NEW SEAFOOD DISHES AT B&B HOSPITALITY GROUP RESTAURANTS IN THE
VENETIAN, PALAZZO LAS VEGAS

 

This summer, lighten up with these seafood dishes at B&B Hospitality Group’s Las Vegas restaurants in The Venetian and Palazzo Las Vegas: Carnevino Italian Steakhouse, OTTO Enoteca e Pizzeria, B&B Burger & Beer and B&B Ristorante.


Whole Grilled Branzino at B&B Ristorante

B&B RISTORANTE AT THE VENETIAN
At B&B Ristorante the whole grilled branzino ($42) makes a light, delicate meal, served with an herb and fennel salad and grilled lemon. For an appetizer, the calamari and seppie fritti ($19) is served with capers, pickled chili and butter.


Shrimp Fritto Misto at B&B Burger & Beer

B&B BURGER & BEER AT THE VENETIAN
While B&B Burger & Beer is known for their delicious hamburgers, the shrimp fritto misto ($12) features lightly fried, crispy vegetables, shrimp and slices of lemon, which brightens the dish.


Clams Al Forno at Carnevino Italian Steakhouse

CARNEVINO ITALIAN STEAKHOUSE AT PALAZZO LAS VEGAS
Carnevino Italian Steakhouse‘s noteworthy seafood dishes include the Tuscan seafood stew ($36) and red snapper ($42). The clams al forno appetizer ($24) is a delicate mix of breadcrumbs, oregano and pancetta, best served with a light spritz of fresh lemon juice.

Fresh pasta at OTTO Enoteca e Pizzeria includes the trofie al vongole ($23), perfectly cooked Manila clams sautéed in a spicy ‘nduja and mint pesto. For a spicier option, seafood alla diavola ($30) is a delicious medley of seafood in a spicy but delicate tomato broth, served with grilled filone bread.

INTRODUCES NEW DESSERT COLLECTIONS

The classic American restaurant, B&B Burger & Beer at The Venetian, introduces new additions to the already decadent dessert menu.

New desserts include classic favorites such as ice cream sandwiches and cheesecake, as well as a modern twists on the traditional cannoli. Pastry Chef Ashley Costa created all of the new dishes, which were designed to complement the flavors of the savory menu. Dessert menu items start at $5 and will be available as of May 17.

New desserts include:
Salted Caramel Cheesecake: Salted caramel cheesecake with a gingersnap crust, fresh seasonal berry jam, house-made whipped cream and topped with gingersnap crumbs.

Nutella Cake: Moist chocolate cake with a creamy Nutella layer topped with Nutella cream cheese frosting and garnished with candied hazelnuts and whipped cream.


Cookie Plate: Choice one of four house-made cookies: brown butter chocolate chip; peanut butter; snickerdoodle or a Nutella brownie.

Ice Cream Sandwich: Choice of any house-made gelato placed between choice of two cookies.

Cannoli: House-made cannoli shells filled with orange chocolate chip ricotta filling.

 This March, guests at B&B Burger & Beer at The Venetian can settle in and watch the games while enjoying Mario Batali’s unique spin on hamburgers, milkshakes and more.

B&B Burger & Beer’s special will feature Beer Buckets available during all March Madness games. When bottles are ordered by the bucket, the price is $7 for one beer or $28 for five beers—it is buy four, get one free. CARNEVINO ITALIAN STEAKHOUSE AT PALAZZO LAS VEGAS
Carnevino Italian Steakhouse‘s  three-course prix-fixe menu features a choice of appetizer such as insalata Caprese or calamari fritti, main course options including filet mignon or crispy skin snapper and a light panna cotta or gelati for dessert. The prix-fixe menu is $135 per person plus tax and gratuity.

For a decadent dessert, seasonal white alba truffles can be added to a dish for $19 per gram with a five-gram minimum. Dinner is served Dec. 31 from 5:30 p.m. Reservations are recommended.

The Dining Room at B&B Ristorante

B&B RISTORANTE AT THE VENETIAN
B&B Ristorante is offering a tasting menu with dishes such as duck egg with black winter truffle, potato and prosciutto, bone marrow ravioli with osso bucco ragu, roasted lobster with herb salad and spiced almond tronchetto with caramelized apple. This tasting menu will be offered for dinner and is $195 per person.

The four-course New Year’s Eve pre-fixe menu features B&B Ristorante favorites, including the popular grilled octopus, beef cheek ravioli, lobster spaghetti, braised short rib and steak tagliata for $135 per person. Reservations are recommended.

On New Year’s Day, guests can recover from New Year’s Eve festivities with B&B Burger & Beer’s Morning After Burger ($15). For a la carte dining, the new stracciatella and beet salad with prosciutto and mint makes a light, refreshing lunch ($25).

Culinary Director Nicole Brisson is the driving force of the culinary team at B&B Hospitality Group’s four Las Vegas restaurants. Chef Brisson oversees ever-changing menus, sources new ingredients and makes sure the quality of cuisine served is always top-notch.

Prior to her appointment as culinary director, she was the executive chef at Carnevino at The Palazzo. In that position, she oversaw a staff of nearly 120 employees at what many food critics consider one of the best steakhouses in the country. She also served as chef di cucina at B&B Hospitality Group’s OTTO Enoteca e Pizzeria for three years.

Chef Brisson’s culinary vision for B&B Hospitality Group Las Vegas is clear: to continue to showcase Italian culture and food to the Las Vegas audience. Chef Brisson leads the Las Vegas team together with Director of Operations Zach Allen, who first hired Brisson 10 years ago.

Brett Uniss is the executive chef at B&B Ristorante where he oversees a kitchen staff that executes classic and adventurous Italian cuisine. Chef Uniss creates dishes from every part of the animal, wasting nothing, as part of B&B Hospitality Group’s commitment to being green. He keeps a sustainable kitchen in mind at all times when cooking.

His culinary philosophy for B&B Ristorante is to present the food and showcase the products as simply and beautifully as possible. He enjoys working with the seasons and the farmers and producers he has cultivated relationships with over the years.

Chef Uniss’ favorite pasta at B&B Ristorante is the beef cheek ravioli. Chef Uniss explains one bite of this dish brings back memories of enjoying ravioli with truffle duck liver sauce for the first time at Babbo New York (another B&B Hospitality Group restaurant) which inspired him to work at B&B Hospitality Group.

Danny Herrera is the chef de cuisine at OTTO Enoteca e Pizzeria at The Venetian. He has been with B&B Hospitality Group since the restaurant opened in 2007. In his current position, he is charged with overseeing the kitchen’s day-to-day operations and the execution of the menu.

Chef Herrera’s favorite pizza at OTTO Enoteca e Pizzeria is the summer corn pizza, a dish he created to highlight the sweet corn at its prime. The pizza starts with corn spuma, fresh mozzarella, charred corn kernels and Fresno chiles for a hint of spice. Upon request, 24-month aged prosciutto can be added for a rich depth of flavor.

On Thursday evening, May 26, the picturesque Palazzo pool deck was the site of the city’s most renowned chefs for The Las Vegas Epicurean Affair. The delicious soiree, presented by the Nevada Restaurant Association (NvRA), featured nearly 80 restaurants, nightclubs and beverage purveyors.


Recognized as one of the premier tasting events in Las Vegas, more than 2,300 guests mingled under the stars and enjoyed tastings of dishes and specialty cocktails from the illustrious restaurants of The Venetian and The Palazzo, including AquaKnox, B&B Ristorante, B&B Burger & Beer, Carlo’s Bakery, Carnevino Italian Steakhouse, db Brasserie, Delmonico Steakhouse, Hong Kong Café, Lagasse’s Stadium, Lavo Italian Restaurant, Morels French Steakhouse & Bistro, OTTO Enoteca Pizzeria, Public House, SUSHISAMBA, Table 10, and Tao Asian Bistro; as well as other local celebrated restaurants both on and off the Strip,  including The Capital Grille, Carmine’s, Ferraro’s Italian Restaurant, Hash House a Go Go, Il Mulino, Katsuya, Origin India, Shake Shack, Texas de Brazil and Triple George.

Lamb sausage with sorrel, pickled garlic and pea tendrils
House made lamb sausage, mixed with a medley of spices, the sausage is topped with a vibrant salad consisting of sorrel, sorrel flowers and pea shoots and tossed in a zesty charred chive vinaigrette.
Mussels with peas and prosciutto
Tender mussels sautéed with savory prosciutto, peas and tomatoes in a flavorful brodo of white wine and tarragon and served with crispy fett’unta bread.
Duck egg with asparagus, radish and sorrel
This dish features a robust duck egg served over a spring salad with asparagus and sorrel. The salad is dressed in a seasonal citrus vinaigrette with an egg placed delicately over crispy fett’unta then topped with fresh-shaved horseradish and cracked black pepper.
Stracciatella with lonza, peas and mint
With creamy stracciatella cheese encircled with robust peas and savory lonza, the beans are also dressed in rustic rosso lambrusco red wine vinaigrette. The dish is finished with olive oil and black pepper.
Butter lettuce with spring vegetables and herb vinaigrette
Tender butter lettuce tossed with julienned carrots, radish, red onion and asparagus and served with freshly shaved ricotta salata and brilliant citrus vinaigrette.
Artichoke agnolotti with ricotta salata and lemon
This dish includes artichokes cooked in butter, onion and cream to achieve exquisite flavor and tenderness. After puréeing, the filling is handcrafted into agnolotti pasta then finished with lemon butter sauce. The last touch is a sprinkle of ricotta salata, lemon zest and crispy artichoke slices.
 
Dungeness crab crespelle with ricotta, lemon and basil
Start with creamy house made ricotta that is folded with hand-picked Dungeness crab, fresh herbs and asparagus that is then used as the filling inside the house made crespelle. Finally, the dish is garnished with fresh crab, baby cress, butter and more asparagus.
Pappardelle Verde with duck ragu
Wide ribbons of house made pappardelle noodles infused with stinging nettle, resulting in an unforgettable flavor and distinct color. The noodles are tossed with a ragu of braised duck, white wine, tomato and sage and topped with parmigiano reggiano.
Gnocchi with green garlic pesto and peas
Begin with petite house made potato dumplings. The gnocchi is tossed with a radiant green garlic pesto with peas and pea shoots then topped with dazzling borage flowers, which are edible and possess a taste reminiscent of cucumber.
Wild Gulf Shrimp with riso nero, smoked pork and peas
Ample pan seared shrimp, served over black Italian rice known as riso nero. These beautiful shrimp are sautéed in an assortment of peas, garlic, white wine and smoked pork belly. The final touch includes green onion slivers.
English Peas with spring onion and spicy pork
Blanched colorful English peas and served with spring onions, fresh lemon zest, butter and a touch of olive oil.
Fiddlehead Ferns with gremolata
Fiddleheads are blanched for tenderness, then topped with an aromatic gremolata of lemon zest, herbs and mouthwatering garlic.
Charred Ramps
A seasonal delight. The dish is kept elegantly simple by charring the ramps alla piastra, then adding olive oil, salt, pepper and a hint of lemon.
B&B BURGER & BEER NEW TUESDAY PATIO MENU
B&B Burger & Beer, with its 2,000-square-foot outdoor patio on the Grand Canal at The Venetian facing Las Vegas Boulevard, offers the ultimate al fresco dining experience. Now, it launches a new special Tuesday-only patio menu, exclusively for its outdoor guests.
The new menu comprises a collection of dishes and cocktails showcasing what B&B Burger & Beer does best: Mario Batali and his team’s playful interpretation of classic American fare with the dishes, the featured draft and can beers, each priced at $5. Dishes include:

Monthly News Release to Feature New and Newsworthy Tips from the Award-Winning Restaurant Collection

 

 B&B Hospitality Group (B&BHG) highlights dishes and techniques that take time, including its curing and dry aging programs.

According to the National Cattlemen’s Beef Association, dry aging is a process whereby portions or sides of beef are stored without protective packaging and refrigerated for an allotted amount of time. This process allows a natural enzymatic and biochemical reaction, which results in improved tenderness and the development of the unique flavor that can only be described ‘dry-aged beef.'” Today, only a small number of meat purveyors and restaurants engage in this process because of the extra time, labor and costs involved.

At a fine-dining steakhouse, the industry standard is typically dry aging for 30 to 40 days. B&BHG’s restaurants consistently push the limits of what can be done with this process and set the standard for steakhouses around the country. When dining at a B&BHG restaurant in Las Vegas, you won’t find a dry aged steak on the menu that has been aged less than 90 days, nearly triple the standard amount of time. Together with Chef Mario Batali, the team at B&BHG in Las Vegas, which includes Culinary Director Jason Neve and Executive Chef of Carnevino, Nicole Brisson, taste-tested the beef until they hit the 90-day “sweet spot,” which delivers uncompromising flavor while still keeping the tender texture of the beef. 

B&BHG’s collection of distinctive dining experiences, including B&B Ristorante, Carnevino Italian Steakhouse, OTTO Enoteca e Pizzeria and B&B Burger & Beer, all incorporate the dry-aging process in a quest to deliver the highest quality dishes to guests.

CARNEVINO ITALIAN STEAKHOUSE
Carnevino Italian Steakhouse is one of the very few restaurants in the world committed to the dry age process. So much so, their team consistently pushes the limits to create flavors and textures that can only be found in their Las Vegas restaurant. For example, the industry standard for dry aging is 30 to 40 days, but at Carnevino the standard dry-aging time is 90 to 120 days. The result? An incredible robust flavor with a unique texture.

Carnevino has an off-site dry aging facility in Las Vegas that houses up to $250,000 worth of meat at any given time. This enables the team to control to process from start to finish for the 3,000 to 4,000 pounds of beef that are delivered every week.

OTTO ENOTECA E PIZZERIA
At OTTO Enoteca e Pizzeria, swap the large steak dinner for a charcuterie platter for lunch, filled with in-house cured meats. One of the only certified restaurants in Las Vegas to dry cure and serve meats, OTTO Enoteca e Pizzeria cures all of their meats, such as salumi and coppa ham, in the restaurant (with the exception of Prosciutto di Parma, sourced straight from Italy.) While curing, the meats are stored in a small curing room in the restaurant’s kitchen.

The dry-aged ribeye for two at B&B Ristorante is not to be missed. The ribeye is a flavorful cut of beef that goes well with a selection from the 5,500-bottle Italian wine collection at the intimate restaurant. In addition to the ribeye, B&B Ristorante also has a charcuterie plate as an appetizer, filled with house-cured salumi.

Mario Batali and Joe Bastianich’s B&B Burger and Beer at The Venetian has launched its spring burger, the lamb burger. Served on a potato bun, this all-new burger features lamb topped with spicy goat cheese, apricot mustard jam, and grilled frisée, priced at $17.
 
GRIMALDI’S PIZZERIA
In honor of spring, Grimaldi’s Pizzeria at The Palazzo will bring back its fan favorite, the barbecue chicken pizza. Featuring the perfect spin on all cherished BBQ must haves, this pizza presents a blend of Sweet Baby Ray’s barbecue sauce, chicken, smoky bacon, red onion, and is garnished with fresh cilantro. Since no BBQ is complete without beer, guests are invited to pair this delectable pizza with a Samuel Adams Boston Lager for the ultimate Grimaldi’s BBQ experience. This special pizza will be available April 4 through May 31. In addition, Grimaldi’s will offer its Reese’s Peanut Butter cheesecake and caramel coconut cheesecake through the month of April.

Mario Batali and Joe Bastianich’s OTTO Enoteca e Pizzeria at The Venetian is now serving its signature dish for spring: asparagus pizza. OTTO features a new pizza every season in order to showcase the season’s freshest, most flavorful ingredients. The spring dish incorporates house made pizza dough and Buffalo mozzarella, topped with grilled asparagus, mint and preserved lemon zest. The price is $20. The asparagus pizza will be available until mid-May.
 
RIVA AND SOLARO
When pool season returns to Las Vegas, it can only mean one thing — Riva and Solaro, the  poolside restaurants of The Venetian and The Palazzo, spring to life with Wolfgang Puck’s exclusive take on poolside cuisine.  The menu features breakfast and lunch cuisine (please see full menu at the end of this release).
 
ROCKHOUSE
Rockhouse Las Vegasat The Venetian features live music during their Sunday Rock Brunch from 11 a.m. – 4 p.m., as well as nighttime entertainment every night of the week, including live bands, Rockstar Karaoke and live DJs.

Executive Pastry Chef Michael Outlaw of SUSHISAMBA at The Palazzo has launched a lineup of new desserts that will have every guest, sweet tooth or not, saving room. Highlights include:
  • Tapioca con leche (coconut-infused tapioca, citrus crèmeux, caramelized miso brioche and pineapple confit)
  • Peruvian chocolate ganache (candied peanuts, cusqueña caramel, peanut crema, chocolate crumb and roasted peanut ice cream)
  • Soya pasión (soy ‘cloud’, graham crumbs, strawberry gelée and mango passion sorbet).

MARCH 29: 
MARIO BATALI  FOUNDATION TO OPEN LAS VEGAS LIBRARY FOR AT-RISK CHILDREN
On Tuesday, March 29 at 9 a.m., Mario Batali will open the new Books for Kids Library at the Acelero Spring Valley Learning Center. This new library marks the third Southern Nevada library that has been funded by the Mario Batali Foundation and the 11th library nationwide.
 
The 161 square-foot library will hold nearly 1,000 books, many bilingual, offering a range of excellent reading material for children from 2 to 12 years old.
 
The opening dedication ceremony will take place at the Acelero Spring Valley Learning Center located at 2845 Mohawk Street, Las Vegas, Nevada 89146. The ceremony will include a ribbon cutting for the library, a book reading by Batali of Dr. Seuss’ Green Eggs and Ham, as well as remarks from the Mario Batali Foundation; Books for Kids; Variety Early Learning Center and a special thank you from the children.

This month, guests at B&B Burger & Beer at The Venetian can settle in and watch the games while enjoying Mario Batali’s unique spin on hamburgers, milkshakes and more. Also starting this month – the restaurant will also launch its spring burger special: the Lamb Burger.

Served on a potato bun, the Lamb Burger includes spicy goat cheese, apricot mustard jam and grilled frisée. The price is $17.

As for the games, B&B Burger and Beer’s Beer Bucket special is available. When bottles are ordered by the bucket, the price is $7 for one beer or $28 for five beers—it is buy four, get one free. Bottled beers include Budweiser, Miller Light, Coors Light, Michelob Ultra, Sam Adams Boston Lager, Dos Equis Amber and Blue Moon.

Located next to The Venetian Race and Sports Book, B&B Burger & Beer is the ideal venue to watch the games. The restaurant has seven LED televisions across the bar, with nine more throughout the restaurant. Burger & Beer’s indoor patio faces the The Venetian Race & Sports Book. The sports book, powered by CG Technology™,  features one of the most impressive video screens in North America. The screen is 10 x 100 feet and able to show 42 independent events simultaneously. OTTO Enoteca e Pizzeria‘s menu is diverse and decadent, showcasing pizzas that highlight the flavors of the season. This winter, OTTO’s seasonal offering is the Brussels Sprouts Pizza. Along with mozzarella and prosciutto cured in-house, the pizza is topped with preserved lemon rinds that provide an extra citrus kick to this scrumptious dish. The pizza will be available through the end of February.

Approximately every one to two months, Mario Batali’s signature burger joint, B&B Burger & Beer, will offer a regional burger that showcases flavors from Italian regions. The Tuscano Burger is served on a potato bun with wild boar, Pecorino mascarpone, red onion, fennel and arugula. To round out the experience, add a Moose Drool brown ale for a delicious pairing. Moose Drool’s nutty flavor with bitter and sweet overtones balance the spicy taste of the burger’s fennel. The Tuscano Burger is available through the end of February.

The Venetian® and The Palazzo® Las Vegas welcome the return of Carnival of CuisineFriday, June 5, from 6 p.m. to 9 p.m. This year, the popular culinary spectacle will be held poolside at The Palazzo pool deck and will feature a special visit by celebrity chef Mario Batali.

 

This celebrated annual event showcases award-winning cuisine from the distinguished restaurants of The Venetian and The Palazzo. Restaurant partners already confirmed for this year’s Carnival of Cuisine include Aquaknox, B&B Burger & Beer, B&B Ristorante,  Bouchon, Buddy V’s Ristorante, Café Presse, Carlo’s Bakery, Carnevino, db Brasserie, Lagasse’s Stadium, LAVO, Otto Pizzeria, Public House, Table 10, TAO, Yardbird Southern Table & Bar, and ZINE Noodles Dim Sum. Guests will be invited to indulge in lavish tastings on the luxurious pool deck of The Palazzo.
