Bellagio Executive Chef Edmund Wong to Delight Guests with Interactive Beer & BBQ Luncheon

Wong and Bellagio Master Mixologist Ricardo Murcia to Host Event Saturday, June 20 at Noon

 

Bellagio Executive Chef Edmund Wong will demonstrate the art of creating an extraordinary barbeque menu at the popular Beer & BBQ Epicurean Epicenter event Saturday, June 20 at noon on the Monet Patio. The fun and interactive lunch will teach guests about grilling, including tips of the trade and ideal beer pairing options. Exclusive artisanal craft beer selections will be presented by Bellagio’s Master Mixologist Ricardo Murcia as he guides diners through each carefully selected pairing.

The afternoon will begin with a cocktail reception of hand-passed hors d’oeuvres such as Grilled Lobster and Potato with beurre fondue; Wild Strawberry topped with burrata and micro basil; and Grilled Chicken and Chorizo with a citrus gremolata glaze. Additionally, Murcia’s Illusive cocktail, mixed with Illusive Traveler Grapefruit Shandy, grapefruit juice, house-made ginger ale and grapefruit bitters, will be available to whet guests’ palates.

The adventure continues with the first course of Toy Box Tomato, created with watermelon, baby mint, fresh ricotta and raspberry vinegar. The main course will tempt taste buds with a BBQ trio that includes:

  • Crispy Pork Shank served with red cabbage and apple coleslaw; paired with Brouwerij Rodenbach Caractére Rouge, a Belgium Sour Red Ale made with cranberries, raspberries and sour cherries aged in oak vats
  • Dry Aged Double Chop Tomahawk topped with a caramelized black pepper glaze; paired with Cellar Aged Vintage Alaskan Smoked Porter
  • <Frankfurters and Hot Links with grainy mustard; paired with Firestone Walker Pivo Hoppy Pils

Flavorful side dishes to complement the main course will include fried cauliflower with lemon and fenugreek; honey butter biscuits; broccoli salad; grilled heirloom carrots; and asparagus and egg. The epicurean affair will end on a sweet note with warm apple pockets paired with Angry Orchard Iceman Hard Ice Cider.

An Executive Chef’s Culinary Classroom is a series of interactive cooking classes led by Bellagio Executive Chef Edmund Wong. During each two-hour session held in Tuscany Kitchen, the AAA Five Diamond resort’s state-of-the-art demonstration kitchen, Wong and his talented team guide students through the preparation of a three-course meal including an appetizer, entrée and dessert. Additionally, Master Sommelier and Bellagio’s Director of Wine, Jason Smith, educates guests on how to pair wines with select dishes. Beer & BBQ Secrets is an intimate beer pairing luncheon hosted by Smith and held in Tuscany Kitchen. The upbeat and interactive event invites guests to relax and enjoy the fresh, smoky flavors of the season with a three-course meal prepared by Wong and beer pairings presented by Bellagio Assistant Director of Beverage Ricardo Murcia. Todd English Takes on Californian Bordeaux at Bellagio’s Epicurean Epicenter

Saturday, March 9, two giants in the food and wine world – celebrity chef Todd English and Justin Winery, the pioneer of the Californian Bordeaux-style wine – will join forces at Bellagio’s Epicurean Epicenter series.

Differentiating Epicurean Epicenter from other wine dinners, Chef English of Olives has extensively worked with Bellagio’s Master Sommelier Jason Smith to craft cuisine for this event around Justin Winery’s featured Bordeaux – instead of the other way around. The result will be imaginative dishes like the “Duck Duck Goose” – a Seared Duck Breast with confit leg ragu and foie gras tortellini which will perfectly accentuate the elegant, yet herbal structure of the 2010 JUSTIFICATION Paso Robles.

Justin Winery broke ground for producing world-class, Bordeaux-style wines in Central California receiving 90+ points for past and present vintages by the major wine consumer publications.

Bellagio’s Tuscany Kitchen hosts exclusive wine dinner Saturday, March 9 at 6:30 p.m.

Bellagio’s Epicurean Epicenter series unites the modern Mediterranean cuisine of renowned chef Todd English of Bellagio’s Olives with the classic wines of JUSTIN Vineyards & Winery Saturday, March 9 at 6:30 p.m. in Tuscany Kitchen. Chef English will prepare an exquisite four-course dinner, explaining every aspect of menu creation to guests from ingredient selection to technique and flavor profile. Each course will be served with fine wines from JUSTIN Vineyards & Winery, paired by Master Sommelier Joseph Spellman and Bellagio Director of Wine and Master Sommelier Jason Smith.

The culinary experience begins with Poached Merus Crab Leg accompanied by micro insalata, béarnaise sauce and candied lemons and paired with the delicate notes of Landmark Overlook Chardonnay.  The second course, cleverly titled “Duck Duck Goose,” features the tasty meat in various forms including seared duck breast with leg confit and foie gras tortellini. JUSTIN Winery’s Justification, a balanced and complex red wine featuring aromas of both fruit and spice, will complement this decadent course. The experience continues with Veal Osso Buco with parmesan polenta, garlicky spinach and walnut gremolata paired with JUSTIN’s Isosceles and Isosceles Reserve red wine blends. The sweet finale presents a Peanut Butter Falling Cake with milk chocolate ice cream and caramel sauce paired with JUSTIN’s Obtuse, a port-style dessert wine made from Cabernet Sauvignon.
