SIX-COURSE NEW YEAR’S EVE MENU

Chefs André Rochat and Chris Bulen invite guests to ring in 2016 at Andre’s Restaurant & Lounge at Monte Carlo Resort & Casino. The allure of the restaurant’s signature Cigar Lounge & Culinary Library also makes for a cozy, yet festive, location for either counting down to the New Year or enjoying cigars and spirits long after the clock strikes midnight.

To celebrate New Year’s Eve, Andre’s is offering an exquisite six-course tasting menu. The six-course menu will include:

  • Amuse bouche: Fois gras mousse, black currant gelée and verjus gastrique.
  • First course: Choice of pheasant terrine, beef consommé with truffled bone marrow mouse or roasted pumpkin soup with lemon crème fraiche.
  • Second course: Choice of harissa glazed sea scallops with celery root risotto, braised oxtail pithivier with cauliflower purée or eggplant and heirloom quinoa cakes with smoked tomato garlic sauce.
  • Third course: Choice of Phyllo-wrapped John Dory and King Crab and tomato parsley beurre blanc, filet of prime beef with Roquefort cheese crust and pinot noir jus, Pan-seared duck breast or baked butternut squash gnocchi with parmesan and mushroom gremolatta.
  • Fourth course: Intermezzo of blood orange sorbet, black pepper tuile and pistachio.
  • Fifth course: Dessert trio, composed of exquisite creations by Pastry Chef Tammy Alana, including caramelized bananas with treacle tart, baked chocolate mousse on coconut macaroon with passion fruit and macadamia crusted pavlova with green apple and kiwi.

The menu will be offered starting at 5:30 p.m. on New Year’s Eve and is priced at $195 per person.*

ANDRE’S ANNOUNCES NEW SPRING MENU, ADDS SMALL PLATES

 

Springtime brings the brightest of flavors and freshest ingredients to chefs’ kitchens the world over. This season, Andre’s Restaurant & Lounge at Monte Carlo Resort and Casino has introduced a new menu, incorporating small plates as well as a risotto and pasta section.

Small plates, priced at $10 each, include Smoked Salmon Parfait with cucumber dill salad and olive oil caviar; Grilled Lamb Sausage served with curried slaw; Pork Rillette with sweet pepper relish and toasted country bread; Caponata with crispy anchovies and toasted baguette; Fried Oysters with lemon aioli; and Pickled Vegetables with five-herb sauce and garlic chips.

Pastas and risottos, available in starter ($12) and entrée ($24) portion sizes, included King Crab Ravioli with fresh peas and saffron sauce; Pappardelle with braised chicken thigh, artichoke and cherry tomato; Vegetable Risotto with an assortment of market vegetables; Gluten-free Quinoa Pasta with roasted eggplant with bell pepper sauce.

Andre’s still offers five- and seven-course tasting menus, as well as all the classic favorites, including Maine Lobster Thermidor, Classic Dover Sole, and Diver Scallop. Main courses available a la carte include Braised Beef Short Ribs, Grilled Sockeye Salmon and other beef and seafood dishes.

In addition, Andre’s Pastry Chef Tammy Alana has created a new spring dessert menu. It features Andre’s famous chocolate and Grand Marnier soufflés, while also offering carrot cake, raspberry-and-white-chocolate and soufflé du jour varieties. Other irresistible indulgences on the spring dessert menu include:

  • Crème brûlée trio, featuring vanilla, salted caramel and coffee bean
  • Blackberry and blueberry almond tart with lemon poppy seed ice cream
  • White, milk and dark chocolate mousse with mango medley
  • Neapolitan Napoleon featuring layers of puff pastry with vanilla, raspberry and chocolate custards
  • Warm chocolate fondant with strawberry ice cream and crisp orange meringue
  • Passion fruit crème caramel with French meringue
  • Selection of ice creams and sorbets (choice of three)
  • Cheese plate – chef’s selection accompanied by seasonal jams and preserves
  • Dessert menu prices range from $9 to $18.

Pricing Range from $1,980 to $3,500 in Honor of Andre’s 35 Years in Las Vegas

 In 1980, Chef André Rochat opened his eponymous restaurant in Downtown Las Vegas, making him the city’s first chef to launch a free-standing fine dining establishment. Thirty-five years later, he remains Las Vegas’ first high-profile, fine-dining chef–an accomplishment in a city filled with the culinary industry’s biggest names. To celebrate this momentous milestone, Andre’s team is launching wedding packages, each designed for 15 to 20 guests, now available at Andre’s Restaurant & Lounge at Monte Carlo and Alizé at the Top of The Palms Casino Resort. In honor of his 35 years and the year Rochat opened Andre’s in Downtown Las Vegas, these packages are priced at $1,980 and $3,500 and available until Dec. 31, 2015.

Available at both Alizé and Andre’s and priced at $3,500*, the wedding package includes:
-Champagne toast
-Four-course dinner, featuring a cold appetizer trio, salad, choice of main course and dessert
-Sommelier selection of wines with dinner
-Two-tier wedding cake created by Pastry Chef Tammy Alana

At Alizé, the Silver Wedding Dinner, priced at $1,980, features:
-Champagne toast
-Three-course dinner, including salad, choice of main course and individual wedding cakelets for each guest
-Sommelier selection of wines with dinner

At Andre’s, the Silver Wedding Reception, also priced at $1,980, includes:
-Tray passed hot and cold hors d’oeuvres (30 pieces each of seven varieties)
-Two-hour cocktail package, including call brand spirits, imported and domestic beer, house wines and soft drinks
-Two-tier wedding cake

ABOUT ANDRE ROCHAT
Rochat was born in the French Alps w here his family owned a charcuterie shop in the village of La Rochette. After learning the business—beginning at the age of five—he left home at 14 to apprentice at Leon de Lyon, the renowned Michelin two-star restaurant in the heart of Lyon.

In 1965, Rochat departed his native France, arriving in Boston with a set of knives in his suitcase and $5 in his pocket. After cooking at several East Coast, he eventually landed in Las Vegas. In 1973, he opened a successful business, Savoy French Bakery, after observing the absence of an authentic French boulangerie in Las Vegas.

In 1978, he purchased a 1930s-era house in downtown Las Vegas and transformed it into his eponymous restaurant, which reimagined the ambience of a French country inn.

As the only freestanding gourmet option at the time, Andre’s quickly became a hit with locals and tourists alike. The restaurant made such an impact, the city of Las Vegas honored Rochat for his contribution to the community by renaming the street to Chef André Rochat Place.

In 1997, Rochat opened a second location on the Strip, Andre’s Restaurant and Lounge at Monte Carlo. By 2001, he opened Alizé at the Top of Palms Casino Resort. In 2008 and 2009, both Alizé and Andre’s were recognized by the Michelin Guide with the one-star rating.

“I’m not a celebrity chef. I just love to cook,” says Rochat.

Chefs from Rochat’s Illustrious Career to Create One-Night Only Menu with Proceeds to Benefit the James Beard Foundation

Legendary Las Vegas chef André Rochat will be honored by his past and present peers and protégés on Sunday, March 29 at Andre’s Restaurant & Lounge at Monte Carlo Resort & Casino. Rochat, who is celebrating 35 years in Las Vegas in 2015, will host the evening as a team of chefs create a one-night only menu that will feature exquisite culinary creations. The dishes, selected to acknowledge and honor Chef André, will showcase the talents of each chef.  The event will begin at 5:30 p.m. with hors d’oeuvres and cocktails, followed by dinner at 6:30 p.m. Ticket proceeds from the event will benefit the James Beard Foundation (JBF), the world’s foremost culinary nonprofit organization.

In 1980, French-born Rochat changed the face of Las Vegas’ dining industry, introducing the city to its first freestanding fine dining experience. Decades before the Fremont Street Experience and Zappos arrived, Downtown Las Vegas belonged to Rochat. That was then he purchased a 1930s-era house downtown and transformed it into his eponymous restaurant. Andre’s in Downtown Las Vegas featured dining rooms named after French cities, along with copper pots used as light fixtures and wine labels framed as art creating the ambience of a French country inn.  As the only freestanding gourmet option at the time, Andre’s quickly became a hit with locals looking for a place to celebrate a special night out and visitors willing to travel a few miles via taxicab to the must-see restaurant. The restaurant made such an impact, the city of Las Vegas honored Rochat for his contribution to the community by renaming the street, formerly known as Lewis Place, to Chef André Rochat Place. In 1997, Rochat opened a second location on The Strip, Andre’s Restaurant & Lounge at Monte Carlo. By 2001, he opened Alizé at the Top of Palms Casino Resort. In 2008 and 2009, both Alizé and Andre’s were recognized by the Michelin Guide with the one-star rating.

From Master Sommelier Steven Geddes to Greg Engelhardt to Eric Patterson, they all credit Rochat with serving as a mentor over the last 35 years. Even within his own kitchen, those positioned to take Rochat’s culinary fare into the next 35 years can each pinpoint the techniques he has personally taught them.

“Where else can you find a chef of André’s caliber taking the time and effort to make sure his legacy continues? Today, there are so many establishments that focus on the newest and the best. But with André, trends are fine but what matters most is skill and tradition – and that is the core of what he has instilled in all of us,” says Mark Purdy, executive chef, Alizé.

On Wednesday, July 9, Whisk(e)y Wednesday returns to its American roots, celebrating domestic whiskies. Whisk(e)y Wednesdays is the series featuring unlimited whiskey tastings. The event takes place on the second floor of Andre’s Restaurant & Lounge at Monte Carlo Resort Hotel and Casino, inside their signature Cigar Lounge.

For July, the flight will feature American whiskies from George Dickel and Bulleit, as well as a special 20 year old release from Barterhouse. The special guest speaker will be Dr. Tom Turner, master of whiskey, Diageo. He will explore the history of the whiskeys, their production and offer tips and techniques for maximizing the enjoyment of the spirits.

Whisk(e)y Wednesday’s “grand tasting” takes place over two sessions: the first taking place from 7:30 to 9:30 p.m. and the second tasting from 10 p.m. to midnight.

After the debut of this new flight of American whiskies, the flight will remain on Andre’s menu until the next tasting in September.

As for the location itself – considered one of Las Vegas’ best kept secrets, Andre’s Cigar Lounge is the only one of its kind to be connected to a Strip resort. With a collection of more than 140 Cognacs, Armagnacs and Scotches, as well as premium cigar varieties, the collection is the largest of its kind in Las Vegas and is ranked third in North America based on its sheer size. Considered a “hidden gem” by those in the hospitality industry, the Cigar Lounge opened in 1996 along with the award-winning, AAA Four Diamond restaurant. Two-Day Festival of World Class Music, Food, Art & Learning in Downtown Las Vegas includes

“Grills & Guitars” by Blue Ribbon Restaurants, “The Culinary Village”, and “The Alchemy Garden”

Life is Beautiful (L.I.B.) Festival announces the lineup of culinary programming and experiences for the inaugural festival taking place Saturday, October 26th and Sunday, October 27th, 2013, with a kickoff event the evening of Friday, October 25th.  With more than 60 chefs and restaurants, 24 wineries and 24 breweries participating in the culinary part of the festival alone, L.I.B. presents its attendees with a full-scale food festival experience and expects to draw tens of thousands of people to Downtown Las Vegas. The culinary programming includes experiences that are included in the price of a general-admission festival ticket, such as The Culinary Village, The Alchemy Garden & Chefs on Stage, as well as unique ticketed events that do not require a festival ticket like the Grills & Guitars kick-off party hosted by Blue Ribbon Restaurants and the Take a Stand charity soiree; an eight-course dinner hosted by Elizabeth Blau & Hubert Keller benefitting Three Square Food Bank and Communities in Schools.

The creative direction of the food festival portion of Life is Beautiful Festival was shaped by a culinary advisory board of 12 top chefs chaired by Bruce Bromberg of Blue Ribbon Restaurants.  The food festival will be anchored by The Culinary Village a Moroccan-style bazaar featuring stations manned by more than 60 well-known chefs. Within The Village, guests can enjoy an entertaining and informative series of chef demonstrations (Chefs on Stage), culinary affairs, intimate meals and a beer, wine and spirits garden (The Alchemy Garden). All experiences within the food and wine program will allow attendees the opportunity to engage with these talented chefs up-close and gain insight into their creative process in the kitchen and beyond.

“The food experiences of Life is Beautiful Festival were carefully designed to be interactive, innovative and unexpected,” says Jolene Mannina, Head of Culinary Arts for the festival. “Working with the vision of our Culinary Advisory Board of 12 world-renowned Chefs, we’ve created an approach that we feel will set us apart from other food festivals, giving both our patrons and chefs a chance to enjoy something new, fresh and, of course, delicious.”

These demonstrations will tantalize taste buds and teach viewers how to create the same experience at home.

Showcasing the mystery and wonderment of Old Vegas at its finest, this charity dinner will feature eight award-winning chefs serving eight courses in various styles throughout the night paired with priceless wines and crafted cocktails by Wirtz Beverage mixologists and sommeliers.
