Innovative Clean Limousine Fleet figures into Ultimate Automotive Experience

The grand prize is a trip for two to Las Vegas to enjoy the Ultimate Automotive Experience, highlighted by a two-night stay at ARIA in early December 2012, and an exotic car drive through Red Rock Canyon in Las Vegas.

Southern California hotspot Javier’s is now open at ARIA Resort & Casino. Javier’s regionally inspired cuisine and warm, intriguing design brings a spirit of Mexican grandeur to CityCenter while fulfilling a culinary niche for Las Vegas visitors.

“The dishes we present at Javier’s are derived from generations upon generations of my family’s recipes,” said Co-Founder Javier Sosa. “You will not find Mexican flavor like this anywhere else in Vegas.” A testament to Javier’s commitment to excellence and tradition, the restaurant’s nearly 200 employees underwent extensive training overseen by Sosa himself.

Brought to life by veteran designer Dodd Mitchell, Javier’s welcomes guests with a dramatic and sensuous ambiance, and Mexican-influenced decor. The design juxtaposes strong, masculine architecture with soft, feminine color schemes and fabrics, such as corset-style lacing on the leather booths. A lounge adorned in 4,000 metal decorative nail heads called clavos, accented by plush furnishings, also enhance the look and feel of the space. Each culturally inspired decoration and piece of furniture was custom-made for the ARIA location, including hand-crafted pottery from Guadalajara, Mexico; reclaimed vintage belts adorning window and doorframes; and opalescent abalone tiles covering the walls and ceiling in the private dining room.

Over the main bar, hundreds of rope strands form an intricate canopy, creating a magnificent centerpiece that spills from the ceiling to the floor like a beam of light. Guests can sip Javier’s signature margaritas at the vintage-roulette-inspired metal bar topped with African Ziricote wood. Embedded in the bar are four state-of-the-art cell phone-charging hubs.

The artistic anchor of the restaurant’s décor is the world’s largest piece of chainsaw art, spanning 25 feet and weighing 3,000 pounds, carved by celebrated artist J. Chester Armstrong. Conceived by Dodd Mitchell Design and visible from more than 200 feet away, the intricate work of art features five 5 x 10-foot panels illustrating the Mayan Creation myth blended with modern Mexican history. Hundreds of Día de los Muertos-inspired skeletons dance, mourn, laugh, weep and romance their way across the panels as guests discover hundreds of hidden elements on a five-part journey from the dark Tree of Death to redemption in the Tree of Life.

Visitors can enjoy superior service in a variety of stunning rooms within the 9,000-square-foot restaurant, which features a circular main bar, intimate lounge and two expansive dining rooms seating 280 guests. Javier’s also has an elaborate private dining room with seating for 20. This special space evokes an aura of Spanish royalty and mystery with shimmering tile walls, agave-leaf-inspired chandeliers and hand-carved wooden ceiling ornaments. Located inside Masa’s famed Japanese restaurant, barMASA, Tetsu will replace Shaboo, which closes April 28. The exclusive venue will feature four blackjack-style tables and two communal teppan grill tables seating 20 and 19, respectively. Highly skilled teppanyaki chefs will oversee the evening’s culinary entertainment – prepping, cooking and plating orders specific to each guest’s request. A produce table will serve as the room’s centerpiece, displaying the finest quality meats, seafood and vegetables, and will allow guests the opportunity to hand select the proteins of their entrée, specifying the exact cut, portion size and preparation style they desire.

Tetsu Executive Chef/Creator Masa Takayama said, “With a passion for the finest-sourced ingredients, I have always been intrigued by the sizzling vegetables, meat and seafood prepared on a teppan grill. The act of choosing your ingredients and interacting with the chef as he prepares them elevates the conventional dinner – creating memories – which is how food is meant to be experienced.”

The teppan grill menu allows guests to try a variety of offerings at smaller portions and reasonable prices such as the Toro Tartare with Caviar, Wagyu Beef Steak Tartare and Pacific Lobster Sashimi Ceviche in addition to Tataki selections. Tataki, meaning to “pound,” is a traditional manner of preparing fish and meat so they better absorb other flavors, therefore enhancing the protein in the dish. The cuts are briefly seared over a hot pan, marinated in vinegar, sliced thin and seasoned with ginger. Tetsu’s tataki offerings will differentiate the restaurant with the finest culinary creations, such as the Wagyu Ribeye, and Filet Mignon-Soy Vinaigrette.

Main course offerings include prime cuts of beef such as Center Cut Lamb Chop and Filet Mignon. Seafood and steak also will delight guests with the incredibly fresh ingredients for which Masa is renowned, such as Butterflied Scottish Langoustine, Mediterranean Turbot and decadent Fatty Tuna. Side accompaniments including Kobe Garlic Fried Rice, Yakisoba Noodles and Seafood Udon will complement the main course. The 11th Annual Michael Jordan Celebrity Invitational (MJCI), hosted by ARIA Resort & Casino at Shadow Creek, returns to Las Vegas for the second consecutive year March 29-April 1, 2012.  Tickets are now on sale for one of celebrity golf’s most popular events, giving fans the opportunity to watch four days of competition with some of the biggest names in sports and entertainment.

The MJCI two-person, 36-hole scramble format tournament begins Saturday, March 31 and includes only the competing celebrities.  The second and final round of the MJCI will be played Sunday, April 1.  Additional festivities and special events surrounding the Saturday and Sunday competition, as well as celebrity participants, will be announced in the near future.

Hosted by ARIA Resort & Casino, the 11th Annual Michael Jordan Celebrity Invitational (MJCI) will return to Las Vegas’ Shadow Creek March 29 – April 1.

NFL MVP Aaron Rodgers will join many returning standouts from 2011 including Ken Griffey, Jr., Wayne Gretzky, Roger Clemens, Brian Baumgartner, Brett Hull, Maury Povich and Chris Chelios, who made a splash last year when he sank a 45-foot putt followed by a cannonball jump into the adjacent lake on the 18th hole green.

The Celebrity-Amateur tournament, which pairs one celebrity with four amateur participants, will take place Thursday, March 29 and Friday, March 30. The MJCI two-person, 36-hole scramble format tournament, including only competing celebrities, will take place Saturday, March 31 and Sunday, April 1. More information on special events surrounding the tournament, as well as additional celebrity participants will be announced in the near future.

Shadow Creek, one of the country’s most exclusive golf courses, will open its doors to the public for only the second time. Proceeds from the charitable tournament will benefit the the Make-A-Wish Foundation, UC San Diego Nevada Cancer Institute, James R. The second annual FOOD & WINE All-Star Weekend took place on FRIDAY, October 21 with a star-studded red carpet.

We had the pleasure to meet and take pictures of Gail Simmons and other celebrity chefs and epicurean icons! They included Michael Mina, Julian Serrano, Masayoshi Takayama and Shawn McClain in addition to Top Chef alumni Stephanie Izard, Angelo Sosa, Hosea Rosenberg, Yigit Pura and Sam Talbot.

This Red Carpet event was a lot of fun and well organized! One of the few that started on time! All the chef and epicurean icons seemed to be having fun getting their pictures taken. I did get a chance to talk to Top Chef alumni Angelo Sosa. He is super nice and was easy to talk to. He said is restaurant in New York Social Eatz is doing very well. He is in the process of opening a restaurant in California. I did ask if he planned on anything for Vegas he said “Yes in the next two years”! Angelo also has a cook book coming out in March that he is very excited about and so am I! I have been a fan of Top Chef since it started and Angelo was my favorite!  I did have to check out the jeans that they mention in the show. Yes ladies they are as they mention!

October and November Menus Feature Squash, Apples, Plums, Quail, Chestnuts, Cranberries and More

 
ARIA Resort & Casino will launch spectacular menus this October and November designed around the fresh culinary produce of the season. ARIA executive chefs will blend favorite ingredients such as lobster and Kobe beef with seasonal elements such as pears, squash, turnips, cranberries and apples infusing each dish with current and delicious items that highlight the very best of fall’s culinary trends.

AMERICAN FISH by Michael Mina: Executive Chef Sven Mede has outdone himself by creating a luscious menu that incorporates lobster into five savory courses. Guests will enjoy a menu that features Lobster Carpaccio with radish, seabeans, lime and ginger vinaigrette as well as an Heirloom Tomato Soup served with a lobster grilled cheese sandwich. A decadent Valrhona Chocolate Custard with red velvet cake and cocoa nib ice cream will finish off the meal on a sweet note. Menu: $95; Wine pairing $55.

Jean Georges Steakhouse: Executive Chef Robert Moore has designed a menu celebrating the surprisingly versatile cranberry in all five courses. Burrata Mozzarella with cranberry compote, olive oil and grilled sourdough; Raw Nantucket Bay Scallops with cranberry jus and fresh wasabi; and Peppered Venison Loin with cranberry-quince condiment and cocoa essence are just a sampling of the interesting flavor combinations Chef Moore has created. He has even worked cranberries into the dessert with a Cranberry Ricotta Cheese Tart. Menu: $95; Wine pairing: $55.

Sage: Chef Shawn McClain, known for integrating seasonal, farm-fresh ingredients into his bold and contemporary cuisine, takes it a step further with the October menu. A sampling of the delightful courses that celebrate the season are Smoked Pacific Hamachi with leek puree, purple runner beans and pink lady apples; New Zealand Venison with roasted plums and confit potatoes; and Kabocha Squash Agnolotti with creminelli pancetta, Tuscan kale, brown butter and nutmeg. For dessert, a Butterscotch Custard with chocolate flakes, pecan sable and sour cherry syrup will finish the meal seamlessly. Menu: $79.

Sirio Ristorante: Executive Chef Vincenzo Scarmiglia will serve a hearty menu of vintage Italian dishes and take full advantage of fall’s wide variety of rich flavors. Highlights from the elaborate seven-course menu are Tagliatelle Pasta with fresh, shaved Piedmontese White Truffles, Braised Venison Short Ribs with white polenta, artichokes and Brussels sprouts and Roasted Squab Breast with braised Umbrian lentils and grape must. Concluding this exceptional October offering is an Apple Tartlet with vanilla gelato and salted caramel sauce for dessert. Menu: $125.

AMERICAN FISH by Michael Mina: The superlative delicacy Kobe beef is celebrated in AMERICAN FISH’s November menu. Dishes such as Soy Braised Short Rib will be accented by seasonal ingredients such as turnip gratin and ginger carrots and the Tataki will be paired with edamame, golden Enoki mushrooms, crispy garlic and black truffle vinaigrette. Menu: $110; Wine pairing: $55.

Jean Georges Steakhouse: Fall’s crown jewel, squash, is the ingredient of choice in Chef Moore’s delectable menu. The culinary adventure will begin with a Butternut Squash Soup followed by a choice of a Fall Squash and Arugula Salad or Warm Salad of Roasted Squash. Next, diners will have to decide between Seared Jumbo Shrimp with acorn squash or the Seared Scallops with spaghetti squash. The entrée will be a Grilled Beef Tenderloin with Goldbar squash and for dessert, a Spiced Pumpkin Cake with praline ice cream and pumpkin seed brittle. Menu: $95; Wine Pairing: $55

Sage: Chef Shawn McClain is all about introducing exceptional ingredients that add zest to a winter menu. Pan Roasted Jumbo Fluke will be accented by Yukon gold potato risotto and house-made bacon-grilled leeks or the 48-Hour Beef Belly paired with chestnut puree, fig glaze and celery heart. For dessert, Chef McClain pays homage to fall with Maple Cremeux Crepes served with warm bourbon apples and chicory ice cream. Menu: $79.

Sirio Ristorante: This November, experience Chef Scarmiglia’s delicious six-course menu featuring autumn’s bounty. Griddled Nantucket Bay Scallops are to be complemented by roasted sunchokes and pomegranate syrup and Scarmiglia’s famous house-made ravioli are filled with butternut squash, brown butter and sage. Pan Roasted Duck Breast with leg confit will be served with quince applesauce and sautéed wild mushrooms.
