Tuesday, July 19, the craft beer haven PUB 365 located inside Tuscany Suites & Casino celebrated their grand opening with a private party.

 

Invited guets enjoyed craveable small bites featuring burgers, tacos and delectable sweets.  The menu was developed with input from Chef Carlos Buscaglia of Due Forni.  It features flavors of craft beer in unexpected recipes throught the culinary experience.

 

Along with great food, guests were able taste test beers featured on  PUB 365’s  expansive beer list which includes 365 craft beer choices available by bottle and can, including 40 draft handles. Organized by flavor profile, the menu highligts an extensive selection ranging from lights and wheats to stouts and porters, Belgium-style brews and other-worldly options such as sours and fruit blends.

What: Las Vegas Business Academy’s (LVBA) third annual fundraising event combines Las Vegas’ culinary masterminds with an extravagant entertainment lineup in an effort to raise scholarship funds for students pursuing graduate degrees.

 

The fundraising event will begin at The Smith Center with a matinee performance of  Tony Award winning musical, Wicked. The matinee will be followed by dinner and live rooftop entertainment at the Downtown Grand Hotel.  Las Vegas’ top chefs, hospitality executives and community leaders will gather above the streets of downtown to support the leaders of tomorrow by building awareness for the scholarship program.  Paired with gourmet dishes prepared by more than 15 local restaurants, the event offers the essence of Vegas’ vibrant entertainment with live performances by Japanese drummers, a live DJ and the band Phoenix.

BEST OF SILVER STATE RESTAURANTS & LOUNGES AWARDS TO HONOR THE FINEST IN THE INDUSTRY ON DECEMBER 13

 

On Friday, December 13, top restaurants, lounges and chefs will be honored at the Best of Silver State Restaurants & Lounges Awards, which will take place at the Sands Showroom inside The Venetian Las Vegas. The event, sponsored by TMG Entertainment in partnership with the Nevada Restaurant Association Educational Foundation (NvRAEF), will recognize industry stars who have elevated Nevada as a premier dining destination. Celebrity Chef Emeril Lagasse will be a special guest presenter at the awards ceremony. The award ceremony hosts will be Dayna Roselli, Nina Radetich, and Robin Leach.

Nominees in seventeen categories were selected by a distinguished nominating committee, comprised of industry professionals and notable figures in the community. The winners will be decided by a public vote. Voting is open online at www.Facebook.com/silverawards and can only be conducted from a computer, not a phone or tablet. Voting is free and any member of the public may cast a vote through December 2, 2013.

Tickets to the awards ceremony are $40 and include admission to the champagne cocktail reception at 5:30 p.m. as well as reserved seating for the ceremony at 6:45 p.m. Tickets will go on sale at www.palazzo.com or at any Palazzo or Venetian box office starting Oct. 16. Proceeds from the event benefit NvRAEF’s educational and scholarship programs, such as ProStart, a national high school culinary and restaurant management program that teaches students the skills and knowledge needed to enter the workforce or to continue to postsecondary after high school graduation.

Festival announces the lineup of culinary programming and experiences for the inaugural festival taking place Saturday, October 26th and Sunday, October 27th, 2013, with a kickoff event the evening of Friday, October 25th.  With more than 60 chefs and restaurants, 24 wineries and 24 breweries participating in the culinary part of the festival alone, L.I.B. presents its attendees with a full-scale food festival experience and expects to draw tens of thousands of people to Downtown Las Vegas. In recent years Las Vegas has experienced a meteoric rise to become, arguably, the best restaurant city in the world. But its much more than just a list of restaurants, as each entry receives a thoughtful and candid description from all three authors. The guide also includes a 44-page specialty guide dedicated to Additional Recommendations from beer to buffets and from Sunday brunch to sushi “ plus everything else in between. The contentious (and ever-popular) Vetoes section pits author-against-author, a literary version of a free-for-all food fight.

When we green-lit this project three years ago, I wasn’t sure its realization was even a possibility, as we were dealing with three highly knowledgeable but incredibly strong-willed personalities, said publisher Anthony Curtis. But John (Curtas), Max (Jacobson) and Al (Mancini) have continued to deliver on their promise to seek out, and agree upon, Las Vegas 50 Essential Restaurants.

The 2013 edition of Eating Las Vegas with its foreword written by 14-times James Beard Foundation award-winning food journalist,  Alan Richman, adds three newcomers to the vaunted Top Ten list “ including two off-strip restaurants “ a first for the book “ in March Bacchus French Bistro and Raku Japanese Charcoal Grill. The other newcomer is Piero Selvaggios Valentino at The Venetian. Rounding out the Top Ten, and repeating from 2012, are Estiatorio Milos at The Cosmopolitan, Jol Robuchon and L’Atelier de Jol Robuchon at MGM Grand, Restaurant Guy Savoy at Caesars Palace, CUT at Palazzo and Le Cirque and Picasso at Bellagio.

In addition to the Top 10, 11 new restaurants made the Essential 50,including Bread & Butter, Comme a at The Cosmopolitan, Due Forni, Fleur at Mandalay Bay, Gordon Ramsay Steak at Paris, Kabuto, Le Thai, Mint Indian Bistro, miX at Mandalay Bay,
Public House at The Venetian and Sirio at Aria. Of course, when restaurants are added, casualties are inevitable. Eleven previously listed restaurants didnt make the cut this year. Some may be easier to swallow than others, but the authors refuse to place celebrity above credibility, as one notable inclusion in the Vetoes section amply demonstrates.

Vegas’ Due Forni to Open in Austin, TX

Authentic Roman and Neapolitan Pizzas and Cuisine Featuring Imported Italian Ingredients

Due Forni Pizza & Wine will open this winter in Austin’s historic Littlefield Building at Sixth and Congress.  The restaurant and wine bar is the brainchild of University of Texas at Austin alum Alex Taylor and Chef Carlos Buscaglia, who made a name for himself as a rising star in the Las Vegas culinary world.   The pair founded Due Forni and opened the first location in Las Vegas in 2011, garnering acclaim from food critics and the community alike.

After achieving success serving the highest quality of food at accessible prices in Las Vegas, operating partner Taylor knew the next expansion for the brand would be Texas.  For Taylor, who received his MBA from the McCombs School of Business, and then went on to serve as Food & Beverage Director at such prestigious Las Vegas properties as Wynn Resorts’ Encore and Mandalay Bay, the new location is a homecoming.

“Austin is becoming the most noted culinary city in the country,” said Taylor.  “I’m proud to be bringing this concept we created to a place we love and consider our adopted home town.”

Due Forni is the only upscale restaurant concept in America to offer authentic Roman and Neapolitan pizzas utilizing two separate custom Napolitano ovens and imported Italian ingredients to appeal to both types of pizza connoisseurs.  Traditional Neapolitan pizzas are baked at 900 degrees for no more than 90 seconds, producing a light chewy crust with a crisp exterior served browned and bubbly with slightly blistered edges.  The Pizza Romana style features a thin and crispy crust with a light crackly texture that is accomplished from baking at 500 degrees for three minutes.   The ability to satisfy a range of preferences is made possible because of the dual bespoke ovens, or due forni in Italian, set to the different temperatures.

The innovative dining model extends beyond gourmet pizza, utilizing the pizza ovens and varying cooking techniques in place of other traditional kitchen equipment to turn out entrees such as scallops, rack of lamb, duck, wild salmon and pastas. The menu is made complete with a prime selection of hot and cold appetizers, charcuterie, cheeses and inventive desserts. Due Forni utilizes authentic imported ingredients across all dishes, such as bufala mozzarella from Campania, San Marzano tomatoes from the hills surrounding Mount Vesuvius and blue label Prosciutto San Daniele.

The restaurant features a substantial wine selection spanning Italy, California and other up-and-coming regions from around the world, while Enomatic wine dispensers offer 40-plus outstanding, limited production wines by the glass.  The cocktail program takes a creative turn, guiding guests through the feeling or style of the drink rather than categorizing by spirit, encouraging drinkers to step out of their comfort zone and try something new.

Carlos Buscaglia will oversee the culinary operations of both locations.  Prior to opening Due Forni as Chef Partner, he made a rapid rise to the role of Executive Chef at Fiamma inside the MGM Grand. Buscaglia learned traditional Italian recipes and a rustic Italian cooking style from his grandmother and mother in the family’s Italian deli in Buenos Aires, Argentina before later working under James Beard Award-nominated chef Michael White.

“The expansion of Due Forni to Austin is a natural one,” said Buscaglia.  “Similar to Las Vegas, Austin is a culinary town; one that celebrates great flavors and a warm and welcoming dining experience.”

Sean Zirkle will serve as Executive Chef of Due Forni Austin and has been with the brand since the opening of the restaurant’s first location in Las Vegas.  Aside from working with Buscaglia and White at Fiamma, Zirkle spent six years with famed chef Emeril Lagasse at MGM Grand and also served on the culinary team of Mandalay Bay.

Due Forni will open this winter at the Littlefield Building in the heart of Austin.  The causally sophisticated boîte will feature an atmosphere that is unique and infused by sight, sound and smell.  The soundtrack will be centered on 1960’s and 1970’s Italian jazz and R&B, while muted spaghetti westerns and Italian crime movies from the same era can be viewed via tastefully placed high-definition monitors.  The dual ovens will create a warm, aromatic focal point within the space.
