In a city that is constantly evolving, STRIPSTEAK at Mandalay Bay has remained a guest favorite. This year the popular steakhouse by James Beard Award-winning chef Michael Mina will celebrate its 10-year anniversary. Since the restaurant opened in 2006, it’s been known for being the only restaurant in Las Vegas to butter-poach the finest cuts of meat before finishing them on a Mesquite wood-burning grill. This signature cooking method creates tender, juicy steaks that have kept fans coming back for more. Since its debut, STRIPSTEAK has served more than 1.5 million guests.

Popular dishes such as the American Wagyu Ribcap, Truffled Mac ‘n’ Cheese and House-made Beignets with dipping sauces are complemented with an award-winning list of more than 110 single malt scotches. Every table at STRIPSTEAK is presented with a trio of Duck Fat Fries as a complimentary amuse bouche. A true crowd pleaser, the Duck Fat Fries is the restaurant’s most photographed dish on social media and Yelp. As a tribute to all of the great dishes from the past and present, the restaurant will offer special dish and cocktail selections from previous menus throughout the month of October.

BARDOT Brasserie, the celebrated new Parisian concept from Chef Michael Mina at ARIA Resort & Casino, has unveiled Hors d’âge, a champagne-inspired French beer brewed exclusively for the restaurant.

Developed in Esquelbecq, France, Hors d’âge is a Flemish Country Ale designed to complement Chef Mina’s Parisian cuisine. The elegant blonde ale was produced using only the finest French ingredients, including barley, wheat, Strisselpalt and Aramis to give it a refined flavor. The brewing process was a collaboration between Stillwater Artisanal in Boston, Brasserie Thieriez in France and ARIA’s Mixologist Craig Schoettler.

“To further elevate the atmosphere found at BARDOT, we worked tirelessly to ensure that Hors d’âge was authentically French, from the ingredients to the technique used to brew it,” said Schoettler.

Hors d’âge’s lean, crisp effervescent body and spicy taste along with its floral hop aroma give it a universal appeal that will please both beer aficionados and novices. Hints of marzipan and a light spice lend to a clean, dry finish with a lively carbonation, reflecting the consistency of champagne.

Hors d’âge features 7.5 percent alcohol content and is available in 750 mL bottles or on draft. Beer enthusiasts also can enjoy BARDOT’s more than 80 international hard-to-find brews available on its robust beverage menu.

BARDOT’s dynamic beverage menu celebrates France’s passion for spirits, wine and beer. The mixology program features French-themed cocktails such as the “Storming the Bastille,” made with Bastille whisky, Maurin sweet vermouth and Bitterman coffee bitters, and the “And God Created Women,” an innovative concoction of Citadelle St. Germain, Angostura bitters, and Byrrh with BARDOT’s signature “B” sprayed onto the egg white foam sitting atop the libation. BARDOT’s wine cellar houses a bevy of French vintages, as well as a champagne cart with a rotating selection of four sparkling wines. Following, a five-course prix fixe menu will be presented by the talented culinary team at STRIPSTEAK, led by Executive Chef Gerald Chin. The menu will feature:

The fourth annual FOOD & WINE All-Star Weekend, hosted by Bellagio, ARIA and MGM Grand, returns to Las Vegas October 4-6 with new programming and even more talented culinary superstars. Renowned sommeliers and mixologists, along with celebrity chefs such as Joël Robuchon, Michael Mina and Shawn McClain, will collaborate on epicurean events as they engage guests in an agenda full of culinary fun. The action-packed weekend includes an educational wine class on Syrah with a Master Sommelier, a cooking demo on how to make sushi ten ways, a once-in-a-lifetime dinner with a Michelin-starred chef, a lively pizza party and more.

Ten Ways To Sushi: 12:30 p.m. – 2:30 p.m.
Join Executive Chef Heather Zheng at Shibuya at MGM Grand for an exciting cooking demonstration and sake tasting. Chef Zheng will educate guests about Japanese cuisine’s most popular fish — the tuna – and will explain its composition. During the process, ten different dishes will be created, each complemented with fresh wasabi, and paired with refreshing sake selections.
 
First Course: 8 p.m. – 11 p.m.
As the official kick-off party of the eventful weekend, View Bar at ARIA invites guests to sample delectable delights from ARIA restaurants barMASA, Julian Serrano and Sage. Celebrity chef talent comes together at AMERICAN FISH at ARIA. Hosted by Chef Michael Mina, guests will enjoy a four-course meal with exclusive cocktail and wine pairings, created by the talented chefs at the resort.
 
Burger Bash with Joel Robuchon and Michael Mina: 1:30 p.m. – 3:30 p.m.
Guests will need a big appetite at FOOD & WINE’s All-Star Weekend’s newest event, Burger Bash. Hosted poolside at MGM Grand, seven of the resort’s restaurants will serve delicious burgers and unique sides as upbeat tunes play throughout the evening. Attendees are encouraged to try a burger from all participating chefs to see which suits their palate. Celebrity judges, including Chef Joel Robuchon and Chef Michael Mina, will determine the ultimate Burger Bash winner.
 
Syrah That Will Change Your Life: 2 p.m. – 3:30 p.m.

Guests will have a one-of-a-kind epicurean experience with “Chef of the Century” Joël Robuchon as he prepares an exclusive six-course menu with wine pairing. At the end of the dinner, diners will receive a Joël Robuchon cookbook, personally signed by the chef himself.

James Beard Award-winning Chef Shawn McClain starts the event with savory hors d’oeuvre’s and his own signature pizza, each slice paired with hard-to-find craft beers. A DJ will keep the hotspot alive with fun, upbeat jams lasting long in to the night. It’s what all pizza parties should be.
