro.

 

Introduced in 2013, the Grand Banquet spans the iconic Grand Colonnade of The Venetian on a spectacular single table that seats nearly 200 people.  This sumptuous setting – with its meal fit for royalty – was called “the grandest meal ever served in Las Vegas” by last year’s host Chef Mario Batali.

 

The event is presented in conjunction with Robb Report magazine and Southern Wine and Spirits of Nevada, and will benefit the Cleveland Clinic Lou Ruvo Center for Brain Health.

 

Ultimo – A Weekend of Excellence will feature an entire experience for guests:

 

The Arrival
On Friday, guests who fly into McCarran International Airport (or any of the private options in Las Vegas) will be driven to The Venetian in a Bentley or Rolls-Royce, or one of the resort’s limousines. Check-in will be provided at the exclusive VIP lounge, and each guest will be escorted to a luxurious suite, including a choice of premium suites that are normally reserved for “high-roller” casino guests.

The first social affair, the Welcome Reception at fine jewelry and watch boutique Bellusso, will feature caviar, champagne and a showing of sophisticated timepieces. The party will then move on to the Grand Colonnade for a dinner of a lifetime, The Grand Banquet.

The Grand Banquet
One would have to travel to Europe to find a meal with a similar romantic setting as the weekend’s main event: The Grand Banquet. In fact, the banquet will be served within the stunning and iconic Grand Colonnade, amid authentic frescoes hand painted by Italian artists, 25-foot columns of Botticino marble, and floors inspired by the Church of Santa Maria del Rosario. Spanning the Grand Colonnade, a spectacular single table will seat nearly 200 people, a breathtaking setting that follows a European trend to host grand community meals in the most impressive public spaces.

To ensure that the meal matches the superb setting, the weekend’s hosts—Chefs Boulud, Lagasse, and Valastro—will reign over the food presentations, leaving time to mingle with guests throughout the dining experience. To highlight each incredible course, winemakers from top wineries worldwide will be on hand to introduce their new- and old-world pours, including some new releases saved for this very night. Fabulous live entertainment and an auction for the Cleveland Clinic Lou Ruvo Center for Brain Health will bring this magical evening to a close.

The 1.2-mile racetrack was designed by a stunt driver who worked with Matt Damon in The Bourne Identity, and it features seven thrilling turns and a 1,800-foot straightaway.

This unforgettable culinary weekend wouldn’t be complete without at least some guests hitting the kitchen. Buddy “Cake Boss” Valastro, a fourth-generation baker who inherited the nickname from his father, knows his way around a sweet tooth. Delmonico Steakhouse is hosting a four course pairing dinner with Buffalo Trace Kentucky Straight Bourbon Whiskey on Thursday, Oct. 23. Chef de Cuisine Ronnie Rainwater and Buffalo Trace representative Kris Komstock will take guests through each course and explain the pairings. A reception will begin at 7 p.m. with hors d’oeuvres and a bourbon cocktail created by Mixologist Max Solano. Dinner will be served at 7:30 p.m. The event is $200 per person plus tax and 20 percent gratuity.

Delmonico Steakhouse is open for lunch daily from 11:30 a.m.-2 p.m. and dinner Sun.-Thurs. from 5-10 p.m., Fri.-Sat. from 5-10:30 p.m. The restaurant also has a Fall Cocktail Hour from 4:30-6 p.m. daily in the bar area with food and drink specials.
