Alizé at the Top of Palms Casino Resort is inviting guests to meet the restaurant’s brand new executive chef, Joshua Bianchi. The Michelin Star award-winning restaurant will host an exclusive dinner on Friday, June 30. The “Meet the Chef” dinner will be a multi-course experience to showcase his new dishes and takes on classic Alizé fare. The evening will begin with a reception at 6:30 p.m. followed by the five-course menu at 7 p.m.

Chef Bianchi’s menu reflects his diverse background blended with the traditional French cuisine that Alizé guests are accustomed to. Each dish will be paired with complimentary wine selected by Beverage Director Patrick Trundle to highlight each dish.

Prior to joining Alizé, Chef Bianchi was the opening chef for Drai’s Beachclub Las Vegas and Drai’s Vancouver. Within the past 10 years, he has worked for myriad talented chefs around the country including Florida Chef Norman Van Aken; Las Vegas Chef Julian Serrano of Picasso at Bellagio; New York Chef Tom Colicchio of Gramercy Tavern and Chef Daniel Boulud of Daniel Boulud Brasserie at Wynn Resort Las Vegas.

At the 8:30 p.m. seating with additional times including 9 p.m., 9:30 p.m. and 10 p.m., a decadent six-course chef’s tasting menu will be served and Laura Shaffer’s “Noir Nightingale” will provide entertainment throughout the night. Shaffer is known for her vintage Vegas look and sultry vocals. Her classic Hollywood style will set the mood for a lively, elegant evening and will continue until 1 a.m. A Champagne toast will take place at midnight.

Multi-Course Dinner to Pair Cuisine with the World’s Finest Teas, 56 Stories High

On Thursday, June 16, Alizé at the Top of the Palms Casino Resort will present  the city’s first tea pairing dinner hosted by Barbara Fairchild, former editor-in-chief, Bon Appétit. This will be the night that gourmet French cuisine meets the delicate flavors of teas. Executive Chef Mark Purdy and his team are partnering with Seven Cups Fine Teas, a top tea purveyor, to create this one-night-only experience.

“We want to explore how food pairs with tea. We have never done something like this but the response has been overwhelming,” says Chef Purdy. “To create this menu, we tasted the teas first. Once we understood the complexity of the flavors, that was when the chemistry happened.”

The menu for the multi-course menu will include:

Amuse Bouche: Jin Guan Yin Anxi Wulong Tea

  • Chilled cucumber soup with cucumber terrine, carrots, pecans and dill
  • Calvisius Caviar with toasted brioche panna cotta and dill

First course: Lao Shu Hong Cha Old Tree Yunnan Black Tea

  • Angus beef Carpaccio with quail egg yolk, parmesan cheese, mustard sauce, pickled vegetables and beef tartar
  • Marinated heirloom tomatoes with rhubarb, pearl onions, sunflower shoots, balsamic vinegar and feta cheese

Second course: Bai Long Xu “White Dragon Whisker” Sheng Puer Tea

  • Tête de Moine with fennel marmalade, white balsamic vinegar and zucchini date bread
  • Apricot-Almond Torchon with port poached prunes, candied pistachios and rosemary raisin crisp

Seventh course: Yin Hao Long Zhu “Silver Dragon Jasmine Pearls” Flower Scented Tea

  • Myer lemon cheesecake, graham cracker crisp and blood orange sauce
  • Chocolate Soufflé with chocolate sauce

In addition to hosting the event, Fairchild will be awarding people in the tea industry who have contributed work for establishing standards for tea quality over the past year. These standards are comparable to the D.O.C.G. Italian wine control system in terms of defining the quality and purity of tea. Dignitaries coming from as far away as China and India will be receiving awards given by the International Specialty Tea Association. This event will be the premier event of the 2016 World Tea Expo in Las Vegas taking place June 13 through 17.

For entertainment, the glamourous Laura Shaffer will perform live on New Year’s Eve. Shaffer is known for her vintage Vegas look and sultry vocals. Literally and figuratively elevating the dining experience, Alizé at the top of The Palms Casino Resort is debuting a brand new coffee and tea program. Now included in the tasting menu experience, when guests order coffee at the conclusion of their meal, it will be served from a Cona Vacuum coffee maker that is assembled then presented at the table, creating a private mini-spectacle, available only at Alizé.

“Once assembled, these Cona coffee makers look like works of art,” muses Joseph Marsco, director of operations and managing partner, Alizé. “Our guests expect an extraordinary experience when they dine at Alizé, so we decided to ensure it is unforgettable—all the way through coffee service.”

The Cona Vacuum coffee maker is manufactured in England and works by heating the water and then the coffee itself through a vacuum pot system. With the introduction of drip coffee makers, which became popular in the latter 20th century, classic vacuum pots such as these briefly lost momentum but are now experiencing a comeback, thanks to coffee connoisseurs looking for more out of their experience. This coffee maker’s sleek glass system is deceptively easy to use, utilizing a glass rod method of filtration versus a cloth filter. As a result, not only are there no filters to ever replace, but the coffee does not come in contact with the metal, resulting in clean and bold flavors.

Boulder City, Nev.-based Colorado River Coffee Roasters created two special blends: the Red Wall and Cascadia Decaf blends. Alizé’s Executive Chef Mark Purdy collaborated with Colorado River Coffee’s Roastmaster Erik Anderson and, together, they created the proprietary Red Wall blend named after formations at the neighboring Grand Canyon. The flavors are inspired by the canyon and include sweet fruit, cocoa and soft nutty flavors with a bright finish. The Cascadia Decaf blend is a certified organic product featuring beans from Asia, Central and South America.

Accompanying the coffeemaker is a 3-tiered cylindrical glass container that contains honey for the tea or chantilly cream for the coffee, two types of sugar, shortbread and biscotti to further enhance the experience. The new coffee service averages 10 minutes.

For guests ordering tea, a modern-shaped pot arrives at the table, in which the loose-leaf tea varieties are steeped. Blending a striking design and high functionality, the minimalist teapot is stainless steel and glass, showcasing the leaves as they unfurl. ABOUT ANDRÉ ROCHAT
Rochat was born in the French Alps where his family owned a charcuterie shop in the village of La Rochette. After learning the business—beginning at the age of five—he left home at 14 to apprentice at Leon de Lyon, the renowned Michelin two-star restaurant in the heart of Lyon.

In 1965, Rochat departed his native France, arriving in Boston with a set of knives in his suitcase and $5 in his pocket. After cooking at several East Coast, he eventually landed in Las Vegas. In 1973, he opened a successful business, Savoy French Bakery, after observing the absence of an authentic French boulangerie in Las Vegas.

In 1978, he purchased a 1930s-era house in downtown Las Vegas and transformed it into his eponymous restaurant, which reimagined the ambience of a French country inn.

As the only freestanding gourmet option at the time, Andre’s quickly became a hit with locals and tourists alike. The restaurant made such an impact, the city of Las Vegas honored Rochat for his contribution to the community by renaming the street to Chef André Rochat Place.

In 1997, Rochat opened a second location on the Strip, Andre’s Restaurant and Lounge at Monte Carlo. By 2001, he opened Alizé at the Top of Palms Casino Resort. In 2008 and 2009, both Alizé and Andre’s were recognized by the Michelin Guide with the one-star rating.

Pumpkin is synonymous with fall and Alizé’s Chef de Cuisine Mark Purdy has created a delightful twist on his Parisian gnocchi to incorporate this autumn favorite. Available throughout the fall season and into early winter, pumpkin gnocchi is sautéed in clarified butter and also served with the sauce along with sage espuma.

“Our intention is to provide a very simple dish that would deliver robust fall flavors without being overwrought with garnishes and details,” says Chef Purdy. “It is a simple blend of pumpkin and sage flavors with a pleasing range of textures on the palate; the soft gnocchi, the crispy crust of the gnocchi, the foamy espuma sauce, and the crunchy fried sage leaves.”
