 Tom Colicchio’s Heritage Steak at The Mirage was named one of the “25 Most Important Restaurants of 2013” by Zagat. The venue, which opened in August, was the only Las Vegas restaurant to achieve this prominent recognition.

Food is the centerpiece of most holiday celebrations and this November guests will feel thankful for the festive cuisine available at participating MGM Resorts Internationalrestaurants. Talented chefs from Bellagio, ARIA, Vdara, MGM Grand, Mandalay Bay, Mirage, Monte Carlo, New York-New York,Luxor, Excalibur, and Circus Circus Las Vegas have created feasts fit for every palate, from traditional turkey and trimmings to adventurous fare and seasonally inspired cocktails and desserts.
For those who honor tradition, there is a cornucopia of turkey options with all of the fixings to go around this Thanksgiving. Tom Colicchio’s Heritage Steak at The Mirage will feature Heritage Turkey with sausage stuffing, market vegetables and maple glazed sweet potatoes.  Seasonal splendor can be found at Jean Georges Steakhouse at ARIA with Roasted Organic Turkey and scrumptious sides of mushroom-chestnut stuffing, roasted Brussels sprouts and cranberries. The Steakhouse at Camelot at Excalibur will offer a three-course dinner featuring Butternut Squash Soup with Andouille sausage, Oven Roasted Turkey with giblet gravy, mashed potatoes, stuffing and pumpkin or apple pie. At Nine Fine Irishmen at New York-New York, guests will find traditional delight in Maple Glazed Ham with apple-cranberry chutney.
Many restaurants will challenge guests to trade in tradition and indulge in unconventional options. Craftsteak at MGM Grand will present a taste of the ocean with the Dill Marinated Salmon with watercress and cucumber salad. Guests can switch out traditional turkey at The Buffet at Bellagio for Gluten-free Penne with pulled turkey leg confit. miX at Mandalay Bay will reflect autumn’s bounty with Tender Potato Gnocchi which includes pumpkin three ways, wild mushrooms and veal jus. Rice & Company at Luxor will serve the Thankful Dumpling made with tender duck breast, cornbread stuffing, onions and celery enveloped in a dried cranberry wrap.
Thanksgiving also is an opportune time to highlight the flavors of the season in sweet temptations and creative beverages. Traditional Thanksgiving desserts are reinvented at FIX at Bellagio with a savory Pumpkin Toffee Pudding Cake and Salted Maple Ice Cream Pumpkin Brittle. The Steak House at Circus Circus will honor tradition by offering guests a choice of Apple Pie à la Mode, Pumpkin Pie with whipped cream, or Pecan Pie. AMERICAN FISH at ARIA will feature a taste of autumn in a glass with their Wild Turkey Flip; a cocktail prepared with kobacha squash-infused Wild Turkey, simple syrup, egg and nutmeg. Bar Vdara will serve fall-inspired Punk’n Harvest Pumpkin Ale, an organic, roasted pumpkin craft beer brewed using renewable energy and spiced with cinnamon, nutmeg, clove, and hints of honey and vanilla.

Life is Beautiful Festival to release a limited quantity of single day general admission and single day VIP tickets for sale beginning on Friday, September 27 at 10 a.m. PT on Ticketmaster.com.

Priced at $95 and $209.50 (plus taxes and fees) for GA and VIP respectively, single day tickets are available for both Saturday and Sunday, October 26 and 27, 2013.  A limited number of VIP tables and cabanas will also go on sale this Friday; for more information, visit the festival’s website.

TOM COLICCHIO’S HERITAGE STEAK BRINGS OPEN FLAME COOKING TO THE MIRAGE

Tom Colicchio’s Heritage Steak, the newest restaurant from the James Beard Award-winning chef, presents open flame cooking, the culinary art of preparing meats using wood-burning ovens and charcoal grills. Now open at The Mirage, the warm and inviting 230-seat restaurant showcases Colicchio’s passion for cooking with fire, as each dish is prepared to bring out the rich flavors in the cuisine while using the freshest ingredients available. Located within the iconic resort’s lush garden atrium, the restaurant is open daily for dinner.

“Chef Colicchio creates world-class restaurants and Heritage Steak is no exception,” said President and COO of The Mirage Trevor Scherrer. “The extraordinary menu selections, coupled with a relaxing atmosphere and outstanding service, will raise the bar yet again and provide our guests a memorable dining experience here at The Mirage.”
The menu focuses entirely on meats prepared over an open flame using a charcoal grill, wood-burning oven and a Grillworks Infierno, a versatile grill that also serves as a hearth, smoker, broiler and more. Colicchio uses a variety of specialized cooking methods when preparing the restaurant’s antibiotic-free meats, including Brandt Beef and Snake River Farms, which he sources from ranchers across the United States. Dishes include a New York Strip Steak with Pepper Chutney Bordelaise and Duck Breast with Duck Chorizo and Smoked Peaches along with a robust selection of seasonal side dishes to accompany menu selections.
Colicchio said, “There’s something inherently wholesome about cooking over an open flame. It preserves the integrity of each ingredient and enhances natural flavors. I’m excited to explore this time-honored way of cooking at Heritage Steak.”
Heritage Steak’s beverage program features an extensive selection of wines, a variety of specialty cocktails and craft beers on tap.  A collection of rare and high-end whiskies are a highlight of the beverage menu.
Designed by Bentel + Bentel, the restaurant welcomes guests with a glowing hearth and an expansive photo mural featuring charred firewood by photographer Amanda Weil. The rustic vibe, both natural and modern, includes a leather-clad wall and walnut-beamed ceiling. Guests wishing to grab a quick bite or cocktail before an evening out can make themselves comfortable in the handsome lounge and will enjoy plush banquette seating. The restaurant also features an intimate private dining room for special events and gatherings.

About Tom Colicchio
Originally from Elizabeth, New Jersey, Tom Colicchio is the chef and owner of Craft, Craftbar, ‘wichcraft, Colicchio & Sons and Riverpark in New York, Craft and Craftbar in Los Angeles, Craftsteak at the MGM Grand Las Vegas and Craftsteak at the MGM Grand Foxwoods. He was the co-founder of Gramercy Tavern, along with Danny Meyer. Most recently, he opened Topping Rose House, the inn and restaurant he is operating in Bridgehampton, New York. Colicchio has been recognized by the James Beard Foundation throughout his career and earned the “Outstanding Chef” award in 2010, the culmination of his 30 years of hard work in the restaurant industry. He has published three cookbooks and is the head judge of the Emmy-winning culinary series Top Chef, which premieres the 11th season this fall. Colicchio also appears in and serves as executive producer on A Place at the Table, Participant Media’s documentary about food insecurity in America, produced and directed by Kristi Jacobson and Colicchio’s wife, Lori Silverbush. A Place at the Table was released by Magnolia Pictures earlier this year. Life is Beautiful (L.I.B.) Festival announces the lineup of culinary programming and experiences for the inaugural festival taking place Saturday, October 26th and Sunday, October 27th, 2013, with a kickoff event the evening of Friday, October 25th.  With more than 60 chefs and restaurants, 24 wineries and 24 breweries participating in the culinary part of the festival alone, L.I.B. presents its attendees with a full-scale food festival experience and expects to draw tens of thousands of people to Downtown Las Vegas. The culinary programming includes experiences that are included in the price of a general-admission festival ticket, such as The Culinary Village, The Alchemy Garden & Chefs on Stage, as well as unique ticketed events that do not require a festival ticket like the Grills & Guitars kick-off party hosted by Blue Ribbon Restaurants and the Take a Stand charity soiree; an eight-course dinner hosted by Elizabeth Blau & Hubert Keller benefitting Three Square Food Bank and Communities in Schools.

The creative direction of the food festival portion of Life is Beautiful Festival was shaped by a culinary advisory board of 12 top chefs chaired by Bruce Bromberg of Blue Ribbon Restaurants.  The food festival will be anchored by The Culinary Village a Moroccan-style bazaar featuring stations manned by more than 60 well-known chefs. Within The Village, guests can enjoy an entertaining and informative series of chef demonstrations (Chefs on Stage), culinary affairs, intimate meals and a beer, wine and spirits garden (The Alchemy Garden). Life is Beautiful (L.I.B.) Festival announces the lineup for the inaugural festival taking place Saturday, October 26th and Sunday, October 27th, 2013. With more than 50 musical acts, 60 chefs and restaurants, special performances by Cirque du Soleil and other theatrical productions, world renowned artists and over 25 noted speakers, L.I.B expects to attract tens of thousands of people to Downtown Las Vegas.

Art is Beautiful

Art is Beautiful is an urban-inspired art festival for a whole new generation of entertainment enthusiasts. By eliminating the velvet ropes, Art is Beautiful will allow festival goers to actively engage with critically-acclaimed artists from around the globe and from within Downtown Las Vegas’ progressive art scene. Programming will include street art, installations, murals and performance art. In addition, the festival will feature theatrical performances presented by a wide range of theater groups. At this year’s festival, Cirque du Soleil, will present an act from the highly anticipated and brand new immersive musical experience, Michael Jackson ONE, on the main festival stage, and, in addition there will be six unique performances from other resident Cirque du Soleil productions of Las Vegas.

Learning is Beautiful
Learning is Beautiful, the festival’s speaker series, aims to inspire festival goers to expand their perspective on what is possible when you simply choose to “do what you love.” Critically acclaimed and diverse speakers will share their road to success while highlighting the obstacles and pitfalls they experienced along the way. Over two days, more than 25 speakers will be showcased in keynote and quick-format speeches, panel discussions and workshops.

Celebrity chefs with roots in both New York City and Las Vegas have inspired a unique food and wine extravaganza to benefit victims devastated by superstorm Hurricane Sandy.

“When it comes to the hospitality industry, Las Vegas and New York City are really sister cities,” said Michael Severino of Southern Wine & Spirits of Nevada. “This is just a small way all of us in Las Vegas can help those that have been affected by these monster storms”.

The event will take place on the New York-New York Hotel & Casino Brooklyn Bridge on Sunday, December 9, 2012 from 11 a.m. to 3 p.m.

A partial list of the chefs/restaurants invited to participate in “Start Spreadin’ the News” includes: Mario Batali, Tom Colicchio, Scott Conant, Todd English, Bobby Flay, Charlie Palmer, Nobu, Gordon Ramsay, Thomas Keller, Palm Restaurant, Smith & Wollensky, Rao’s, Stage Deli, Nathan’s, Carnegie Deli, Old Homestead and many others. Great wine, craft beers and specialty cocktails will be provided by Southern Wine & Spirits of Nevada. 100% of the proceeds will go to the American Red Cross Disaster Relief Fund.

On Thursday, June 14, The Cosmopolitan of Las Vegas and Wines from Spain, along with Chef partner José Andrés hosted Casa José Spanish Barbeque at the 30th anniversary of the Food & Wine Classic in Aspen. The Spanish barbeque featured Wines from Spain and was hosted by renowned Chef José Andrés, the chef and owner of three restaurants at The Cosmopolitan of Las Vegas including China Poblano, Jaleo and é. Chef Andrés supplied all attendees with favorites from the Spanish songbook of classics, from Pan Con Tomato to Jamón Iberico Ribs to a selection of artisanal cheeses and embutidos. Guests sipped on a compendium of signatures from the Wines from Spain portfolio, from albarinos to prioriats and mezcals from the host chef’s homeland.
