New menu adds seasonally inspired selections created by Executive Chef Mark Andelbradt

 Wolfgang Puck’s flagship restaurant, Spago Las Vegas, celebrates the season with a new menu featuring a bountiful selection of harvest-forward starters, shared plates and sweets.

Conceptualized by Executive Chef Mark Andelbradt, the new menu items feature comfort foods with warm, earthy components such as butternut squash, apples, mushrooms and pears. Guests can cozy up during the cooler weather on Spago’s heated patio and enjoy sweeping views of Bellagio’s Fountains, while savoring the crisp fall flavors.

Perfect as a causal lunch option, a set menu is available for those looking to sample the best of the season, along with Puck’s signatures. Dishes also can be enjoyed a la carte and during dinner service.

Menu highlights include:

Starters:

  • Mezze Plate – Chickpea hummus, charred eggplant, cucumber yogurt, market pickles, pita
  • Miso Glazed Salmon Salad – Mustard greens, pickled vegetables, sweet onion-soy dressing

Entrées:

  • Grilled Prime Beef Burger – Vermont cheddar, garlic aioli, balsamic-onion marmalade
  • Porcini Mushroom Agnolotti – Housemade agnolotti with thyme, Parmigiano-Reggiano

Desserts:

  • La Poire – Pear marmalade, hazelnut dacquoise, salted streusel
  • The Golden Puck – Chocolate mousse, Jack Daniel’s praline, candied peanuts

Fall-inspired cocktails have been created to pair with the new dishes, including Communication Breakdown, a seasonal cocktail with Bourbon and spiced tropical flavors; High Hopes, a take on the Rum Sour with notes of apple; and Barrel-Aged Purgatory, a modern classic that harmonizes Rye whiskey with two herbal liqueurs – Chartreuse and Benedictine.

Spago Las Vegas is open for lunch and dinner from 11:30 a.m. until 10:30 p.m. Sunday – Thursday and until 11 p.m. Friday and Saturday.

New California Cuisine

Spago is inspired by California living with its casual elegance and farm-to-table ethos. Wolfgang hand selects seasonal ingredients to create the restaurant’s market-driven menu, featuring the chef’s signature fare paired with modern technique and creative elements. From popular Spago dishes to new dishes offered only at Bellagio, guests have a wealth of options to choose from for lunch or dinner.

 

  • Bellagio Exclusives – In addition to signature Spago dishes, Wolfgang has created specific dishes just for this new destination. The Baja Kanpachi Crudo brings a burst of acidity with pickled radish, yuzu gel and hibiscus ponzu, rounded out with creamy avocado and crunchy tapioca crisps. A Saffron Risotto features Santa Barbara Spot Prawns, housed in a special tank within the resort.
  • Lunch on the Lake – Spago’s lavish lakeside lunch options include a selection of Puck’s signature wood-fired pizzas, handmade pastas, salads and sandwiches as well as Wolfgang’s Famous Veal “Wiener Schnitzel,” served with marinated cucumbers, fingerling potato salad and mȃche salad.
  • From the Grill – Wolfgang brings his own signature to the Las Vegas steak dinner, allowing guests to indulge in prime meats, such as Wagyu and Japanese Ribeye carved tableside, and grilled fish such as the Turbot with charred baby leeks with gremolata.
  • Delightful Desserts – Spectacular seasonal desserts serve as a grand finale including the Tart Mascarpone Cheesecake and the soon-to-be-Spago-signature, The Strawberry, featuring almond-salted streusel, strawberry confit and micro basil plated with an artful and whimsical presentation.
  • Bar Bites – In addition to the full menu, Spago’s bar serves an exclusive selection of snacks such as Lemon-Herb Blinis with Caviar and Crème Fraiche and Spicy Tuna Tartare in Sesame-Miso Cones.


Sensational Sips

Innovation and familiarity may seem like contradictory notions, but that juxtaposition is what defines Spago’s cocktail menu. Crafted with house-made infusions, artisanal spirits and fresh herbs, these libations are inspired by Wolfgang’s culinary philosophy of embracing creativity using the world’s finest ingredients.

  • Creative Cocktails – Spago offers modern takes on favorites such as its version of the tiki cocktail called “Trouble in Mind” using Bourbon instead of Rum, complemented by Montenegro Amaro and Allspice Dram. The “Rogue Sour,” Spago’s version of the whiskey sour, adds depth of flavor with house-made cinnamon buckwheat honey and Amaro.
  • Worldly Wine – The globally inspired collection spans many regions of the world, highlighting an impressive number of vintages from the United States and Italy. Similar to the menu, the wine list will be seasonally inspired, starting the summer months with a strong selection of Rosé wines. In addition, the list features nearly one dozen wines from Wolfgang Puck’s private label, a collection of food-friendly wines that celebrate the spirit of food and life for which the chef is known.


Lake-Inspired Designed

The integrity of delivering a memorable experience is as rooted in the architectural design as much as the menu and service. Designer Gelila Puck collaborated with architects Massimiliano Locatelli and Annamaria Scevola of CLS Architetti to create a space that allows every seat in the house to capture its own unique perspective of the restaurant’s remarkable location.

Gelila Puck said, “The fountains were everything for us. We used the water as a key element in the design of the restaurant, bringing the beautiful feature to the forefront of the dining experience from the moment our guests enter the restaurant. Floor-to-ceiling glass windows highlight the grandeur of the space while distinct dining spaces meld classic architecture with modern art, all creating an atmosphere as memorable as the food.”

Highlights of the exquisitely designed restaurant include:

  • Local Artistry – Spago commissioned Las Vegas artist Katie Lewis to create a series of 20 topographical map images inspired by the Nevada desert landscape. One wall of the restaurant is dedicated to “Hugging a Black Hole, Hoping One Day to Forget,” a piece crafted by Jacob Hashimoto, known for his three-dimensional wall hangings inspired by his Japanese heritage.
  • Al Fresco Patio – The most coveted seats are positioned on the completely remodeled circular and covered outdoor patio giving guests unobstructed front-row views of the magnificent Fountains of Bellagio while enjoying Spago’s celebrated cuisine seated under the sun or stars.
  • Main Dining Room – This space boasts beautiful floor-to-ceiling windows imparting picturesque views of Bellagio’s famed lake from any seat in the house. Two exquisite chandeliers accent the room’s modern art pieces, while rich hues of black iron, velvet walnut and polished grey accents express a contemporary aesthetic.
  • Bar and Lounge – Adorned brass fixtures, rich smoked-oak wood floors, leather chairs and couches serve as the focal point of the classic bar and wine cellar. The velvet-accented bar features a modern and sleek bench designed to reflect the communal and social atmosphere.
  • Private Dining Rooms – Spago offers two private fountain-view dining rooms, each seating up to 20 guests. The private rooms feature translucent glass panels with elegant white sheers that act as filters, allowing guests to enjoy their privacy while being able to fully take in their surroundings.

Football season is back and at Wolfgang Puck Bar & Grill at Downtown Summerlin is in on the action. During all games aired on Sundays, Mondays, and Thursdays, all pizzas (with the exception of the Smoked Salmon pizza) will be half price. In addition, the restaurant has introduced $5, 16 oz. drafts of Sierra Nevada Oktoberfest to enjoy while you’re cheering on your favorite team.   • Japanese Cheesecake ($15): Producing a light and airy texture that’s a hybrid between cheese and sponge cake, this dessert is served with pickled strawberries, sweetened condensed milk and a lime-shiso granita. The finishing touch is a merengue crisp that completes the trifecta of textures that will leave you coming back for more!

 

  • Mango Yogurt Popsicle ($8): Let this new Rough CUTS dessert make it easier for you to kiss summer goodbye with its tropical notes and cooling textures. Beginning with a mango-yogurt popsicle, it joins tropical fruit compote and finished with a cilantro lime gel.

Wolfgang Puck’s legendary flagship restaurant Spago, recognized for igniting Las Vegas’s dining scene into a culinary epicenter, will open its doors at Bellagio Resort & Casino in spring 2018. Marking 25 years since the fine-dining phenomenon debuted in Las Vegas, Puck’s now revolutionary restaurant heralded the era of celebrity chefs and haute cuisine that continues to define the city’s restaurant scene today.

The new restaurant will offer an elevated experience, featuring an open-air patio with prime views of the iconic Fountains of Bellagio.

Globally influenced seasonal fare and signature Wolfgang Puck touches, such as gourmet pizzas topped with salmon and caviar, will be the focus of Spago’s market-driven menus, which will be presented with the outstanding level of service for which the restaurant is known. For lunch and dinner, guests will have the option to choose from an à la carte menu or explore the best of the West with Puck’s multi-course California Tasting Menu. A special bar menu of Wolfgang Puck favorites also will be available, along with an artisanal cocktail program and extensive international wine list to accompany the chef’s culinary masterpieces.

Designed by architects Massimiliano Locatelli and Annamaria Scevola of CLS Architetti, and inspired by Spago’s original flagship location in Beverly Hills, the new venue will have a sleek look and feel. Guests will enter the venue from Via Bellagio on the resort’s north side, arriving into Spago’s chic lounge and bar. Adorned with brass fixtures, rich smoked-oak wood floors, leather chairs and couches, the focal point will be a spectacular bar and wine room lit by a stunning neon light fixture commissioned for the space.

In the main dining room, beautiful floor-to-ceiling floating glass windows will surround the space, imparting picturesque views of Bellagio‘s famed lake. Two exquisite chandeliers will highlight the room’s modern art pieces, while bold accents featuring rich hues of black iron, velvet walnut and polished grey will express a contemporary aesthetic.

The restaurants most coveted seats will undoubtedly be on the patio, where guests will enjoy a front row view of the magnificent Bellagio Fountains as they dine al fresco.

The restaurant takes the place of Todd English’s Olives, which will close this winter.

The company has six additional restaurants in Las Vegas including CUT at the Palazzo. Legendary chef expands into local community with first off-Strip location 

 

Wolfgang Puck, the world-renowned chef and restaurateur credited for igniting the dining revolution in Las Vegas, is changing the face of Vegas dining once again with the opening of his first off-Strip restaurant, Wolfgang Puck Bar & Grill at Downtown Summerlin.  Now open daily for lunch and dinner, the restaurant showcases the master chef’s elevated take on the classic American bar & grill.

 

“When I, along with my managing partners Tom Kaplan and David Robins, first came to Las Vegas in 1992 for the opening of Spago, we quickly rooted ourselves in the city,” said Wolfgang Puck.  “It has always been important for us to become a part of the community in any location in which we operate.  It’s exciting we now have a restaurant in the neighborhood, which is something we have been interested in for quite some time while we searched for the right partner and location.  We look forward to seeing many familiar faces and hopefully new faces too!”

The restaurant’s approachable, casual lunch and dinner menus, led by Executive Chef Mark Andelbradt, feature Puck’s signature comfort food.  The seasonally driven menu is designed to accommodate a variety of occasions, from swift business lunches with colleagues to leisurely meals with family and friends or the perfect celebratory or date-night destination.

The menu offers a variety of healthy salads, handmade pastas and pizzas from the wood-burning oven, grilled poultry, steaks and seafood plus a daily rotating list of chef specials.  Menu items include the DTS Chopped Salad with market vegetables, crunchy quinoa and champagne-herb vinaigrette; Rock Shrimp Pizza with spicy tomato sauce, spinach and red onion; WP Private Label Burger with aged cheddar, red onion marmalade and bacon aioli; Rotisserie Free Range Half Chicken with potato puree; Scottish Salmon with white bean ragout and arugula-shaved fennel salad; and Mesquite Grilled Filet Mignon with Lyonnaise potatoes and herb compound butter.

The daily specials include Sunday’s Fried Chicken and Cheddar Waffle with black pepper syrup; Tuesday’s “Mojo” Pork Carnitas Tacos with salsa verde and pickled onion; and Wednesday’s Whole Roasted Sea Bass with garlic spinach, just to name a few.

The extensive children’s menu, complete with dishes named after the children of Wolfgang, the managing partners and directors, is complete with healthy and enticing options perfect for toddlers to tweens.

To complement the dining experience, the restaurant features a full-service bar with an extensive selection of classic and artisanal cocktails, craft beers and fine wines at friendly prices including Red Sangria at $6 per glass, wines by the glass ranging from $6 to $14 and beers starting at $5.

The 200-seat restaurant provides a warm and casual environment in a beautiful setting designed by EDG, who also created Spago at The Forum Shops, Spago at the Four Seasons Maui plus additional Wolfgang Puck restaurants around the country.  The design takes inspiration from Austin, San Francisco and Santa Monica, capturing the energetic yet relaxed lifestyle of each city, which is so much a part of Wolfgang Puck. The rustic colors and materials pay homage to the surrounding desert beauty and towering red cliffs of Las Vegas’ Red Rock Canyon.  The restaurant overlooks a beautiful park and courtyard and includes two open and airy patio seating areas.

British Luxury Brand Mulberry Opens First Store in Las Vegas

To celebrate its first Las Vegas store opening on Aug. 1, Mulberry has created a capsule collection of stunning limited edition embellished pieces, available exclusively in Las Vegas at Mulberry inside The Forum Shops. A sumptuous black suede clutch, called the Clemmie, is studded with dozens of gunmetal rivets for a truly statement bag. Four classic and exquisitely tailored black dresses are decorated with beading and glass crystal, adding a touch of glamour inspired by an artistic floral motif. A pair of striking embellished high heel sandals completes the look. The Forum Shops store is the first Mulberry store in North America to feature a new store design concept. Inspired by Mulberry’s roots in the English countryside the design uses color and textures inspired by natural materials. Hand-carved and untreated oak is used for shelving, and Somerset limestone is used for the floor, laid out in the style of traditional parquet flooring and reminiscent of traditional English country houses. The store is divided into areas for a calm and elegant shopping environment, with neutral colors allowing the products to stand out. Mulberry commissioned British leather artist Genevieve Bennett to create a stunning collection of leather wall tiles carved out in beautiful tonal leather, of course inspired by Mulberry’s heritage of leather craftsmanship. The Forum shops location features Mulberry’s first ever wall of ‘falling leaves’, taken from the iconic Mulberry tree logo to create a subtle and elegant pattern on a feature wall for all to see.

Priced at $50 each, the well-heeled, red nail enamel, Rouge Louboutin, is now available at Christian Louboutin inside The Forum Shops. An additional 30 shades will be available at the end of August. A genuine luxury experience, Louboutin nail polish has among the highest percentage of pigment in the industry and is housed in an eye-catching bottle with a wand-like cap. The designer has grouped his polishes into in three color families — Pop, Nude and Noir.

AllSaints to Open Unique Multimedia Flagship Store in The Forum Shops at Caesars

British retailer, AllSaints is set to launch its new Las Vegas flagship location at The Forum Shops at Caesars later this summer. At more than 12,000 square feet, AllSaints Caesars will be the second largest store in the brands global portfolio and will offer a multi-level shopping experience. Each AllSaints store is unique and AllSaints Caesars is no exception. The store boasts more than 1,400 square feet of digital display screens that will stream the creative content produced by AllSaints Studios. In addition, the store will feature an 8 foot by 4 foot sewing machine table originally constructed in 1906 to make sails for ships. A traditional English red telephone booth modified to house an interactive display will allow customers to shop online, in-store. The exterior facade reinforces the AllSaints values of craftsmanship and digital innovation by featuring 346 sewing machines against a backdrop of more than 1,000 square feet of LED displays. Founded in London in 1994, AllSaints creates design-led clothing for men and women. The brand expresses attitude and individuality through a strong digital presence, deep-rooted links to music, and its film division, AllSaints Studios.

Award-winning Chef Wolfgang Puck and his Las Vegas culinary team will kick off the 40th anniversary of UNLVino with the chef’s second annual celebrated fundraiser “Sip & Savor” on Wednesday, April 9 at Spago inside The Forum Shops at Caesars, benefiting UNLV’s Hotel College.

Featuring the curated musical stylings of Michael Shulman on the turntables, this mix-and-mingle wine-and-dine event will give guests the opportunity to indulge in an interactive culinary affair sampling the signature cuisine of each of Puck’s six distinct Las Vegas restaurants paired with more than 20 of the chef’s favorite wines. Concluding the celebration, Puck will be honored with the Dom Pérignon Award of Excellence for his culinary accolades and contributions to the city of Las Vegas. Time to celebrate 40 fabulous years! UNLVino returns April 9-12, 2014 with four days of fantastic functions to celebrate its 40th anniversary as Nevada’s original wine event. Tickets go on sale Monday, February 10 at UNLVTickets.com for the time-honored epicurean showcase, which continues Southern Wine & Spirits of Nevada’s mission to raise millions of scholarship dollars for UNLV’s William F. Harrah College of Hotel Administration.

The 40th UNLVino will be a demonstration in gastronomic excellence as four main events take place across the famed Las Vegas Strip and Downtown Las Vegas. Beverage enthusiasts and foodies alike will sample wines, spirits, craft beers and cuisine prepared by some of the city’s most beloved chefs and mixologists. This year’s events will elevate guests’ experiences, including:

  • Sip & Savor at Spago – Wednesday, April 9: 6 p.m. for VIP; 7 p.m. for GA

The second annual celebrated fundraiser – Sip & Savor – joins the roster of the 40th annual UNLVino as world-renowned chef Wolfgang Puck hosts an evening filled with premium label wines and incredible food. This mix-and-mingle, dine-around-style meal will indulge guests in signature cuisine from Puck’s six distinct Las Vegas restaurants. Attendees will have the opportunity to meet the award-winning chef, as well as executive chefs from his distinct Las Vegas establishments, and a bevy of talented sommeliers and beverage professionals.   • BAR-b-q at Caesars Palace Garden of the Gods Pool – Thursday, April 10: 7 p.m. – 10 p.m.

UNLVino’s popular BAR-b-q returns at Caesars Palace as cocktail masterminds collaborate for a unique poolside barbeque. At this mixology-inspired soiree, guests can imbibe on signature cocktails created by Southern Wine & Spirits of Nevada’s Executive Director of Mixology, Francesco Lafranconi and his talented team, while enjoying mouthwatering twists on barbeque favorites.

  • Bubble-Licious at The Venetian’s Doge’s Palace Plaza – Friday, April 11: 7 p.m. – 10 p.m. 

One of UNLVino’s most beloved events, Bubble-Licious will delight patrons with an evening of champagne, sparkling wines, and cocktails, along with amazing small plates from The Venetian and Palazzo’s collection of restaurants. During the event, pop artist Romero Britto will be recognized with the Dom Pérignon Award of Excellence. A longtime supporter of UNLVino, Britto will be on-hand to present an original poster he created for the 40th anniversary.

  • Founders’ Grand Tasting at the Keep Memory Alive Events Center at the Cleveland Clinic Lou Ruvo Center for Brain Health – Saturday, April 12: 7 p.m. – 10 p.m.

UNLVino will conclude with the Founders’ Grand Tasting, which will celebrate the event’s creators, Southern Wine & Spirits of Nevada’s Senior Managing Director, Larry Ruvo, and dean emeritus of the William F. Harrah College of Hotel Administration, Dr. Jerry Vallen. Taking place amongst the captivating architecture of the Frank Gehry designed building, guests can partake in the world’s finest wines, champagnes, spirits, beers and sakes, as well as bites from the city’s best restaurants and UNLV’s culinary students.

Carmine’s hosts New Year’s Eve party as big as their portions. Revelry and value reign supreme on the Las Vegas Strip as Carmine’s inside The Forum Shops at Caesars will offer Las Vegas locals and visitors a night of food, drinks and dancing as they bid farewell to 2013 and ring in the New Year.   Hailing from New York City, with a location in the countdown capital of Times Square, the Italian eatery is celebrating its first New Year’s Eve in Las Vegas with a package that allows guests to celebrate on The Strip without breaking the bank. TREVI inside The Forum Shops at Caesars will celebrate New Year’s Eve by offering an Italian five-course prix fixe meal available exclusively on Tuesday, Dec. 31, and the unique champagne gelato available during the last week of December.  Executive Chef Peter Scaturro’s holiday special is priced at $95 per person and begins with a choice of crab and corn bisque served in a warm bread bowl; or a mixed salad of Belgian endive, mesculin, glazed walnuts, poached pear, gorgonzola and balsamic vinaigrette. The second course offers a choice of fried rock-shrimp with red pepper coulis, or smoked salmon with crème fraiche, caviar, tomatoes, red onion, chives and capers over crepes. Diners will move into the third course with either the lobster ravioli topped with champagne Dijon cream and caviar; or the fettuccini with mussels in a saffron cream sauce. Grilled swordfish accompanied by sundried tomato pesto polenta, grilled asparagus and lobster sherry cream; or grilled lamb chops over pistachio mint risotto in a lamb demi-glace will highlight the fourth course. Food lovers rejoice! Famed New York Italian restaurant Carmine’s is now open in Las Vegas inside The Forum Shops at Caesars.  The first West Coast location of the family-style Italian eatery, Carmine’s serves up “wow sized” portions of Southern Italian cuisine. Even better, Carmine’s offers a unique food check system in which they will hold your inevitable leftovers in their custom refrigerators while you enjoy shopping at the premier retail destination.

 

The Forum Shops incarnation of Carmine’s boasts a whopping 750 seats, six private dining rooms and is perfect for everything from wedding receptions and rehearsal dinners to business conventions and small meetings to viewing parties for major sporting events and more. The massive restaurant can easily accommodate large, walk-in groups, making it ideal for big parties.

 

Carmine’s believes food is meant to be shared with loved ones, so the Southern Italian fare is served family-style, with portions that feed four to six people and offer true value.  Signature selections include the nine-inch high Eggplant Parmigiana, mouth-watering Chicken Contadina, awe-inspiring Porterhouse and indulgent pastas such as Linguine with Clam Sauce and Rigatoni Country Style. The menu would not be complete without Meatballs; the traditional dish includes six oversized beef or veal meatballs placed on top of the guest’s choice of pasta. Decadent favorites such as Chocolate Bread Pudding, Tiramisu and the Titanic Ice Cream Sundae are served up for dessert.

 

The colossal restaurant, designed by Bill Johnson of Johnson Studios, features the trademark touches that grace all Carmine’s locations – high ceilings, antique chandeliers and warm, homey colors. Walls are lined with black and white photographs depicting the Southern Italian families whose culinary traditions inspired the restaurant’s timeless menu.

TREVI TO HEAT UP SUMMER WITH NEW SPECIALS AND

TREVI inside The Forum Shops at Caesars will offer tasty new $10 summer entrée specials and a gelato happy hour throughout July and August.
 
Throughout July, patrons will enjoy a spaghetti and meatballs special prepared by Executive Chef Peter Scaturro, priced at $10. The delectable dish features two jumbo handmade meatballs over spaghetti pasta and is topped with a zesty marinara sauce.
