 Border Grill Mandalay Bay launched its latest dinner menu featuring new and inspired items that are sure to spice up your night. “Our new dinner menu items reflect our guests evolving tastes and culinary desires. New Unlimited Brunch Menus at Border Grill – A Q&A With The Executive Chef

In a city touted for its good and plentiful eats, Border Brunch at both Border Grill Mandalay Bay and Border Grill Forum Shops stands out. The award-winning brunch with a definitive Mexican flare has recently launched an array of new menu items while keeping some of the classic favorites at its two Las Vegas locations.
Available every Saturday and Sunday from 10 a.m. to 3 p.m at Mandalay Bay and 10 a.m. to 2 p.m. at The Forum Shops, unlimited small plates and bottomless mimosas anchor this weekend tradition. With a creative culinary roadmap established by co-chef/owners Mary Sue Milliken and Susan Feniger, Border Grill’s Executive Chef Jamaal Taherzadeh, shares his insight about the new brunch menu items and the inspiration behind them.
Border Grill has long been famous for its award-winning brunch, what do you think makes it so popular?
Chef: The variety.  I think that being able to sample so many different flavors and items makes for a unique experience.  When I eat breakfast or brunch, I like to have something sweet – but only a couple bites.  It’s nice to offer small plates so guests can go from from sweet, to salty, to rich, to acidic. You can really have the full spectrum of flavor.
The existing menu has been well-received, why change it? 
Chef: There’s always room for improvement! We try to evolve with trends, while staying true to our modern Mexican and Latin roots.  For example, with a trend toward health and wellness, we changed our fruit plate that previously came with a guava yogurt in a buñuelo cone, to a much healthier parfait brulee using strained yogurt seasoned with lime and agave.  We are really focusing on the quality of each ingredient in the parfait, and the same goes for practically every other dish we offer.
What is the thought process in developing new menu items for brunch?  
Chef: It’s pretty simple: I make what I crave. We taste all the items as a team. The chefs fully encourage me to get creative with frequent specials and menu updates so every visit to Border Grill is a bit different for our guests, but always the same in quality, service and passion.
Where do you pull your inspirations from when creating a new brunch menu? 
Chef: It’s a mixture of what my mom makes, what my peers are making and what the street food scene is like in Mexico and Latin America.  All dishes start with the ingredients; we use sustainable and seasonal ingredients and let that inspire us. Our 30+ years of tried and true dishes are a great starting point for new twists and takes.
What are some of the favorite menu items that remain? 
Chef: The Steak and Eggs is still a must-have!  I love our skirt steak from Aspen Ridge – it’s antiobiotic and hormone free and comes with a deliciously whimsical crispy poblano hash brown. We also still have our signature Green Corn Tamales, Churro Tots, Pigs in a Blanket and Breakfast Fries. The Breakfast Fries include beer braised short rib with Manchego cheese, applewood smoked bacon and a sunny side egg. It’s such a simple yet richly layered dish that everyone absolutely loves, so it was a no-brainer keeping that on the menu.
What new items are you most excited about?
Chef: The Barbacoa Torta is amazing. It’s barbequed brisket with a really bright onion and carrot slaw, on a rustic grilled baguette.  It’s kind of like a Mexican Banh Mi style sandwich that you have to try.  We included it on both the Mandalay Bay and Forum Shops menus, so it’s a must-order at either location.
What is the most adventurous dish showcased on the new brunch menus? 
Chef: The Serrano Ham and Cheese Waffle.  It has shaved Serrano ham and Spanish Manchego cheese laid on top before we close the waffle maker, so the cheese gets melty and gooey and the ham gets crunchy.  We serve it with whipped butter and maple syrup.  It’s got both salty and sweet – you know, like something Elvis would love!

Chef: The Egg Sandwich, Oyster Taco, and Chile Relleno with eggplant guacamole are exclusively offered at the Mandalay Bay location.

Chef: You will only find the Ceviche of the Day and Seasonal Vegetable Chilaquiles from our impressive ceviche bar at our location in The Forum Shops at Caesars.
How would you describe the brunch menu overall? 
Chef: If I had to sum up the reimagined brunch menu in one word it would be adventurous. A truly broad spectrum of flavor is featured throughout.
How do the new brunch menus reflect Border Grill’s dedication to fresh, sustainable ingredients?  
Chef: Mary Sue Milliken and Susan Feniger believe modern Mexican cuisine should be light and healthful, with a large dose of flavor and a dedication to sustainability. With that in mind, all of our seafood is sustainable, and all of our meats are hormone free, antibiotic free. We use farmers markets whenever possible, even our beans and rice are organic.
What about brunch cocktails? Are there cocktails that are specific to each location?  
Chef: One of the greatest things about Border Brunch at both locations are Bottomless Mimosas in a variety of flavors for $10. We also have an amazing Brunch Margarita that is pineapple vanilla infused. The Forum Shops location features several Bloody Mary variations including the Verde Mary which has cilantro infused vodka, tomato, cucumber serrano and spinach, while the Border Bacon Mary includes bacon infused vodka, horseradish, red pepper and spiced tomato.
What is special about Border Grill brunch that you can’t find anywhere else in Las Vegas?

Chefs/owners Mary Sue Milliken and Susan Feniger will host fellow Top Chef Masters alumni in the Border Grill kitchen inside Mandalay Bay for a special Top Chef Masters Reunion Dinner on Wednesday, August 19. Guest chefs include Hugh Acheson (5&10, The National, Empire State South and The Florence) and Rick Moonen (rm seafood and Rx Boiler Room). The all-star lineup will also feature cocktails created by The Modern Mixologist Tony Abou-Ganim.

“Mary Sue and I are very much looking forward to being reunited with such a great group of talented chefs and friends for this intimate event,” said Feniger. “It is so special when we can come together for a common good cause, as well as treat guests to a lively tasting event that celebrates our time during Top Chef Masters.”

Guests will be treated to a cocktail reception and a panel discussion with the chefs about their experiences on Top Chef Masters including a Q&A portion mediated by Rachel Smith of the MORE Show on FOX, followed by an intimate dine around event with the Top Chef Masters and specialty cocktails prepared by Abou-Ganim. “Supporting the community has been part of our DNA since we began, and we are excited to participate in Restaurant Week once again,” explains Susan Feniger. “The great thing about this year is that for the first time we are able to do it from one end of the Strip to the other. The special prix fixe menus offered will go to support Three Square Food Bank, and both restaurants will be donating a portion of each prix fixe meal served from June 15 – 26 to support Southern Nevada’s only food bank. In its 26th year, Cool Comedy – Hot Cuisine (CCHC) comes to Las Vegas for the first time, bringing the Scleroderma Research Foundation’s (SRF) signature fundraiser event to the House of Blues inside Mandalay Bay Hotel & Casino. On Thursday, June 5, comedian and SRF Board Member Bob Saget will host an evening of comedy, live music with special guest Ben Folds and exquisite cuisine, prepared by celebrated Vegas chefs and Top Chef Masters personalities Susan Feniger, Mary Sue Milliken and Rick Moonen.
 
Bringing this event to Las Vegas from its traditional entertainment and culinary capitals of Los Angeles, San Francisco, and New York, the SRF will host its signature fundraiser event where celebrity chefs, comedians, and musical guests come together for a night of entertainment to raise funds and spread awareness for scleroderma. The disease means “hard skin”, often attacking the lungs, kidneys, and gastrointestinal tract with life-threatening consequences. The event supports scleroderma research at premier institutions such as Harvard, Johns Hopkins, Stanford University and UCSF. 
 
To complement the entertainment, the event will also include a cocktail reception, as well as four-course dinner experience prepared by Border Grill Co-Chef/Owners Mary Sue Milliken and Susan Feniger, also a founding SRF Board Member; and Rick Moonen of rm seafood and Rx Boiler Room in the Shoppes at Mandalay Place, for guests to enjoy throughout the evening.

EVENT RECAP: “CHEFS TO THE MAX” DINNER AT RX BOILER ROOM RAISES $275,799 FOR LOCAL FOOD CRITIC MAX JACOBSON

Last night, Sunday, January 19, a group of the country’s most acclaimed chefs collaborated on the first “Chefs to the Max” dinner at Chef Rick Moonen’s Rx Boiler Room inside the Shoppes at Mandalay Place and raised a total of $275,799. The dinner was the first of a series to benefit critically injured Las Vegas-based food journalist Max Jacobson. The event featured a cocktail reception, sit-down seven-course dinner with wine pairing, as well as a live and silent auction for 100 guests. One-hundred percent of the proceeds will benefit Jacobson directly to help pay for mounting medical bills as a result of the accident.

Chefs in attendance included Megan Bringas, Kim Canteenwalla, Shirley Chung, John Church, Saipin Chutima, Barry Dakake, Susan Feniger, Bobby Flay, Hubert Keller, Thomas Keller, Rick Moonen, Grant MacPherson, Mary Sue Milliken, Bradley Ogden, Luciano Pellegrini, Vincent Pilon, Pino Posteraro, Vincent Pouessel, Joey Romano, Megan Romano, Angelo Sosa and David Walzog.

In addition, Rick Moonen challenged Bobby Flay to a “Kampachi Throwdown.” Moonen prepared a Chili Seared Kona Kampachi with avocado, ruby red grapefruit and yuzu butter sauce; and Flay prepared a Kona Kampachi with Korean red pepper-tangerine glaze with pickled Brussels sprout relish and squab egg. Guests voted and Rick Moonen was announced the winner.

Two days before Christmas 2013, Jacobson was struck by a car while in the crosswalk at Windmill Parkway and Pecos Road as he walked from home to the gym. He sustained severe brain trauma from the accident. He remains in critical condition at Kindred Healthcare.

Jacobson is currently Vegas Seven’s restaurant reviewer. Prior to that, he covered Orange County for the Los Angeles Times for 15 years. He moved to Las Vegas in 1999 to be the lead critic for Las Vegas Life. He has also written for numerous national culinary publications including Saveur and Gourmet. Jacobson recently co-authored “Eating Las Vegas” with fellow food critics Al Mancini and John Curtas.

On Friday, October 25, Life is Beautiful Festival hosted its official kick-off party, Grills & Guitars.  The party featured a culinary feast prepared by 16 celebrity chefs, including Bruce Bromberg, Aarón Sánchez, Scott Conant, Cat Cora, Rick Moonen, Kim Canteenwalla, Susan Feniger, Mary Sue Milliken, David Myers, Jet Tila, Clayton Arakawa with musical performances by Dawes and Todd Rundgren.

The first day of the festival, Saturday, October 26, 2013, attracted tens of thousands of people to Downtown Las Vegas to explore the 15-block music, food, art and learning event consisting of five music stages, a culinary village, an alchemy garden, an eclectic street art program curated by Charlotte Dutoit, a learning program with a range of notable speakers, and much more.

Highlights of the festival so far include:

  • Kanye West toured the footprint of the festival with co-founder Rehan Choudhry & Zappos CEO Tony Hsieh on the eve of the openin
  • At Grills & Guitars, Nancy Silverton presented Jonathan Waxman with the Lifetime Achievement Award surrounded by Aarón Sánchez, Bruce Bromberg, Michael Symon and the festival’s co-founder, Rehan Choudhry
  • Hometown favorites Imagine Dragons played their biggest show in Vegas to date, and spoke about their excitement of being part of the transformation of Downtown Las Vegas. The show ended with a surprise appearance from the cast of Mystère by Cirque du Soleil
  • Childish Gambino performed his own rendition of Adele’s “Rolling in the Deep”
  • Capital Cities covered a Bee Gee’s song and two different versions of their hit “Safe and Sound”
  • Beck performed Michael Jackson’s hit song “Billie Jean”
  • Aarón Sánchez packed the room with energetic fans during his “Chefs on Stage” cooking demonstration
  • Ben McKee of Imagine Dragons joined Jet Tila during his cooking demonstration and Youngblood Hawke cooked with Cat Cora
  • Speakers including Tony Horton and the creators and cast of MTV’s “The Buried Life” inspired attendees when sharing their stories about following their passions
  • The Beatles LOVE by Cirque du Soleil surprised guests with a pop-up performance on Fremont Street

On Friday, October 25, 2013, from 8pm – Midnight, 16 celebrity chefs will come together to participate in “Grills & Guitars,” a celebration of the beloved backyard barbecue combining creative open flame cookery with craft brews, artisanal wines and original cocktails created by some of the country’s finest mixologists.

Festival announces the lineup of culinary programming and experiences for the inaugural festival taking place Saturday, October 26th and Sunday, October 27th, 2013, with a kickoff event the evening of Friday, October 25th.  With more than 60 chefs and restaurants, 24 wineries and 24 breweries participating in the culinary part of the festival alone, L.I.B. presents its attendees with a full-scale food festival experience and expects to draw tens of thousands of people to Downtown Las Vegas. The culinary programming includes experiences that are included in the price of a general-admission festival ticket, such as The Culinary Village, The Alchemy Garden & Chefs on Stage, as well as unique ticketed events that do not require a festival ticket like the Grills & Guitars kick-off party hosted by Blue Ribbon Restaurants and the Take a Stand charity soiree; an eight-course dinner hosted by Elizabeth Blau & Hubert Keller benefitting Three Square Food Bank and Communities in Schools.

The creative direction of the food festival portion of Life is Beautiful Festival was shaped by a culinary advisory board of 12 top chefs chaired by Bruce Bromberg of Blue Ribbon Restaurants.  The food festival will be anchored by The Culinary Village a Moroccan-style bazaar featuring stations manned by more than 60 well-known chefs. Within The Village, guests can enjoy an entertaining and informative series of chef demonstrations (Chefs on Stage), culinary affairs, intimate meals and a beer, wine and spirits garden (The Alchemy Garden). All experiences within the food and wine program will allow attendees the opportunity to engage with these talented chefs up-close and gain insight into their creative process in the kitchen and beyond.

Life is Beautiful (L.I.B.) Festival announces the lineup for the inaugural festival taking place Saturday, October 26th and Sunday, October 27th, 2013. With more than 50 musical acts, 60 chefs and restaurants, special performances by Cirque du Soleil and other theatrical productions, world renowned artists and over 25 noted speakers, L.I.B expects to attract tens of thousands of people to Downtown Las Vegas.

Art is Beautiful

Art is Beautiful is an urban-inspired art festival for a whole new generation of entertainment enthusiasts. By eliminating the velvet ropes, Art is Beautiful will allow festival goers to actively engage with critically-acclaimed artists from around the globe and from within Downtown Las Vegas’ progressive art scene. Programming will include street art, installations, murals and performance art. In addition, the festival will feature theatrical performances presented by a wide range of theater groups. At this year’s festival, Cirque du Soleil, will present an act from the highly anticipated and brand new immersive musical experience, Michael Jackson ONE, on the main festival stage, and, in addition there will be six unique performances from other resident Cirque du Soleil productions of Las Vegas.

Learning is Beautiful
Learning is Beautiful, the festival’s speaker series, aims to inspire festival goers to expand their perspective on what is possible when you simply choose to “do what you love.” Critically acclaimed and diverse speakers will share their road to success while highlighting the obstacles and pitfalls they experienced along the way. Over two days, more than 25 speakers will be showcased in keynote and quick-format speeches, panel discussions and workshops.
